SPEEDY SHRIMP FLATBREADS
My husband and I are hooked on flatbread pizzas, especially this shrimp flatbread pizza recipe. I make at least one a week just to have something tasty around as a snack. This one came together easily because I had all the ingredients on hand. -Cheryl Woodson, Liberty, Missouri

- Preheat oven to 400°. Place flatbreads on a baking sheet. Spread with cheese; top with shrimp and tomatoes. Bake until heated through, 4-6 minutes. Sprinkle with basil. If desired, serve with lemon wedges.

GARLIC-PARMESAN SHRIMP
Delicious crispy shrimp coated in a bread crumb-Parmesan mixture. My family can't get enough of it! I would suggest doubling the recipe if you have very large eaters because this is addictive! Serve with pasta and salad.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch glass casserole dish with nonstick cooking spray.
- Combine bread crumbs, Parmesan cheese, parsley, and garlic powder in a large resealable plastic bag. Seal and shake to mix ingredients together. Add shrimp and shake to coat.
- Lay shrimp flat in the prepared baking dish. Sprinkle with any bread crumb mixture remaining in the bag. Drizzle melted butter over the top.
- Bake in the preheated oven until starting to crisp, 15 to 20 minutes. Switch to broil setting until topping is light brown, 2 to 3 minutes.

SHRIMP & CHEESE BREAD
Run, don't walk... get to the grocery store now and don't waste another minute to try this recipe. Use shrimp or crawfish, whichever you prefer; we like it best with shrimp. WARNING - If you can't take the heat, cut back on the peppers! Loaf is easier sliced using an electric knife. And a quick P.S. about the garlic pepper... This was the first (and only) recipe I have ever come across that calls for it. Simply put, it's "the bomb"! Buy it for this recipe, but do yourself a favor and try it in others!!

Steps:
- Melt butter in skillet and add green onions, shrimp (or crawfish) and seasonings; cook until shrimp are just done (8-10 minutes).
- Slice 1/3 of the top off the bread and dig out insides of bottom, leaving a 1/2" shell.
- Sprinkle half the cheese in the shell, pour the shrimp mixture over the cheese, and top with remaining cheese.
- Replace top of bread on the loaf.
- Wrap loaf in aluminum foil and bake at 350 degrees for 20 minutes.
- Allow loaf to cool a bit before slicing; serve warm.

GOLDEN SHRIMP BRUNCH CASSEROLE
During the '40s, Mother had a close group of friends whose husbands or sons were off to war. To ease their worries, the group frequently met for lunch. This was one of my mother's favorite lunch recipes. I recall the scent of melted cheese baking and the custard-like souffle.

- In a large bowl, whisk the eggs, milk, parsley, mustard and salt. In a greased 11x7-in. baking dish, layer with bread cubes, shrimp and cheese; pour egg mixture over top. , Bake, uncovered, at 325° for 50-55 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

SHRIMP BREAD
This recipe was given to me by a dear friend and I have been cooking it for a while. Lump crabmeat or crawfish can be substituted for the shrimp.

Steps:
- Preheat oven to 350 degrees.
- With a bread knife, slice the loaf of bread lenghtwise and scoop out the soft part leaving the shell intact.
- Take the onions, celery, bell pepper and garlic and chop finely.
- Melt the butter in a heavy bottom pot and add the chopped veggies and saute on high heat till soft.
- Add garlic and cook for three minutes more.
- Lower heat and add basil, salt and pepper, shrimp and green onions.
- You are only heating the shrimp up so do not leave it on for long.
- Finally, when the shrimp mix is warm, add the soft bread to the pot and stir, mixing completely.
- Taste and adjust salt and pepper.
- (I usually add some type of cajun or creole seasoning to the mixture to spice it up!) When the mixture is well blended, spoon it back into the bread shells, which are already lying on a large sheet of aluminum foil.
- Fill both sides of the shells evenly and then gently place them back together and wrap in the foil.
- Place the wrapped loaf in a 350 degree oven and bake for 30 minutes.
- This recipe can be used with a large loaf of bread or the smaller french bread loaves.
MAKE-AHEAD SHRIMP AND CHEESE BRUNCH CASSEROLE

- Butter an 8x8-inch casserole dish.
- Use remaining butter to lightly butter bread. Cut each slice in half diagonally. Arrange 1/2 of the bread in the prepared dish. Sprinkle with half of the Swiss cheese, 1/2 of the green onions, 1/2 of the parsley, and 1/2 of the shrimp, in that order.
