Sensibly Delicious Fudge image

I found this recipe on food.com and thought it would be worth a try. Hope you like it. We do and it is so easy.

3/4 c splenda for baking
2/3 c fat-free evaporated milk
2 Tbsp butter or margarine
1/4 tsp salt
2 c marshmallows, mini
11/2 c milk chocolate chips or your favorite flavor
1/2 c pecans or walnuts, chopped
1 tsp vanilla

Steps:

  • 1. Line an 8 inch baking pan with foil.
  • 2. Combine Splenda Sugar Blend for Baking, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly.
  • 3. Boil stirring constantly for 4 - 5 minutes and remove from heat.
  • 4. Stir in marshmallows. Stir until melted. Then stir in flavored chips, stir until melted followed by nuts.
  • 5. Pour into prepared baking pan; refrigerate for 2 hours or until firm.
  • 6. Lift foil from pan, cut into 25 pieces and serve.

Try this "sensibly delicious" fudge. It's not totally sin free but it's a lot better than the usual fudge. This comes from Nestle. Not given in the times is a 2 hour chill time.

3/4 cup Splenda Sugar Blend for Baking
2/3 cup fat-free evaporated milk
2 tablespoons butter or 2 tablespoons margarine
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups semi-sweet chocolate chips
1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)
1 teaspoon vanilla extract

Steps:

  • Line 8-inch-square baking pan with foil.
  • Combine Splenda Sugar Blend for Baking, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly.
  • Boil, stirring constantly, for 4 to 5 minutes.
  • Remove from heat.
  • Stir in marshmallows, chips, nuts and vanilla extract.
  • Stir vigorously for 1 minute or until marshmallows are melted.
  • Pour into prepared baking pan; refrigerate for 2 hours or until firm.
  • Lift from pan; remove foil.
  • Cut into 25 pieces.
  • FOR MILK CHOCOLATE FUDGE:.
  • Substitute 1 3/4 cups (11.5-ounce package) Milk Chocolate chips for Semi-Sweet Chocolate Morsels.
  • FOR BUTTERSCOTCH FUDGE:.
  • Substitute 1 2/3 cups (11-ounce package) Butterscotch Flavored chips for Semi-Sweet Chocolate chips.
  • FOR PEANUTTY CHOCOLATE FUDGE:.
  • Substitute 1 2/3 cups (11-ounce package) Peanut Butter & Milk Chocolate chips for Semi-Sweet Chocolate chips and 1/2 cup chopped peanuts for pecans or walnuts.
