LOUISIANA SHRIMP CASSEROLE

Don't let the name fool you, this casserole is NOT spicy, but it sure is delicious!

Number Of Ingredients 9

1 ½ cups uncooked instant rice
1 ½ cups water
1 teaspoon vegetable oil
1 pound small shrimp, peeled and deveined
2 tablespoons butter
1 (4 ounce) can sliced mushrooms, drained
1 (10.75 ounce) can condensed cream of shrimp soup
1 (8 ounce) container sour cream
¾ cup shredded Cheddar cheese

Steps:

  • Preheat the oven broiler. Grease an 8x8 inch baking dish.
  • Place rice and water in a pot. Bring to a boil, reduce heat to low, cover, and simmer 10 minutes. Transfer to the prepared baking dish.
  • Heat the oil in a large skillet over medium heat. Place shrimp in the skillet and cook 3 minutes, or until opaque; set aside. Melt butter in the skillet. Stir in the mushrooms and cook 2 minutes. Mix in soup and sour cream. Cook until heated through, but do not boil. Return shrimp to skillet and cook until heated through. Scoop skillet mixture over rice in baking dish and top with cheese.
  • Broil 5 minutes in the preheated oven, or until bubbly.

1 medium onion, chopped
1 medium green pepper, chopped
1 celery rib, chopped
6 tablespoons butter
1 garlic clove, minced
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 pound uncooked shrimp, peeled and deveined
1-1/2 cups cooked rice
2 cans (6 ounces each) crabmeat, drained, flaked and cartilage removed
4 slices day-old bread, cubed
3/4 cup half-and-half cream
1/4 cup chopped green onion tops
1/2 teaspoon salt
1/4 teaspoon pepper
Dash cayenne pepper
TOPPING:
2 tablespoons butter, melted
1/3 cup dry bread crumbs
2 tablespoons snipped fresh parsley

Steps:

  • Preheat oven to 375°. Heat large skillet over medium heat; add onion, green pepper and celery in butter. Cook and stir until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Add soup and shrimp; cook until shrimp turn pink, 10 minutes, stirring occasionally. Stir in the rice, crab, bread cubes, cream, onion tops and seasonings. , Spoon into a greased 2-qt. baking dish. Combine topping ingredients; sprinkle over casserole. Bake uncovered until heated through, 25-30 minutes.

1/2 cup margarine
2 onions, finely chopped
2 stalks celery, finely chopped
2 lbs raw shrimp, peeled
4 tablespoons flour
1 teaspoon salt
2 teaspoons chili powder
2 cups milk
4 tablespoons catsup
1 tablespoon dried parsley

Steps:

  • Melt margarine in heavy skillet.
  • Saute vegetables.
  • Add raw, peeled shrimp and saute a few minutes longer.
  • Stir in flour, salt and chili powder.
  • Add milk gradually and cook 5 minute over low heat.
  • Add catsup and parsley.
  • Cook, covered, 10-15 minutes.
  • Serve over rice.

⅔ cup uncooked white rice
1 ⅓ cups water
2 slices bread, broken up into small pieces
½ cup milk
2 tablespoons margarine
1 clove garlic, minced
1 cup chopped onion
1 cup chopped green bell pepper
1 pound peeled and deveined medium shrimp (30-40 per pound)
1 (10.75 ounce) can condensed cream of mushroom soup
1 tablespoon chopped fresh parsley
1 ½ tablespoons lemon juice
1 pinch paprika

Steps:

  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish. Combine the bread and milk in a mixing bowl; set aside.
  • Melt the margarine in a skillet over medium heat. Stir in the garlic, onion, and bell pepper until the vegetables begin to soften, about 3 minutes. Add the shrimp, and cook until the shrimp are no longer translucent, about 3 minutes more. Stir the shrimp and rice into the soaked bread along with the cream of mushroom soup, parsley, and lemon juice. Pour this mixture into the prepared baking dish. Sprinkle with paprika.
  • Bake in the preheated oven until the top is golden brown, and the casserole is hot and bubbly, about 30 minutes.
