Shepherd's Salad Recipe (Turkish - Çoban Salatası) image

This super tasty and healthy salad is also known as choban salad - from its Turkish name, çoban salatası.

1 medium-sized onion (peeled & finely chopped)
1 medium cucumber (washed, seeds removed & finely chopped)
1 large green pepper (or two finger peppers, seeded & finely chopped)
1 large tomato (seeded & finely chopped)
1 tsp sumac
1 small handful parsley (chopped)
small handful mint (chopped)
2 tbsp olive oil
1 lemon (juiced)
1 tsp apple vinegar
salt & pepper (to season)

Steps:

  • First of all, sprinkle the sumac over your chopped onion, give it a squeeze and add to a small mixing bowl.
  • Now add your cucumber, peppers and tomato. Mix gently.
  • Time for the parsley and mint. Mix those, too.
  • Add your dressing ingredients to a ramekin dish or similar and mix before pouring over your shepherd's salad.
  • If you're entertaining, transfer your shepherd salad to a clean serving bowl.

2 medium sized (c. 250 g total) sun ripened tomatoes, roughly chopped
3 medium size Persian cucumbers (c. 200 g total), partly peeled and roughly chopped
50 g radishes or Turkish green peppers, roughly chopped
3 spring onions, thinly sliced
a handful (10 g) flat-leaf parsley leaves, finely chopped
a small handful (5 g) mint, finely chopped
2 Tbsp lemon juice
3 Tbsp extra virgin olive oil
salt and pepper

Steps:

  • Chop your ingredients and transfer to a bowl. Add salt and pepper to taste, as well as the lemon juice and olive oil. Mix and serve immediately.

3 small green peppers or 3 small wax peppers
6 radishes, thinly sliced (optional)
3 green onions (white part only sliced) or 1 white onion, sliced into rings
1/2 cup flat-leaf Italian parsley, finely chopped
6 tablespoons lemon juice
1/4 cup olive oil
salt
pepper

Steps:

  • Have all the vegetables cut into similar size, diced.
  • English cucumbers work best; remove seeds from larger ones.
  • Combine all ingredients in bowl.
  • Mix dressing and gently toss just before serving salt and pepper to taste.

3 small cucumbers ((peel and cut in small cubes))
3 tomatoes ((peel and cut in small cubes))
1 Turkish green pepper, or ½ green bell pepper, or 3 Padron peppers ((sliced))
½ red onion ((finely sliced))
1 clove garlic ((finely chopped))
½ cup flat-leaf parsley ((finely chopped))
2 tbsp extra virgin olive oil ((adjust it to your taste))
2 tbsp freshly squeezed lemon juice ((adjust it to your taste))
1 tbsp white wine vinegar or apple cider vinegar ((optional, adjust it to your taste))
⅓ TSP salt ((adjust it to your taste))

Steps:

  • Peel and cut the cucumbers into small dice. If using large cucumbers, deseed them before dicing. Place them in a bowl.
  • Chop the tomatoes the same size as the cucumbers and add them to the bowl. If you have the time, peel the tomatoes to make your salad even juicier.
  • Slice the Turkish peppers and the red onion, scatter them on top of the cucumbers and tomatoes.
  • Sprinkle on some finely chopped parsley and drizzle with some olive oil.
  • Lastly, pour the lemon juice and vinegar (if using) on and season your salad with some salt.

1/2 cup olives, black, brine-cured
3 tablespoons olive oil, extra-virgin
1 tablespoon red wine vinegar, or more to taste
salt and freshly ground black pepper, to taste
3 ounces feta cheese, drained and crumbled

Steps:

  • 1. Core and seed the tomatoes and cut into 1/4-inch dice. Peel and seed the cucumber and cut into 1/4-inch dice. Stem and seed the pepper and cut into 1/4-inch dice. Cut the onion into 1/4-inch dice.2. Combine the tomatoes, cucumber, bell pepper, onion, parsley (if using), and most of the olives in a serving bowl (see Note). Add the oil, 1 tablespoon vinegar, and salt and pepper and toss gently but thoroughly to mix. Correct the seasoning, adding salt and pepper or vinegar as necessary the salad should be highly seasoned.3. What distinguishes this summer salad are all the fresh herbs and the sumac and red pepper used to season it. You can buy these spices at Middle Eastern markets or from online retailers like Penzey's. The recipe is adapted from one in "The Little Foods of the Mediterranean," by Clifford A. Wright.

1 pound tomatoes, diced
3/4 pound cucumbers (1 European or 4 Persian), diced
1 green pepper, preferably a long green Italian frying pepper, seeded and diced
1/2 small red onion, sliced, soaked in cold water for 5 minutes, drained and rinsed
1/4 cup (loosely packed) coarsely chopped flat-leaf parsley
1 tablespoon chopped dill
2 tablespoons chopped mint
1 teaspoon sumac
1/2 to 1 teaspoon Turkish or Aleppo pepper
Salt to taste
3 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
1 to 2 ounces feta, crumbled (1/4 to 1/2 cup) (optional)
Black olives as desired (optional)
Romaine lettuce leaves and pita bread for serving (optional)

Steps:

  • Combine all of the ingredients except the olives and romaine in a large bowl and refrigerate for 30 minutes. After 30 minutes toss together, taste and adjust seasonings. Garnish with olives and serve, with pita bread and romaine lettuce if desired.
