SESAME SEARED ALASKA SOLE ROLL

4 each Alaska sole, 3 oz-5 oz fillets
2 Tbsp Mustard, Dijon
½ cup Sesame seeds, black and white
½ cup Carrots, matchstick
½ cup Squash, matchstick
½ cup Zucchini, matchstick
½ cup Scallions, matchstick
¼ cup Thai sweet chili sauce
¼ cup Vinegar, rice wine
1 fl oz Soy sauce, low sodium
3 cups Millet, cooked

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Rub 1 Tbsp of mustard on to the outer side of the fillets, then evenly coat each fillet with sesame seeds.
  • 3. Reserve with sesame seed side of the fillets facing downward.
  • 4. Mix all vegetables and evenly distribute over fillets.
  • 5. Roll fillets so that one end meets the other with the vegetables tightly bound inside.
  • 6. In a non-stick sauté pan over medium-high heat, sear rolls beginning with the point that the fillet overlaps itself. Rotate the fillets a quarter turn each minute, until the entire outside has been cooked.
  • 7. Place onto oven safe baking vessel and bake for 3 minutes until sole and vegetables are fully cooked.
  • 8. Mix remaining mustard, sweet chili sauce, vinegar, and soy sauce.
  • 9. Serve sole rolls atop a thin layer of sauce with cooked millet.

BAKED SOLE FILLET, THE MEDITERRANEAN WAY

Simple Baked Sole fillet, Spiced Mediterranean-style and baked in a buttery lime sauce. Green onions, dill, and capers are welcomed additions here!

1 lime or lemon, juice of
1/2 cup Private Reserve extra virgin olive oil
3 tbsp ghee or unsalted melted butter (if you like it buttery, then add up to 1/2 cup)
2 shallots, thinly sliced
3 garlic cloves, thinly-sliced
2 tbsp capers
1 tsp seasoned salt, or to your taste
3/4 tsp ground black pepper
1 tsp ground cumin
1 tsp garlic powder
1.5 lb Sole fillet (about 10-12 thin fillets)
4-6 green onions, top trimmed, halved length-wise
1 lime or lemon, sliced (optional)
3/4 cup roughly chopped fresh dill for garnish

Steps:

  • In a small bowl, whisk together lime juice, olive oil and melted butter with a dash of seasoned salt. Stir in the shallots, garlic and capers.
  • In a separate small bowl, mix together the seasoned salt, pepper, cumin and garlic powder. Spice fish fillets each on both sides.
  • Place the fish fillets on a lightly-oiled large baking pan or dish. Cover with the buttery lime mixture you prepared earlier. Now arrange the green onion halves and lime slices on top.
  • Bake in 375 degrees F-heated oven for 10-15 minutes. Do not overcook.
  • Remove the fish fillets from the oven and garnish with the chopped fresh dill.
  • Serve next to white rice or roasted Greek potatoes and a simple Mediterranean salad.

Baked Sole and Roasted Asparagus With Sesame image

2 cups chicken stock or 2 cups broth
1 tablespoon vegetable oil, plus some for drizzling
1 cup white rice
2 inches piece fresh ginger, peeled and grated
4 tablespoons tamari
2 garlic cloves, chopped
1 lemon, juice of
6 scallions, thinly sliced
2 teaspoons toasted sesame oil
4 (6 -7 ounce) sole fillets
2 lbs asparagus, trimmed to 4-5 inch tips
3 tablespoons sesame seeds
salt and pepper

Steps:

  • Preheat oven to 400.
  • Bring the stock and a drizzle of vegetable oil to a boil. Add the rice and stir. Return to a boil, then lower the heat, cover, and simmer for about 18 minutes, until tender.
  • In a shallow baking dish, combine the ginger, tamari, garlic, lemon juice, scallions, 1 teaspoon of the toasted sesame oil, and a drizzle of vegetable oil. Add the sole fillets to the shallow dish and coat in the mixture. Let the fish sit while you prepare the asparagus.
  • Place the asparagus on a rimmed cookie sheet and drizzle with the tablespoon of vegetable oil, the remaining teaspoon of sesame oil, the sesame seeds, salt, and pepper. toss the asparagus around to make sure it is thoroughly coated. Transfer the fish and the asparagus to the oven and roast for 12 to 14 minutes, or until the fish is cooked thorugh and the asparagus is tender.
  • When the rice is tender, fluff it with a fork and remove from heat.
  • Serve the baked sole alongside the roasted asparagus with the white rice.

