CLASSIC PORK FRIED RICE
Pork fried rice is probably one of the most popular take-out dishes out there. Classic Chinese take-out pork fried rice is made with Chinese BBQ roast pork.

- Start by combining the hot water, honey, sesame oil, shaoxing wine (if using), soy sauce, dark soy sauce, and white pepper in a small bowl. This is the sauce that you'll be adding to the rice, and it's much easier to have it combined and ready to go before you start cooking.
- Take your cooked rice and fluff it with a fork or with your hands (you can rinse your hands in cold water if the rice starts sticking to them). There shouldn't be any big clumps!
- With the wok over medium heat, add a tablespoon of oil and sauté the onions until translucent and then stir in the roast pork. Add the rice and mix well. If the rice is cold from the refrigerator, continue stir-frying until the rice is warmed up, which will take about 5 minutes. If the rice was made fresh, then you just need to mix until everything is incorporated.
- Add the sauce mixture and salt and mix with a scooping motion until the rice is evenly coated with sauce. You will have to break up any remaining clumps of rice with the spatula as best as possible, but no need to be obsessive. The rice should be hot by this time.
- Toss in your mung bean sprouts, scrambled eggs, and scallions. Mix thoroughly for another minute or two and serve!

PORK KEBABS WITH SESAME RICE

- Heat the sesame oil in a medium saucepan over medium-high heat. Add the sesame seeds and cook, stirring, until golden, about 1 minute. Stir in the rice, then add 1 3/4 cups water; bring to a boil and cook until most of the water evaporates, about 8 minutes. Cover, reduce the heat to low and cook until tender, about 12 more minutes; remove from the heat and let stand until ready to serve.
- Meanwhile, preheat the broiler. Thread the pork onto 4 long metal skewers, leaving space between each piece; season with salt and pepper. Place the asparagus on a baking sheet and toss with the vegetable oil and ponzu sauce. Push the asparagus to the side of the pan and add the pork skewers.
- Broil the pork and asparagus, turning once or twice, until the pork is browned and cooked through and the asparagus is charred in spots, 8 to 10 minutes. Divide among plates and drizzle the pork with the pan juices; serve with the sesame rice and lemon wedges.

PORK FRIED RICE
This is my revised version of another pork fried rice recipe. I often substitute chicken for pork, and it doesn't change anything. I have used both basmati rice and long-grain rice which gives the dish only a slight flavor difference. I have also added celery in the past with good outcomes. Enjoy.

- Melt butter in a large non-stick skillet over medium heat. Cook and stir pork, carrot, broccoli, peas, and green onion in melted butter until pork is cooked through, 7 to 10 minutes. Remove pork mixture to a bowl and return skillet to medium heat.
- Scramble egg in the skillet until completely set. Return the pork mixture to the skillet. Stir rice, peas, soy sauce, garlic powder, and ground ginger into the pork mixture; cook and stir until heated through, 7 to 10 minutes.

- In a medium skillet, saute sesame seeds in butter for 2-3 minutes or until golden. Add rice, celery and onion; saute until the rice is browned. Spoon into an ungreased 1-1/2-qt. baking dish. Dissolve bouillon and salt in water; pour over the rice mixture. Cover and bake at 325° for 50-60 minutes or until rice is tender.

SESAME PORK RICE
A quick light recipe that would be good any time. This one's from Cooking Light magazine and was published in the Detroit Free Press recently. Haven't had the chance to try it yet.

- Cook rice as package directs, but omit salt.
- Drain well and set aside.
- Toss pork pieces with 1/2 tsp garlic and 1/2 tsp ginger in a medium bowl.
- In a large nonstick skillet heat 2 tsp sesame oil over medium-high heat.
- Add the pork and sauté 3 minutes or'til done.
- Remove from the skillet and keep warm.
- Heat the remaining 1 tsp sesame oil in the skillet.
- Add the remaining tsp of garlic and 1/2 tsp of ginger and sauté for 30 seconds.
- Add rice, soy sauce, hoisin sauce and vinegar and cook 2 minutes stirring constantly.
- Stir in the pork and cook 2 minutes or'til thoroughly heated.
- Sprinkle with green onions and sesame seeds.

- In a saucepan with a tight-fitting lid, toss the rice with 1/2 teaspoons of the sesame oil to coat the grains.
- Add the water, cover, and bring to a boil, then reduce the heat and simmer until the rice is tender, about 40 to 45 minutes.
- Stir in the scallions, sesame seeds, the remaining sesame oil, and soy sauce to taste.

- In a medium saucepan, boil 1 1/2 cups water with 1 teaspoon salt. Stir in rice; return to a boil. Reduce heat to a simmer; cover and cook until rice is almost dry, 15 to 20 minutes. Remove from heat. Let stand, covered, until completely dry, 10 to 15 minutes.

SIMPLE HAM (OR PORK) FRIED RICE W/SESAME OIL NO WOK NEEDED
This is NOT one of the many fried rice recipes that claim to taste just like your local Chinese restaurant. This is just a very tasty, very simple, one skillet fried rice that we have been making for years. The main differences from other recipes seem to be that we use sesame oil to fry the rice, and we do not add soy sauce while cooking. I'm also not going to tell you that you have to let the rice cool before frying. If you can, great, if not, it really doesn't make that big of a difference in this recipe. This is a one-skillet recipe, you do not need to put things in and take them out. It's so much easier this way. I am including pictures on how we scramble the egg in the same pan, I just love this trick! One last suggestion, have everything ready to go when you start, as it comes together very quickly once you start cooking. We always double the batch, my husband mans one skillet and I take the other. Please note, we have done our best to give accurate ingredient amounts, oil may need adjusted depending on your rice. I hope you enjoy this recipe as much as we do.

- Preheat large skillet over medium high heat. Add sesame oil.
- Add sweet onion and carrots. Cook until the carrots are tender, about two minutes.
- Add the cooked ham (or pork) and combine well.
- Add the rice, using a wooden spatula or spoon to separate the rice. Cook until the rice is well coated with the oil, adding a splash more oil if needed, but don't over do it or rice will come out oily.
- Push the rice mixture to the sides of the pan, leaving the center of the pan open to cook the egg.
- Pour in the beaten egg, cook in the center of the pan until well scrambled. Once the egg is cooked, stir in with the rice mixture.
- Add the water chestnuts, green onions, peas and sesame seeds. Stir to combine and season to taste with salt.
- Serve as is, or top with soy sauce, teriyaki sauce or my sons favorite, Recipe #419060, depending on your tastes.

Very quick after work dish. Add garlic or chilies whatever you like. To thinly slice the pork have it half frozen.
