1/4 cup unsalted butter
1 lb chopped lamb shoulder or 1 lb lamb fillet
1 cup chopped yellow onion
2 carrots, chopped
1 1/2 teaspoons salt
1 teaspoon ground black pepper
4 ounces button mushrooms, wiped clean and sliced
1 bay leaf
2 tablespoons all-purpose flour
1 tablespoon tomato paste
1 1/4 cups lamb stock or 1 1/4 cups beef stock
1 teaspoon Worcestershire sauce
1 lb potato
1/8 teaspoon ground nutmeg
1/2 cup heavy cream
1/2 cup white cheddar cheese, grated

Steps:

  • Lightly grease a 6-cup baking dish and set aside.
  • Melt 2 tablespoons of the butter in a large saute pan over medium high heat. Add the lamb and cook until starting to brown, about 3 minutes.
  • Add the onions, carrots, 3/4 teaspoon salt, and 1/2 teaspoon of the pepper, and cook, stirring, for 2 minutes. Add the mushrooms and bay leaf, and cook, stirring, until their liquid is almost all gone, about 4 minutes.
  • Add the tomato paste and cook, stirring, until starting to color, about 1 to 2 minutes.
  • Add the flour and cook, stirring, for 1 minute. Gradually add the stock and Worcestershire sauce, and bring to a boil.
  • Reduce the heat to medium-low, cover, and simmer until thickened, about 20 to 25 minutes.
  • Preheat the oven to 400 degrees F.
  • Meanwhile, place the potatoes in a medium pot and cover with salted water by 1-inch. Bring to a boil and cook until tender, about 10 minutes.
  • Drain in a colander and return to the pot.
  • Over low heat, mash the potatoes with a potato masher.
  • Add the remaining 2 tablespoons of butter, 3/4 teaspoon of salt, 1/2 teaspoon of pepper, and nutmeg, and mash to incorporate.
  • Add the heavy cream and mix well. Remove from the heat.
  • Remove the pot with the meat from the heat. Remove the bay leaf.
  • Spoon into the prepared dish and top with the mashed potatoes, smoothing the top.
  • Sprinkle the cheese over the top and bake until browned and bubbly on top, 10 to 15 minutes.
  • Remove from the oven and serve immediately.

2 (8-ounce) salmon fillets
Salt and freshly ground white pepper
3 cups court bouillon
1 tablespoon olive oil
1 cup finely chopped onions
1 tablespoon chopped garlic
1 tablespoon finely chopped fresh dill
2 cups mashed potatoes
1 egg
1/2 cup heavy cream
Basic Savory Pie Crust, recipe follows
Flour, for dusting
3 1/4 cups all-purpose flour
1 teaspoon salt
1 1/3 cups cold lard or solid vegetable shortening
4 to 5 tablespoons ice water

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the salmon with salt and white pepper. In a saute pan, add the court bouillon and bring to a simmer. Add the salmon and poach for 6 to 8 minutes. Allow the salmon to cool in the water until tepid. Remove the salmon from the pan and discard the liquid. Flake the salmon into a mixing bowl.
  • In another saute pan, heat the oil. When the oil is hot, add the onions. Season the onions with salt and white pepper. Saute for 2 minutes. Remove from the heat and stir in the garlic and dill. Add the sauteed mixture to the salmon. Mix thoroughly. Add the potatoes, egg, and cream. Mix well. Season the mixture with salt and pepper.
  • Cut the pie dough into 2 halves. Lightly dust the surface with flour. Roll out each half of dough to 12-inches in diameter and about 1/8-inch thick. Fold 1 circle of dough into fourths. Carefully lift the dough and place in a 10-inch deep-dish pie pan. Unfold the pie dough and spoon the salmon mixture into the pie shell. Place the second round of dough over the salmon mixture. Using a sharp knife, cut away the excess dough. Using your fingers, crimp the edges of the pie firmly to seal the dough completely. Bake the pie for 25 to 30 minutes or until golden brown.
  • Combine the flour and salt in a bowl. Add the lard and work it in with your hands until the mixture resembles coarse crumbs. Add the water, 1 tablespoon at a time, working it in with your hands. Add only as much as you need to make a smooth ball of dough. Wrap it in plastic wrap and refrigerate for at least 30 minutes before using.

I grew up on this delicious comfort food - it was one of my favorite meals. Now I make it for my husband and myself! The nice thing about this recipe is you can fit it to your own likes. Instead of mixed vegatbles, you can use a can of corn, peas... or half and half! Mom always did peas and corn, I prefer mixed vegetables. Enjoy!

1 1/2 lbs ground beef
1 small onion, chopped
2 garlic cloves, minced
1 (10 1/2 ounce) can beef gravy
1 (15 ounce) can mixed vegetables, drained
1/4 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups mashed potatoes (I use Instant, boxed)
1 (10 1/2 ounce) can beef gravy, for topping

Steps:

  • In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain.
  • Stir in the gravy, vegetables, worcestershire sauce, salt and pepper.
  • Transfer to a 1 1/2 quart baking dish.
  • Spread mashed potatoes over the top.
  • Bake, uncovered, at 350 degrees for 25 minutes or until heated through.
  • When serving, place 'spoonful' of gravy on top of each individual portion.
