FUDGY BROWNIES RECIPE

Fudgy Brownies Recipe image

Yield 24

Number Of Ingredients 13

8 Tablespoons cocoa powder
1 cup unsalted butter (or margarine - our grandma liked to do 1/2 cup of each)
2 cups granulated sugar
4 eggs
1 teaspoon vanilla extract
2 1/2 cup flour
1 cup nuts - optional
pinch salt
1 pound powdered sugar
1/4 cup butter (softened)
3 Tablespoons cocoa powder
1/4 cup hot water
1 teaspoon vanilla

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9 x 13 inch baking pan. Melt butter or margarine, and then stir in cocoa.
  • Add in sugar and eggs to the mixing bowl and stir together.
  • Add in vanilla, flour, nuts and salt and beat together well.
  • Spoon batter into the prepared pan. Bake 25 to 30 minutes, or until cooked through.
  • Mix the frosting ingredients together and spread over the hot brownies and serve.
  • You can also let the brownies cool and then frost. This way the frosting is thicker.

  • In the bowl of a standing mixer fitted with the paddle attachment, beat the brown sugar with the butter on medium-high speed until combined, about 1 minute.
  • With the mixer running on medium-low speed, add the eggs one at a time, beating for 10-20 seconds after each addition, making sure to fully incorporate one before adding the next. Stop the mixer to scrape down the sides of the bowl a few times during this process. Add the vanilla when you add the last egg, beating just long enough to combine.
  • In a separate bowl, add the salt, flour, and cocoa powder and stir with a wire whisk to combine. Add to the standing mixer bowl and beat on the lowest speed just to incorporate. Using a spatula, give the batter a stir to make sure all the flour has been mixed into the batter.

  • Preheat the oven to 350°F. Lightly grease a rimmed half sheet pan (about 13" x 18" outside dimensions).
  • Crack the eggs into a large bowl; the bowl of your stand mixer works well here. Add the cocoa, salt, baking powder, espresso powder, and vanilla. Beat slowly until everything is barely combined, then beat at medium speed for about 1 minute, or until smooth.
  • In a medium-sized microwave-safe bowl, or in a saucepan set over low heat, melt the butter. Add the sugar and stir to combine. Continue to heat (or microwave) briefly, just until the mixture is hot (about 110°F to 120°F), but not bubbling; it'll become shiny looking as you stir it.

  • Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan or line with aluminum foil or parchment paper, leaving an overhang on the sides to lift the finished brownies out (makes cutting easier!). Set aside.
  • In a microwave-safe bowl, combine the butter and 2 ounces of chopped chocolate. Melt in 30 second increments, whisking after each, until completely smooth. Whisk in the sugar until completely combined, then whisk in the eggs and vanilla. The batter will be light brown and a little dull looking.
  • Add the cocoa powder, flour, salt, remaining 2 ounces of chopped chocolate and the chocolate chips. Fold it all together with a rubber spatula or wooden spoon. Batter will be very thick. Spread evenly into prepared pan.
  • (See note about how to tell if brownies are done in the post above.) Bake for 30 minutes, then test the brownies with a toothpick. Insert it into the center of the pan. If it comes out with wet batter, the brownies are not done. If there are only a few moist crumbs, the brownies are done. Keep checking every 2 minutes until you have moist crumbs. My brownies take 31-32 minutes.
