Nibble on these cheesy bites as a party appetizer or afternoon snack. Bake all 60 pieces because these savory morsels will disappear quickly.
Ingredients
Cooking Spray
10 ounces bulk Hot Italian Sausage
3 cups Self-Rising Flour
6 tablespoons Unsalted Butter
1 1/2 cups Buttermilk
1 tablespoon Tabasco Sauce
1 1/4 cups grated Sharp Cheddar Cheese

Steps:

  • Directions Preheat the oven to 400F and arrange the racks in the upper and lower third of the oven. Coat two baking sheets with the cooking spray. Cook the sausage in a medium skillet over medium high heat, breaking it up with a wooden spoon, until cooked through and no pink remains. Using a slotted spoon, transfer the sausage to a paper towel-lined plate and set aside. Combine the flour and butter in a food processor and pulse until the mixture resembles coarse meal with some larger chunks of butter remaining. Drizzle in the buttermilk and tabasco and pulse just until the dough comes together. Turn the dough out into a large bowl and fold in the sausage and cheese. Using two spoons, shape the dough into walnut-size balls and drop on to the baking sheets. Bake, switching and rotating the pans halfway through baking until golden and cooked through, about 15 minutes. Let cool on the baking sheets for 5 minutes, then use a spatula to remove and transfer to a platter. Bake the remaining sausage bites in the same manner. Oil, for greasing the baking sheets
3 cups biscuit mix, such as Bisquick
1 pound spicy sausage (uncooked)
1 tablespoon chopped fresh rosemary
8 ounces aged white Cheddar, grated
8 ounces sharp yellow Cheddar, grated
1 tablespoon hot sauce, such as Tabasco (or to taste)

Steps:

  • Preheat the oven to 400 degrees F. Grease 2 baking or cookie sheets and set aside.
  • Combine the biscuit mix, sausage and rosemary in a large bowl. Mix with your hands, then work in the white and yellow Cheddars and hot sauce. Form into balls the size of walnuts and place on the prepared baking sheets. Bake until cooked through, about 20 minutes. Serve warm.

SAUSAGES WITH PEPPERS AND ONIONS

3 tablespoons extra-virgin olive oil
1 1/2 pounds sausages (spicy Italian, mild Italian, plant-based, etc.)
2 orange bell peppers, seeded and sliced
2 red bell peppers, seeded and sliced
2 yellow bell peppers, seeded and sliced
2 white onions, halved and sliced
Kosher salt and freshly ground black pepper
4 cloves garlic, sliced
1 tablespoon apple cider vinegar
2 tablespoons chopped fresh basil

Steps:

  • Heat a large braiser or high-sided skillet over medium-high heat. Add 1 tablespoon olive oil and swirl to coat the skillet. Once the oil is shimmering, add the sausages and brown on all sides until browned but not cooked through, 5 to 7 minutes. Remove them to a plate and let cool until cool enough to handle, then slice them into 1 1/2-inch pieces. Set aside.
  • Turn the heat down to medium-low and add the remaining 2 tablespoons olive oil to the skillet. Add the peppers and onions and season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook the peppers and onions, stirring occasionally, until they begin to soften, about 5 minutes. Add the garlic and stir to incorporate. Continue cooking the vegetables over low heat until they're very soft, beginning to caramelize and have some spots of browning, about 40 minutes. If the vegetables start to look like they're getting too browned too quickly, add a splash of water to deglaze.
  • Add the apple cider vinegar and the sausages to the skillet and stir to incorporate. Continue cooking until the sausages are cooked through, 10 to 15 minutes. Turn the heat off.
  • Garnish with the basil and serve immediately.

2 tablespoons olive oil
1 cup balsamic vinegar

Steps:

  • Fill a large, deep skillet 1/2 way with water. Bring the water to a steady simmer and add the sausages. Poach the sausages for 6 to 7 minutes, until firm.
  • Drain the sausages and slice into bite-size pieces. In a large skillet, heat 2 tablespoons olive oil. When hot, add the sausage and cook until brown. Drain off the fat and add the balsamic vinegar. Simmer until vinegar is reduced and syrupy. Serve immediately.

1/2 pound bulk pork sausage

Steps:

  • Heat the oven to 400 degrees F.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 12x10-inch rectangle. Cut into 3 (3-inch) strips.
  • Divide the sausage into thirds. Shape each into a cylinder the same length as the pastry. Place 1 piece sausage on the long edge of each pastry rectangle. Roll up the pastry around the sausage and press the seams and pinch the edges to seal.
  • Cut each roll into 12 (1-inch) slices, making 24 in all. Place the slices, cut-side down, onto a baking sheet.
  • Bake for 15 minutes or until the pastries are golden brown and the sausage is cooked through. Remove the pastries from the baking sheet and let cool on wire racks for 10 minutes.
  • Tip: You can substitute Italian sausage (casing removed) for the bulk pork sausage.
  • Tip: To make ahead, place the unbaked slices onto a baking sheet. Cover and freeze until firm.
