1/2 cup ricotta cheese
1/3 cup milk
2 tablespoons chopped parsley
1/4 teaspoon salt
1 dash pepper
2 tablespoons grated parmesan cheese or 2 tablespoons romano cheese
5 ounces hot cooked pasta (we like spaghetti)

Steps:

  • In a small saucepan combine ricotta, milk, parsley, salt and pepper.
  • Cook and stir about 3 minutes or until heated through.
  • Toss ricotta mixture and parmesan with pasta until coated.
  • Serve immediately.

This "ramen hack" uses ramen noodles in an unusual way - it replaces the mashed potato in a shepherd's pie with cooked ramen noodles. 1 (3 -4 ounce) package beef-flavored ramen noodles
2 teaspoons vegetable oil
1/2 lb ground beef
1/2 cup chopped onion
1/4 cup water
2 teaspoons Worcestershire sauce
1/2 cup frozen peas

Steps:

  • Boil ramen noodles in water until tender. Drain and set aside.
  • Meanwhile, heat oil in skillet until shimmering. Add beef and cook until no longer pink, breaking up any large clumps with the edge of a spoon, about 5 minutes. Drain any excess fat and discard.
  • Add onion, water, Worcestershire sauce and peas. Season to taste with salt and pepper. Transfer to an oven-safe dish, top with cooked noodles, and broil until brown and crispy.

  • Prepare, the silken tofu by cutting it into ½-inch cubes. Set aside. It can be tricky to keep them in a cube shape since the silken tofu is delicate, so don’t worry if they aren’t perfect.
  • Heat the chicken stock in a medium pot or wok. Add the salt, sesame oil, and ground white pepper. Let everything come to a slow simmer.
  • Stir up your cornstarch and water mixture since the cornstarch settles at the bottom of the bowl when left standing. Turn the heat down, and use your metal hoak or soup ladle to stir the soup in a circular motion so the soup is moving and swirling. Slowly drizzle all of the cornstarch slurry into the soup while stirring. The trick to thickening the soup with cornstarch is to turn the heat down slightly and keep the soup moving so the cornstarch does not form clumps.
