These are easy to make tilapia burger patties. Can double the batch to make ahead and freeze. You can serve them as open-faced fish burgers, or a protein main with a fresh, crispy tossed salad.

5 (4 ounce) fillets tilapia, cut into cubes
3 tablespoons olive oil, divided, or as needed
2 bunches green onions, thinly sliced, with green tops separated from white bottoms
1 medium bell pepper, minced
2 stalks celery, minced
5 cloves garlic, chopped
1 bunch fresh parsley, chopped
1 teaspoon salt, or to taste
1 pinch onion powder, or to taste
1 pinch garlic powder, or to taste
1 pinch red pepper flakes, or to taste
1 pinch ground black pepper to taste
1 cup panko bread crumbs
1 large egg

Steps:

  • Place tilapia in the bowl of a food processor and pulse until finely chopped.
  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add white parts of the green onions, bell pepper, celery, and garlic to the hot oil and saute until they start to brown, 5 to 7 minutes. Add green parts of the green onions and parsley; saute, 2 to 3 minutes more. Let cool, about 10 minutes.
  • Combine the veggie mixture with the fish. Add salt, onion powder, garlic powder, red pepper flakes, and black pepper; mix with your hands until well combined. Mix in bread crumbs and egg until thoroughly combined. Shape into burger-sized patties.
  • Heat remaining olive oil on a griddle over medium to medium-high heat. Cook patties in the hot oil, working in batches as needed, until nicely browned, 3 to 5 minutes on each side.

1 lb raw shrimp, peeled and deveined
2 garlic cloves
1/8 cup cilantro
1 tsp salt
1 tsp paprika
1 tsp onion powder
1/16 tsp cayenne pepper
1/2 cup Panko breadcrumbs
1 egg, lightly beaten
1 tbsp vegetable oil

Steps:

  • Take half the shrimp and coarsely chop it. Add it to a bowl. Take the other half and add it to a food processor with the garlic and cilantro. Pulse to create a chunky paste. Mix in with the chopped shrimp.
  • Add the salt, paprika, onion powder, cayenne pepper, Panko breadcrumbs, and egg. Mix until just combine.
  • Divide into patties.
  • Heat a skillet over medium high heat with the vegetable oil. Add the burgers and cook for 3-4 minutes on each side. Serve on a roll as a burger, wrapped in lettuce, or as a burger bowl.

1 stalk celery, small-diced
1/2 carrot, small-diced
1/4 yellow onion, small-diced
1 teaspoon each parsley, dill, tarragon and chives, cut into chiffonade
2 small cloves garlic, minced
1 fresh bay leaf
1 tablespoon Spanish paprika
Salt and ground black pepper
Sugar, as needed
1 to 1 1/2 pounds shrimp, peeled
4 tablespoons butter, plus more as needed
4 to 6 burger buns
Aioli, recipe follows
Cabbage-Apple Slaw, recipe follows
5 egg yolks
3/4 cup lemon juice
1/4 cup hot sauce
8 cups blended oil
Salt and ground black pepper
1 cup marigold or tarragon, chopped
1/2 head cabbage, shredded (3 to 4 cups)
2 apples, cut into julienne
Salt
1/2 cup lemon juice
1/2 cup extra-virgin olive oil
1 tablespoon thyme leaves, chopped
Ground black pepper
Sugar, as needed

Steps:

  • Saute the celery, carrots, onions, herbs, garlic, bay leaf, paprika and salt, pepper and sugar to taste (this is called a sofrito) in a medium saute pan, 5 to 7 minutes. Remove from the pan and cool until ready to use.
  • Pulse the shrimp in a food processor, leaving some larger shrimp pieces. Mix with the sofrito and sprinkle with salt.
  • Form the shrimp mixture into 4 to 6 burger patties. Sprinkle both sides of the burgers with salt and pepper.
  • Heat a large saute pan with the butter over medium-high heat. Cook the burgers until golden brown, about 3 minutes on each side. Pull the burgers from the pan and toast the buns in the butter (you may need to add a little more butter at this step, depending on how much is left in the pan).
  • To serve, top the burger with Aioli and Cabbage-Apple Slaw.
  • Place the egg yolks, lemon juice and hot sauce in a food processor and pulse to combine.
  • While the food processor is running, slowly add the oil to form an emulsion. Once the egg yolks and oil have emulsified, thin out with water (about 1/4 cup) and season with salt and pepper. Fold in the herbs. Store in an airtight container in the refrigerator for up to 1 week.
  • Mix together the cabbage and apples in a large bowl and season with salt.
  • Combine the lemon juice, olive oil and thyme in a small bowl. Season with salt, pepper and sugar. Mix the slaw with the dressing.

