This salad has been a regular at our church potluck dinners and is always enjoyed by many. I asked for the recipe early on and have made it many times in the past 15 years.

½ head lettuce, torn
1 cucumber, peeled and chopped, or more to taste
3 cups frozen peas, thawed
2 cups shredded Cheddar cheese
4 hard-boiled eggs, peeled and sliced
1 cup creamy salad dressing (such as Miracle Whip®)
½ cup white sugar
2 tablespoons white vinegar
12 ounces cooked crumbled bacon

Steps:

  • Layer lettuce, cucumber, peas, Cheddar cheese, and egg, respectively, in a 9x13-inch casserole dish.
  • Whisk creamy salad dressing, sugar, and vinegar together in a bowl until dressing is smooth; spread over the egg layer. Crumble bacon over dressing layer.

I usually make this bacon, lettuce, onion, pea, cheese and cauliflower layered salad in a large flat bowl. There's never too much because everybody loves it! You can vary the salad by substituting green onions for red, jack cheese for the Cheddar, etc.

1 pound bacon
1 large head iceberg lettuce - rinsed, dried, and chopped
1 red onion, chopped
1 (10 ounce) package frozen green peas, thawed
10 ounces shredded Cheddar cheese
1 cup chopped cauliflower
1 ¼ cups mayonnaise
2 tablespoons white sugar
⅔ cup grated Parmesan cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
  • In a large flat bowl, place the chopped lettuce and top with a layer of onion, peas, shredded cheese, cauliflower and bacon.
  • Prepare the dressing by whisking together the mayonnaise, sugar and Parmesan cheese. Drizzle over salad and refrigerate until chilled.

2 (8 oz) pkgs refrigerated crescent dinner rolls
8 oz cream cheese, softened
1/2 cup miracle whip
1 clove garlic, minced
6 slices bacon, crisply cooked, drained and crumbled divided
1 cup frozen peas, thawed, divided
1 tomato, sliced
shredded lettuce
1/2 cup shredded cheddar cheese
1/2 cup coarsely chopped red onion

Steps:

  • 1) Preheat oven to 375° F. 2) Unroll one pkg dough across one end of a bar pan with longest sides of dough across width of pan. 3) Repeat with remaining package of dough to fill the pan. 4) Using rolling pin or your fingers seal seams and press up sides to form crust. 5) Bake 12-15 min until golden brown. Remove from oven to cooling rack, cool completely. 7) Mix cream cheese, miracle whip and garlic until smooth. 8) Add half the bacon and half the peas and mix well. 9) Evenly spread cream cheese mixture over cooled crust. 10) Arrange sliced tomatoes over cream cheese mixture. 11) Sprinkle remaining bacon, remaining peas, lettuce, cheddar cheese and onion over tomatoes. 12) Cut into squares and serve.

Easy to make, and very rich. Can use different kinds of chips (vanilla or peanut butter) to suit your taste.

½ cup unsalted butter
1 ½ cups graham cracker crumbs
1 cup semisweet chocolate chips
1 cup butterscotch chips
1 cup chopped walnuts
1 (14 ounce) can sweetened condensed milk
1 ⅓ cups shredded coconut

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Place butter in 13 x 9 inch pan and melt in oven. Swirl to coat bottom and sides with butter.
  • Spread graham cracker crumbs evenly over bottom of pan. Layer chocolate chips, butterscotch chips, and nuts over crumbs. Pour condensed milk over nuts. Sprinkle coconut over condensed milk.
  • Bake until edges are golden brown, about 25 minutes. Let cool before cutting into bars.

1 head Romaine lettuce, chopped
1/2 cup bell pepper, chopped
1 (12-ounce) package frozen green peas, thawed
1/2 red onion, chopped
1 cup shredded cheddar cheese
2 thick slices bacon, cooked, chopped
DRESSING:
1 cup mayonnaise
1 cup sour cream
1 teaspoon ground pepper
1 teaspoon sugar
1 teaspoon lemon juice

Steps:

  • Clean and chop lettuce in bite size pieces. Place in serving dish. Sprinkle with pepper and onion. In a bowl, mix mayo, sour cream, pepper, sugar and lemon juice. Pour dressing on lettuce and spread evenly. Top with peas, cheese and bacon. Cover and refrigerate a few hours before serving. Will keep up to two days in the refrigerator

  • Layer the rest of the ingredients in a bowl. Lay a layer of lettuce on the bottom of the bowl first, then a full layer across the bowl of each of the other ingredients. Put the layers in whatever order you want, but if you have a clear sided bowl, I like to alternate colors so it looks prettier.
