LEEK POTATO SOUP

Alton Brown's Leek Potato Soup, or vichyssoise, is equally delicious hot or cold, from Good Eats on Food Network.

1 pound leeks, cleaned and dark green sections removed, approximately 4 to 5 medium
3 tablespoons unsalted butter
Heavy pinch kosher salt, plus additional for seasoning
14 ounces, approximately 3 small, Yukon gold potatoes, peeled and diced small
1 quart vegetable broth
1 cup heavy cream
1 cup buttermilk
1/2 teaspoon white pepper
1 tablespoon snipped chives

Steps:

  • Chop the leeks into small pieces.
  • In a 6-quart saucepan over medium heat, melt the butter. Add the leeks and a heavy pinch of salt and sweat for 5 minutes. Decrease the heat to medium-low and cook until the leeks are tender, approximately 25 minutes, stirring occasionally.
  • Add the potatoes and the vegetable broth, increase the heat to medium-high, and bring to a boil. Reduce the heat to low, cover, and gently simmer until the potatoes are soft, approximately 45 minutes.
  • Turn off the heat and puree the mixture with an immersion blender until smooth. Stir in the heavy cream, buttermilk, and white pepper. Taste and adjust seasoning if desired. Sprinkle with chives and serve immediately, or chill and serve cold.

6 wild leeks
1 medium onion, thinly sliced
1/4 cup butter, cubed
6 medium potatoes, peeled and sliced
6 cups chicken broth
1/2 cup minced fresh parsley
1 egg yolk, beaten
1-1/2 teaspoons salt
1/4 teaspoon pepper
Pinch ground nutmeg
2 cups half-and-half cream
4 bacon strips, cooked and crumbled

Steps:

  • Cut leeks into thin slices. In a skillet, saute leeks and onion in butter until tender but not browned. Transfer to a soup kettle or Dutch oven. Add potatoes, broth and parsley; cover and simmer until the vegetables are tender. Strain; set broth aside. Puree vegetables in a blender or food processor. Return puree and broth to pan. Stir a small amount of pureed mixture into egg yolk; return to pan. Add salt, pepper and nutmeg. Cook over medium heat until a thermometer reads 160°, stirring occasionally. Add the cream; heat through but do not boil. Garnish with bacon.

Shakespeare writes a long part about leeks in his play Henry V. This vegetable has been celebrated throughout history by everyone from Roman Emperor Nero to Ernest Hemingway. I invented this soup because I wanted to put my own flavors to this historical vegetable! I hope you enjoy it!

1 tablespoon olive oil
2 large garlic cloves, crushed and chopped
1 jalapeno, seeded and chopped
1 cup water
4 cups chicken broth
3 leeks, white parts sliced (about 2 cups)
4 carrots, sliced (about 2 cups)
2 potatoes, peeled and cubed
1/2 teaspoon Lawry's Seasoned Salt
1/4 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
3 teaspoons fresh lemon juice
1/2 teaspoon ground ginger
1 lb cooked ham, cubed
8 ounces fresh mushrooms, sliced
1 pint half-and-half cream

Steps:

  • Heat oil in a large soup pot. Add garlic and jalapeno and saute for 1 minute.
  • Pour in water and chicken broth and bring to a boil then add leeks, carrots, and potatoes. Stir and bring back up to a boil.
  • Add Lawry's, pepper, crushed red pepper, lemon juice, and ginger.
  • Add ham, mushrooms, then half-n-half.
  • Stir and simmer on med-low heat for 30 minutes, stirring occasionally.

Magical Leek Soup - the French woman's diet secret, as referenced in "Emily in Paris". Le Chef's Wife twist on the recipe is delicious and family friendly. It tastes like comfort food yet is incredibly healthy for you. Vegan and gluten free. Tasty and pretty enough to be served at a dinner party.

6 leeks (5 for the soup, 1 for the garnish)
3 medium sized potatoes (yukon gold preferrably)
2 cloves of garlic
1 tbsp of olive oil
1 star anise seed
1/2 tsp of fleur de sel (French gray rock salt)
8 Cups of Water

Steps:

  • Peel, clean and chop the leeks - discarding the dark green tops. 5 of the leeks can be chopped in big pieces, 1 leek, the leek you will use for the garnish, should be chopped in fine half rounds.
  • Peel and quarter the potatoes.
  • Heat the olive oil into a soup pot on medium heat.
  • Add the garlic and the leeks for soup (the 5 leeks).
  • Sautée the leeks for 5 minutes until they start to become translucent. Stir frequently, you don't want them to burn.
  • Add the fleur de sel.
  • Pour in 8 cups of water and add the anise seed the potatoes.
  • Allow to simmer for 30 minutes, stirring occasionally until the potatoes are soft.
  • Taste the broth - add an additional pinch of salt or pepper if needed.
  • *Remove the star anise seed from the broth - you do NOT want to mix the star anise with the immersion blender!*
  • Mix the soup with the immersion blender.
  • (note you can add an additional 2 cups of water, 1 cup at a time, only if needed. The consistency should be thick but still soup like).

CREAMY LEEK SOUP

8 medium leeks (3 pound), trimmed, leaving white and pale green parts only, and chopped
1 medium onion, chopped
1 large carrot, chopped
2 celery ribs, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 stick (1/2 cup) unsalted butter
1 small boiling potato (6 ounces)
1/2 cup dry white wine
3 cups chicken stock or reduced-sodium chicken broth (24 fluid ounces)
3 cups water
1 Turkish bay leaf or 1/2 California
1 1/2 cups fresh flat-leaf parsley leaves
1/4 cup all-purpose flour
1/2 cup chilled heavy cream

Steps:

  • Wash sliced leeks in a large bowl of cold water, agitating them, then lift out and drain well in a colander.
  • Cook leeks, onion, carrot, celery, salt, and pepper in 4 tablespoons butter in a 5- to 6-quart heavy pot over moderate heat, stirring occasionally, until softened, about 8 minutes. Peel potato and cut into 1/2-inch cubes, then add to onion mixture along with wine, stock, water, and bay leaf. Bring to a boil, then reduce heat and simmer, partially covered, until vegetables are tender, about 15 minutes.
  • Stir in parsley and simmer soup, uncovered, 5 minutes. Discard bay leaf and keep soup at a bare simmer.
  • Melt remaining 4 tablespoons butter in a 1-quart heavy saucepan over moderate heat, then add flour and cook roux, whisking, until golden, about 3 minutes. Remove from heat and add 2 cups simmering stock (from soup), whisking vigorously (mixture will be thick), then whisk mixture into remaining soup and return to a simmer, whisking.
  • Blend soup in 4 batches in a blender until smooth (use caution when blending hot liquids), about 1 minute per batch, transferring to a 3- to 4-quart saucepan. Reheat if necessary, then season with salt and pepper.
  • Beat cream in a bowl with an electric mixer at medium speed until it almost forms soft peaks. Serve soup topped with cream.