Because tilapia fillets are thicker on one side than the other, they're hard to cook evenly. Here, we split them through the center seam so they can go on the grill separately.

1/2 cup freshly squeezed lime juice (from about 5 limes)
1/3 cup olive oil
1/3 cup loosely-packed marjoram leaves
1 1/4 cups loosely-packed cilantro leaves
1/4 teaspoon crushed red pepper flakes
1 small garlic clove
Kosher salt
1 1/2 pounds tilapia fillets
1 1/2 pounds large shrimp, peeled and deveined, tails removed
1 tablespoon vegetable oil, plus more for oiling the grill grates
4 cups finely-shredded green cabbage (about 1/2 medium head)
Kosher salt
1/2 cup sour cream
3 tablespoons pickled jalapenos, chopped, plus 1 tablespoon pickling liquid
Freshly ground black pepper
24 soft corn tortillas
4 scallions, whites and greens thinly sliced (about 3/4 cup)
4 large radishes, thinly sliced (about 3/4 cup)
2 cups prepared pico de gallo or fresh salsa

Steps:

  • For the marinade: Pulse the lime juice, olive oil, marjoram, cilantro, red pepper flakes, garlic clove and 1/2 teaspoon salt in a mini-food processor or blender until smooth. Cut each tilapia fillet in half through the seam, separating the thicker half from the thinner. Place the tilapia and shrimp in a large resealable plastic bag and add the marinade. Toss to coat, seal and refrigerate for 1 hour.
  • For the slaw: Meanwhile, toss the cabbage with 1/2 teaspoon of salt in a large bowl and let stand at room temperature for 30 minutes to soften it a bit. Whisk the sour cream, jalapenos and pickling liquid in another large bowl. Toss in the seasoned shredded cabbage and stir to coat. Season with black pepper, cover and set aside.
  • Prepare a grill for medium-high heat. Transfer the tilapia and shrimp to a rimmed baking sheet and sprinkle with 1/2 teaspoon salt and a few grinds of pepper. Brush the fillets with 1 tablespoon vegetable oil. Lightly oil the grill grates.
  • For the taco bar: Wrap the tortillas in foil and set to the side on the heated grill while you grill the tilapia and shrimp.
  • Grill the tilapia starting with the thicker pieces, 4 minutes for the thicker fillets, 3 minutes for the thinner ones. Use a spatula to loosen the fish and gently flip. Grill until just cooked through, another 2 to 3 minutes. Grill the shrimp until opaque, 2 to 3 minutes, flipping halfway. Serve with the tortillas, slaw, scallions, radishes and salsa.

1 pound peeled and deveined medium shrimp
1/3 cup panko breadcrumbs
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
2 scallions, white and green parts, thinly sliced
1 large egg, lightly beaten
1/4 cup canola oil
1/2 cup mayonnaise
1 teaspoon to 1 tablespoon Old Bay seasoning
4 brioche buns, halved and lightly toasted
Avocado slices, for topping
Lettuce leaves, for topping
Tomato slices, for topping

Steps:

  • For the shrimp burgers: Coarsely chop half of the shrimp. Put the remaining shrimp in a food processor and pulse until smooth. Combine both shrimp in a large bowl with the breadcrumbs, lemon juice, salt, garlic powder, pepper, scallions and egg and mix. Refrigerate for 10 minutes, and then form into 4 patties. Refrigerate 10 more minutes.
  • Heat the oil in a large cast-iron skillet over medium-high heat. Cook the burgers, about 3 minutes per side.
  • For the Old Bay mayo: Combine the mayonnaise and Old Bay to taste in a small bowl.
  • To serve, spread the buns with the mayo and place the burgers on the buns. Top the burgers with the avocado slices, lettuce leaves and tomato slices.