2 teaspoons spicy brown or horseradish mustard
2 teaspoons tomato paste
1/2 teaspoon dried tarragon
1/4 teaspoon salt
4 sole or orange roughy fillets (6 ounces each)
1/4 cup buttermilk
1/2 cup sesame seeds
1/4 cup all-purpose flour
2 tablespoons vegetable oil

Steps:

  • In a bowl, combine the mustard, tomato paste, tarragon and salt; spread on both sides of fillets. Place buttermilk in a shallow bowl. In another shallow bowl, combine sesame seeds and flour. Dip fillets in buttermilk, then coat with sesame seed mixture. Refrigerate for 30 minutes., In a large skillet, heat oil over medium-high heat; fry fillets for 3-4 minutes on each side or until fish flakes easily with a fork.

STEAMED GINGER SOLE WITH LEMON SOY SAUCE



Steamed Ginger Sole with Lemon Soy Sauce image

3 tablespoons soy sauce
1/2 teaspoon finely grated lemon zest
Juice from 1/2 a lemon
1 teaspoon toasted sesame oil
4 bunches scallions, whites and greens separated, thinly sliced
1/2 teaspoon finely grated peeled fresh ginger
4 (6-ounce) sole or other flat fish fillets
Kosher salt and freshly ground black pepper
4 large Napa cabbage leaves
1 medium carrot, thinly sliced on the bias
8 shiitake mushroom, stems trimmed and discarded

Steps:

  • Whisk the soy sauce, lemon zest and juice, and the sesame oil together in a small bowl. Add the scallion whites to the sauce.
  • Mix the scallion greens with the ginger in another small bowl.
  • Lay the sole fillets on the work surface, skin-side up (look for the side with the herring bone pattern). Cut the fillets lengthwise along the natural seam that runs down the center of each piece. Lightly season the skin-side of the fish with salt and pepper. Then scatter the scallions and ginger on top. Starting from the narrow tail end, roll up each piece of fish into a tight spiral with the scallion on the inside. Secure with a toothpick if desired.
  • Pour an inch or more of water in a wok or skillet and bring to a boil over medium-high heat. Lay the Napa leaves in a bamboo or collapsible steamer. Stand the fish rolls on the Napa, and scatter the shiitake mushrooms and sliced carrot around. Set the steamer over the water, cover, and cook the fish until it is barely cooked through, about 6 minutes. Turn off the heat and leave the fish covered to finish cooking in the residual heat of the steamer, about 5 minutes more.
  • Divide the Napa, sole, shiitakes, and carrots among 4 plates and drizzle with the sauce. Serve.

4 skinless, boneless fish fillets, (weakfish, red snapper, blackfish or any other nonoily fish)
1/4 cup freshly squeezed lemon or lime juice
2 tablespoons Worcestershire sauce
1 egg, lightly beaten
1 tablespoon milk
Salt to taste, if desired
Freshly ground pepper to taste
3/4 cup sesame seeds
3/4 cup freshly grated Parmesan cheese
1/3 cup flour
1/4 cup olive oil
1 tablespoon butter
Lemon wedges for garnish

Steps:

  • Put the fish fillets in a dish and add the lemon juice and Worcestershire sauce. Turn the fillets in the mixture and let stand until ready to cook.
  • Put the beaten egg, milk, salt and pepper in a flat dish and stir to blend. Put the sesame seeds and cheese in a separate dish and blend.
  • Put the flour in a third dish.
  • Lift the fillets one at a time and, using the fingers, wipe off much, but not all, of the marinating liquid. Dip the fillets one at a time in flour to coat well. Dip the pieces into the egg mixture to coat on both sides. Dip in the sesame seed mixture to coat well.
  • Heat the oil and butter in a skillet and add the fish fillets (it may be necessary to cook the fish in two steps if the skillet is not large enough, but the amount of oil and butter indicated should be sufficient). Cook two minutes and turn carefully with a pancake turner or spatula. Cook about two minutes on the second side.
  • If all the fillets have not been cooked, add a second batch to the skillet and continue cooking in the same manner. Transfer the fillets to a warm platter. Pour the pan fat over all. Garnish with lemon wedges.
