1 cup all-purpose flour
1/2 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper
6 tablespoons cold butter
1 cup finely shredded cheddar cheese
1/4 cup sesame seeds, toasted
6 to 7-1/2 teaspoons ice water, divided
1/2 teaspoon soy sauce

Steps:

  • In a small bowl, whisk flour, salt and cayenne; cut in butter until mixture resembles coarse crumbs. Stir in cheese and sesame seeds. Combine 3 teaspoons water and soy sauce; stir into dry ingredients with a fork. Stir in enough remaining water until dough forms a ball. Wrap in plastic; refrigerate 1 hour or until firm., Preheat oven to 400°. On a floured surface, roll dough into a 14x11-in. rectangle. Cut into 2x1-in. strips. Place on lightly greased baking sheets. Bake 12-15 minutes or until golden brown. Remove to wire racks to cool.

Yield 2 loaves

Number Of Ingredients 9

scant tablespoons or 2 (1/4-ounce) packages active dry yeast
2 cups warm water (about 110 degrees)
1/4 cup granulated sugar
2 tablespoons soft butter
2 teaspoons salt
2 eggs, slightly beaten
1/2 cup sesame seeds, toasted
5 1/2 to 6 1/2 cups unbleached flour
3 cups shredded Cheddar cheese, divided

Steps:

  • In a large bowl, stir yeast into water to soften. Add sugar, butter, salt, eggs, sesame seeds, 2 cups flour and 2 cups cheese. Beat vigorously for two minutes.
  • Gradually add flour, 1/4 cup at a time, until the dough begins to pull away from the side of the bowl.
  • Turn dough out onto a floured work surface. Knead, adding flour a little at a time, until you have a smooth, elastic dough.
  • Put dough into an oiled bowl. Turn to coat the entire ball of dough with oil. Cover with a tightly woven towel and let rise until doubled, about one hour.
  • Turn the dough out onto a lightly oiled work surface. With the heel of your hand, flatten the dough to a 15-inch square. Sprinkle with the remaining cheese. Roll up, then knead a few times to marble the cheese throughout the dough. Cover with a tightly woven towel and let rest for 5 minutes.
  • Divide dough in half. Shape each half into a loaf and place into well-greased loaf pans. Cover with a tightly woven towel and let rise until almost doubled, about 45 minutes.
  • About 10 minutes before baking, preheat oven to 375 degrees.
  • Bake for 25 minutes, or until the internal temperature of the loaves reaches 190 degrees.
  • Immediately, remove bread from pans and cool on a rack.

SESAME CHEDDAR OLIVE POPPERS



Sesame Cheddar Olive Poppers image

This recipe was published by Kathy Casey, who, I just discovered, got this recipe from the late caterer, Gretchen Mathers. Although I don't usually like green olives, I LOVED these. The surrounding cheesy-dough goes well with the tart olives. The recipe calls for them to be served hot, but they're good warm (and if you're lucky enough to have any refrigerated leftovers, they make a great late-night snack). I've assembled then frozen them, just baking them for a few extra minutes. They're a bit labor intensive at first, but once you get the hang of them, you can assemble more than 50 in less than an hour. Smaller olives work best. I've doubled the recipe, but even that many will disappear quickly at a party, so I'll triple it next time I take them to a potluck. If you don't like sharp cheddar, medium works well - I've even substituted mild cheddar when I knew I had guests who disliked harsh cheese.

4 ounces sharp cheddar cheese, shredded
2 tablespoons unsalted butter, softened
1/2 cup all-purpose flour, sifted (sift first, then measure)
1 dash cayenne pepper (optional)
24 pimento-stuffed green olives, small to medium, drained & patted dry (if you don't, the dough won't want to stick)
1/3 cup sesame seeds (white, black, or a mixture of both)

Steps:

  • Preheat oven to 400°F Beat grated cheese and butter together in a mixer or food processor, then stir in the flour and cayenne.
  • Shape dough into a log shape, and slice into exactly how many olives you have. After a making a few, you will get a feel for how much dough you need for each olive.
  • Use the thumb of one hand to press each piece of dough into a flat pancake, then press the dough around an olive, covering it well and rolling the dough into a ball with your palms.
  • Place sesame seeds in a small bowl; roll each ball in the seeds, then place on an ungreased cookie sheet; bake for 15 minutes; serve hot.

Known by many names and claimed by many grandmothers, they are all the same, delicious thing: a savory, addictive, shortbread cookie. The key to any short dough - that distinctive tender sandy crumbly texture - is the high fat-to-flour ratio, and this version not only relies on butter but also counts on the delicious fats that come from sesame seeds, block Cheddar and even the oil from the pecans. For a remarkable distinction among the many, many versions of these to be found, toast them until just passing golden into brown, and see how that in itself sets these apart.

Number Of Ingredients 10

1 1/3 cups all-purpose flour
1 cup loosely packed grated Cabot Farms Vermont white Cheddar (about 3 ounces)
2/3 cup loosely packed grated pecorino Romano cheese (about 1 ounce)
1 teaspoon kosher salt
1/2 teaspoon cayenne
8 tablespoons (1 stick) cold unsalted butter, cut into 1/4-inch cubes
1 large egg yolk
1/3 cup pecans, finely chopped (about 3 tablespoons)
3 tablespoons untoasted white sesame seeds
2 tablespoons ice water

Steps:

  • Add the flour, both cheeses, salt and cayenne to the bowl of a food processor, and pulse until combined.
  • Scatter the cold butter chunks on top, and pulse again to form coarse crumbs.
  • Add egg yolk, pecans and seeds, and pulse to combine thoroughly, yielding a coarse grainy meal.
  • Transfer mixture to a large stainless-steel bowl. Sprinkle the ice water on top, and knead briefly to bring the dough together, as you would a pie dough.
  • Divide the dough into thirds, and roll each into a neat, 8-inch-long cylinder that is about the width of a silver dollar. Wrap each log in plastic wrap, and twist the ends tightly in opposite directions, forming a perfect and compact torchon. Refrigerate until well chilled and completely firm; overnight is ideal.
  • Heat the oven to 375. Line two large baking sheets with parchment paper or nonstick baking mats. Unwrap the dough, discarding plastic wrap, and slice the logs into thin coins, each about the width of a pencil.
  • Arrange the coins in neat rows on the prepared sheets, making sure they're not quite touching one another. This dough won't expand or flatten after baking.
  • Bake until golden at their centers and just starting to toast at their edges, about 20 minutes. Check them midway through baking, and rotate sheets if your oven bakes unevenly.
  • Transfer the baking sheets to wire racks to cool. Once they are fully cooled, transfer coins to an airtight container, where they will keep for up to 3 weeks.

1 small sweet onion, finely diced
1 1/2 cups baking mix
1 cup shredded sharp cheddar cheese, divided
1 large egg
1/2 cup milk
1 teaspoon sesame seeds, toasted
2 tablespoons butter, melted

Steps:

  • Melt 1 tablespoon butter in a small skillet over medium-high heat. Add onion and saute 2 minutes or until tender; set aside.
  • Combine baking mix and half of cheese in a large bowl; make a well in center of mixture.
  • Stir together onion, egg, and milk, blending well.
  • Add to cheese mixture, stirring just until dry ingredients are moistened.
  • Spoon into lightly greased miniature muffin pans, filling two-thirds full.
  • Sprinkle evenly with remaining cheese and sesame seeds; drizzle with 2 tablespoons melted butter.
  • Bake at 400 deg F for 12 to 14 minutes or until golden.
  • Makes ~ 1 1/2 dozen mini muffins.
