BACON-WRAPPED SHRIMP



Bacon-Wrapped Shrimp image

Juice of 1 lemon
1 clove garlic, grated
1 teaspoon paprika
1 teaspoon fresh thyme
3 tablespoons extra-virgin olive oil
Kosher salt
1 pound (about 24) large shrimp, peeled and deveined, tails intact
12 slices bacon, halved

Steps:

  • Position a rack 3 to 4 inches from the heat source and preheat the broiler. Whisk the lemon juice, garlic, paprika, thyme, olive oil and 1/2 teaspoon salt in a shallow baking dish. Add the shrimp and toss to coat; marinate in the refrigerator, 20 minutes.
  • Turn the shrimp in the marinade to coat well. One at a time, remove each shrimp and wrap with a piece of bacon; secure with a toothpick if desired. Place seam-side down on a baking sheet. Spoon any remaining marinade over the shrimp. Broil, turning the shrimp once, until the bacon is slightly crisp and the shrimp are cooked through, about 5 minutes.

SHRIMP WITH VINEGAR CREAM



Shrimp with Vinegar Cream image

1/3 cup kosher salt
1/3 cup brown sugar
1 quart cold water
1 pound large (16/20 size) white shrimp
3 tablespoons butter
2 tablespoons olive oil
1/4 cup minced shallots or green onion
1/2 cup fruit vinegar, such as pear
1 cup rich chicken stock
1/3 cup heavy cream or creme fraiche
1/4 cup diced fresh fruit such as pears (or whatever the vinegar is made of), optional
2 teaspoons finely chopped fresh herbs, of your choice
Salt and freshly ground pepper
Garnish: Fresh chervil or tarragon sprigs

Steps:

  • Stir the brine ingredients together until salt and sugar are dissolved. Peel and devein the shrimp (reserving the shells) and place in brine for 1 to 2 hours refrigerated. Drain, rinse and set aside.
  • In a heavy saute pan heat 2 tablespoons of the butter and 1 tablespoon of oil over moderately high heat. Coarsely chop the reserved shells and add to the pan along with the shallots and stir until lightly colored. Add the vinegar and stock and reduce over high heat until sauce thickens slightly, about 4 minutes. Strain, pressing down on the solids and return to pan with the cream. Reduce again to a light sauce consistency. Stir in fruit, herbs and season to taste with salt and pepper. Set aside and keep warm (can be made ahead and gently reheated).
  • Wipe out pan, add remaining butter and oil and quickly saute shrimp until pink and barely cooked through. Arrange on warm plates, spoon warm sauce over and garnish with herb sprigs. Serve immediately.

2 1/2 ounces olive oil
32 large fresh shrimp, peeled and deveined
2 tablespoons diced fresh garlic
2 tablespoons diced shallots
1/2 cup tomato, diced
16 artichoke hearts, quartered
1 cup thinly sliced button or portobello mushrooms
1/2 cup chopped green onion
1 cup white wine
4 cups cream

Steps:

  • Heat saute pan over high heat. Add olive oil and shrimp, and saute until they are about 1/2 cooked, about 2 minutes. Add garlic and shallots and saute until they are golden brown. Add tomatoes, artichokes, mushrooms, and green onion. Remove from the heat and carefully add the wine. Return to the pan and cook until the white wine is reduced by 1/2. Add the cream and let sauce reduce for 2 minutes or until sauce thickens. Serve over pasta of your choice.

1 jalapeno, sliced
1/2 head green cabbage, thinly sliced
1/2 head purple cabbage, thinly sliced
1/2 cup whole milk
1/2 cup mayonnaise
1 tablespoon sugar
1 teaspoon white vinegar
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
1/2 bunch fresh cilantro, roughly chopped
2 tablespoons vegetable oil
1 1/2 pounds peeled and deveined shrimp, tails removed
One 6-ounce can Mexican tomato sauce or enchilada sauce
1/2 teaspoon ground cumin
1 tablespoon butter
16 corn tortillas, warmed according to the package instructions
Pico de gallo
Avocado slices
Sour cream
Grated pepper jack cheese
Lime wedges

Steps:

  • For the slaw: Combine the sliced jalapeno and shredded green and purple cabbage in a large bowl. In a separate bowl, mix the milk, mayonnaise, sugar, vinegar, cayenne and salt. Pour the milk mixture over the cabbage and jalapeno and toss to combine. (Cover and refrigerate for a couple of hours if you have the time.) Before serving, toss in the cilantro.
  • For the shrimp: Heat the oil in a heavy skillet over high heat. Throw in the shrimp and cook, tossing it around, until opaque, 2 to 3 minutes. Reduce the heat to low and pour in the tomato or enchilada sauce, stirring to combine. Stir in the cumin and cook for another 1 to 2 minutes. Add the butter, then remove from the heat.
  • Serve the warm tortillas with the shrimp, slaw, pico de gallo, avocado slices, sour cream and pepper jack cheese, then let everyone build their own tacos. Be sure to squeeze the lime wedges over the top at the end!

SHRIMP SAGANAKI

1 tablespoon olive oil
2 garlic cloves, crushed
1 medium onion, chopped
16 medium shrimp, whole and heads on
Salt and pepper
Dried oregano, optional
Crushed chili flakes
1 1/2 ounces ouzo (see Cook's Note)
1/4 cup dry white wine
1 (16-ounce) can crushed tomatoes
1 teaspoon olive paste
1/2 cup crumbled feta cheese

Steps:

  • Heat the olive oil in a saute pan over medium-high heat, add the garlic, then add the onion and cook until softened, but not brown. Add the shrimp (complete with head and shell for flavor) with the salt, pepper, chili flakes and oregano, to taste. Once simmered, remove the pan from the heat and add the ouzo with caution. Cook for 1 minute and add wine to pan. Simmer another 30 seconds and, using a slotted spoon, remove the shrimp from the pan and put on a plate. When the shrimp are cool enough to handle remove the heads and peel off the shells.
  • Add the crushed tomato and the olive paste to the pan and let it simmer for a few minutes. Return the shrimp to the pan, being careful not to overcook and toss in the sauce. Finally sprinkle the crumbled feta over the contents of the pan and melt it into the sauce by pushing it down with the back of a spoon.

1 1/2 pounds large shrimp, shelled and deveined, tail section left on
2 teaspoons fresh lemon juice
1/2 cup canned low-sodium or Homemade Chicken Stock, skimmed of fat
1 1/2 tablespoons unsalted butter
1 large clove garlic, peeled and sliced thinly
1 1/2 teaspoons finely chopped rosemary
1 1/2 teaspoons fresh thyme leaves
1 1/2 tablespoons olive oil
4 ounces bacon, cut into 1 1/2-inch dice
Salt and freshly ground pepper, to taste

Steps:

  • In a medium bowl, toss shrimp, garlic, rosemary, thyme, and oil. Set aside to marinate at room temperature for 30 minutes.
  • Place bacon in a large skillet, and place over medium-high heat. Cook bacon, stirring occasionally, until almost all the fat is rendered, 6 to 7 minutes. Pour off and discard all but about 2 tablespoons of the bacon fat. Add the shrimp, marinade ingredients, and salt and freshly ground pepper to taste; saute, turning frequently, until the shrimp are opaque and just cooked through, about 5 minutes.
  • Remove shrimp and bacon, and transfer to serving dish. Add lemon juice and stock to skillet; cook, stirring up cooked-on brown bits. Cook until liquid is reduced by half, about 2 minutes. Swirl in butter; cook, swirling skillet until butter has melted. Pour the sauce over shrimp, and serve with Lentils with Scallions and Peppers.