You can make a burger out of anything, as most home cooks know; the challenge is in choosing a central element that delivers superior flavor and texture. Shrimp, like scallops, contain a high amount of natural gelatin, which allows you to incorporate a considerable amount of flavorings without worrying about the burger falling apart. If you purée just a portion of the shrimp, leaving the rest - along with the flavorings - just roughly chopped, you produce a good-textured burger with powerful flavor. Feel free to vary the heat, reducing or increasing the amount of chile. And as with any burgers, these can be seasoned pretty much according to your whim. No grill? Go ahead and pan-fry these burgers with a little bit of oil over medium-high heat.

1 large clove garlic, peeled
1 dried or fresh chile, stemmed, seeded and deveined, or more to taste
1 1-inch piece ginger, peeled and roughly chopped
1 1/2 pounds peeled shrimp, deveined if you like
1/4 cup roughly chopped shallots, scallions or red onion
1/4 cup roughly chopped red or yellow bell pepper, optional
Salt and pepper
1/2 cup cilantro leaves, or to taste
Neutral oil, like corn or canola, as needed
Toasted buns, optional
Lime wedges or ketchup for serving

Steps:

  • Start a charcoal or gas grill; fire should be moderately hot and rack about 4 inches from heat source.
  • Combine garlic, chili, ginger and 1/3 of the shrimp in a food processor and purée, stopping machine to scrape down sides of container as necessary. Add remaining shrimp along with shallots, bell pepper, salt, pepper and cilantro, and pulse as many times as necessary to chop shrimp, but not too finely. Shape mixture into 4 patties. Chill for 15 to 20 minutes.
  • Brush grill or patties lightly with oil and place them on grill. Cook undisturbed until a dark crust appears on bottom and they release fairly easily with a spatula, about 5 minutes. Turn and cook an additional 3 to 4 minutes on the other side. Serve on buns or not, as you like, with ketchup or lime juice as a condiment.

1 egg, beaten
¼ cup bread crumbs
1 small lemon, juiced
1 tablespoon lemon zest
1 teaspoon seafood seasoning (such as Old Bay®)

2 tablespoons canola oil, or as needed

Steps:

  • Roughly chop 3 or 4 shrimp and place in a bowl. Pulse remaining shrimp in a food processor and transfer to the bowl with the chopped shrimp.

A shrimp burger is simply a cake of shrimp and seasonings served on a bun, with lettuce, tomato and tartar sauce. These concentrate the sweet essence of shellfish and complement it with semisweet seasonings like parsley, onion and celery. They are easy to prepare, and they bring the warmth of a summer beach picnic indoors.

1 pound shrimp
2 tablespoons chopped scallions
3 tablespoons diced celery
2 tablespoons chopped parsley
1 1/2 teaspoons lemon zest
3 tablespoons mayonnaise
1 cup cornbread crumbs (or bread crumbs)
1 egg, beaten
Salt and pepper to taste
Tabasco sauce to taste
1 tablespoon peanut oil

Steps:

  • Boil shrimp for 2 minutes. Drain in a colander, and place ice on top until cool enough to handle. Peel and devein shrimp, and chop into small dice.
  • In a large bowl, mix shrimp with scallions, celery, parsley and lemon zest. Stir in mayonnaise, cornbread crumbs and the egg, and beat with a whisk or wooden spoon until evenly distributed. Season with salt, pepper and Tabasco to taste.
  • With your hands, form 6 patties about 3 inches in diameter. Sauté, 3 at a time, in peanut oil until both sides are nicely browned. Drain on paper towels. Serve on hamburger buns with lettuce, tomato and tartar sauce.
