A little sherry makes all the difference in this succulent grilled chicken recipe with an Asian flair.

1 cup soy sauce
½ cup vegetable oil
1 tablespoon cooking sherry
3 tablespoons brown sugar
3 cloves garlic, crushed
4 boneless, skinless chicken breast halves

Steps:

  • In a medium bowl, mix soy sauce, vegetable oil, sherry, brown sugar, and garlic. Pour into a large resealable bag. Place chicken in the bag, and shake to coat. Marinate in the refrigerator at least 4 hours.
  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • Place chicken on the prepared grill. Cook 6 to 8 minutes on each side, or until no longer pink and juices run clear. Discard remaining marinade.

This is a very simple marinade with two hours of fridge time before cooking. Excellent in pocket bread or over rice.

1 lb boneless chicken breast
3 tablespoons soy sauce
2 teaspoons cornstarch
1/8 teaspoon garlic powder
1/8 teaspoon sugar
2 green peppers, sliced
1/2 lb mushroom, sliced
1/2 cup water
1 tablespoon sherry wine or 1 tablespoon wine
4 tablespoons oil

Steps:

  • Cut chicken breast into 1 inch pieces combine soy sauce, sherry, cornstarch, garlic and sugar.
  • Put chicken pieces into the mixture and refrigerate for an hour or two.
  • When ready cook peppers and mushrooms in 1 tablespoon oil.
  • Remove from skillet and cook chicken pieces in 3 tablespoon oil.
  • When the chicken is cooked, add water to it and stir to thicken.
  • Return vegetables to the chicken in skillet and serve in Pita pockets or with rice.

1/4 tsp dry mustard
1/2 tsp dried oregano
1 small onion, minced
4 garlic cloves crushed
1 bay leaf, crumbled

Steps:

  • Combine ingredients and save out 1/2 cup for basting while grilling. Marinate chicken for 5 hours or overnight, covered, chilled. Discard marinade and grill until done.

6 chicken breasts
3/4 cup reduced-sodium chicken broth
1 tablespoon cornstarch
2 tablespoons low sodium soy sauce
2 tablespoons dry sherry
2 tablespoons teriyaki sauce
1/8 teaspoon crushed red pepper flakes
1 onion, sliced
3 cups broccoli, chopped
1/2 carrot, shredded
1 garlic clove, minced
1/2 teaspoon gingerroot, grated fresh
1 -2 teaspoon cooking oil
1/2 cup water chestnut, sliced

Steps:

  • Thinly slice chicken across the grain into bite-size strips.
  • Meanwhile, for sauce, stir together chicken broth, cornstarch, soy sauce, teriyaki, dry sherry, and red pepper. Set aside.
  • Spray a wok or large skillet with nonstick spray coating. Add onion, broccoli, carrot, garlic, and ginger and stir-fry for 3 minutes or until vegetables are crisp-tender. Remove vegetable mixture from wok.
  • Add oil to hot wok. Add chicken and stir-fry for 2 to 3 minutes or until done. Push chicken from center of wok. Stir sauce and add to the center of wok. Cook and stir until thickened and bubbly.
  • Return vegetables to wok. Add water chestnuts and stir all ingredients together to coat with sauce. Cook and stir for 1 to 2 minutes more or until heated through.
