SPICY ISLAND SHRIMP
My husband got this recipe while he was living on St. Croix Island. We've served the zippy shrimp dish on several holiday occasions. I'm amazed at how even those who claim not to care for shrimp come out of their shells and devour them when they're prepared this way! -Teresa Methe, Minden, Nebraska

Steps:
- In a large skillet, saute the green pepper and onion in butter until tender. Reduce heat; add shrimp. Cook for 5 minutes or until shrimp turn pink. , Stir in the tomato sauce, green onions, parsley and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes or until slightly thickened. If desired, serve with rice and additional green onions.

SHELLFISH WITH SPICY ISLAND DIP
Pack the precooked crab or shrimp and the tangy sauce separately for this starter.

Steps:
- Combine first 5 ingredients in medium bowl. Cover and refrigerate. (Can be prepared 2 days ahead. Keep refrigerated.)
- Serve shellfish with sauce.
SWEET AND SPICY JERK SHRIMP
Steps:
- Preheat the oven to 425 degrees F (220 degrees C). Line two 10x15-inch baking pans with foil.
- Peel and devein shrimp, leaving tails intact if desired. Rinse shrimp and pat dry.
- Gently toss shrimp together with pineapple, bell peppers, red onion, jalapeno, oil, and jerk seasoning in a large bowl. Divide mixture between the prepared pans.
- Roast in the preheated oven until shrimp are opaque, about 15 minutes.
- Sprinkle with cilantro and serve with brown rice and lime wedges.

This creamy flavorful dip from Linda Doll of St. Albert, Alberta is sure to be popular at parties. "Bake it in a hollowed-out pumpernickel or white round bread loaf," she suggests. "Serve it with bread cubes, pita bread or assorted raw veggies." TIP: "I often used canned crab," Linda notes.

- In a large bowl, beat the first nine ingredients until blended. Cut the top fourth off the loaf of bread; carefully hollow out bottom, leaving a 1/2-in. shell. Cube removed bread; set aside. Fill bread shell with seafood mixture. , Place on an ungreased baking sheet. Cover top edges loosely with foil. Bake at 350° for 25 minutes. Remove foil; bake 25-35 minutes longer or until crust is golden brown and spread is heated through. Serve with vegetables and bread cubes.

SPICY SHRIMP WITH FETA DIP - RECIPE RUNNER

- In a small bowl combine the spices for the shrimp. Put the shrimp in a large bowl and toss them together with the spice mixture and a drizzle of olive oil until they're coated. Skewer the shrimp onto metal skewers and set aside while you make the dip and preheat the grill.
- In a food processor or blender add all of the ingredients for the feta dip. Purée until smooth. Taste for seasoning and adjust as needed. Add some extra crumbles of feta and chopped parsley to the dip and then refrigerate until ready to serve.
- Preheat the grill to 400° F. When hot, oil the grates and then lay the shrimp skewers on them. Grill for 2-3 minutes then flip them over and grill another 2 minutes or until they are pink and opaque. Be careful not to over cook them.
- Remove the shrimp from the grill and squeeze the juice of half of a lemon over the top of them. Let them rest for a couple minutes before remove them from the skewers onto a plate with the feta dip.
