The BEST barbecue sauce from scratch. An easy tangy and sweet homemade barbecue sauce recipe without ketchup. Ready in 15 minutes!

15 ounces tomato sauce ((1 standard can))
6 ounces tomato paste ((1 standard can))
1/3 cup apple cider vinegar
1/4 cup pure maple syrup
1/4 cup molasses
2 tablespoons Worcestershire sauce
2 teaspoons smoked paprika
1 teaspoon dry mustard powder
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/8-1/4 teaspoon cayenne pepper ((optional but encouraged))

Steps:

  • In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
  • Cover with a lid slightly ajar so that the pot is mostly covered to deter splattering, but steam can still escape and the sauce can reduce. Let cook, stirring occasionally, until the sauce thickens, about 10 to 15 minutes.
  • Taste and adjust seasonings as desired. Enjoy immediately or let cool and store for later use.

Some things you want a good thick bbq sauce, some things you want a thin sauce. Sometimes you want just a tomato based sauce and sometimes a vinegar based sauce. I like both and searched for one that had the texture and taste of both and couldn't find one that I really liked. So I threw together my own. The best of both and quick and easy too

1 cup(s) bbq sauce ( i used hunts bold)
1/2 cup(s) vinegar
1/4 cup(s) rice vinegar
1/4 cup(s) red wine vinegar
2 teaspoon(s) sugar
1 teaspoon(s) kosher salt
1 teaspoon(s) coarse black pepper
1/4 teaspoon(s) cayenne pepper ( optional)
2 tablespoon(s) honey
1 tablespoon(s) worcestershire sauce

Steps:

  • In a medium sauce pan melt the butter then add all the other ingredients, Stir well and bring to a slow boil. Let cool to lukewarm and then transfer to a squeeze bottle or to a serving bowl

2 cups tomato sauce
1 cup apple cider vinegar
1 cup packed brown sugar
¼ cup Worcestershire sauce
2 teaspoons Dijon mustard
¾ teaspoon garlic powder
1 teaspoon lemon juice
1 teaspoon cayenne pepper
¼ cup water
¼ teaspoon ground black pepper
1 teaspoon paprika
½ teaspoon salt
2 teaspoons butter, melted
2 tablespoons hickory-flavored liquid smoke flavoring
2 cups tomato juice
¾ cup molasses
1 cup unsweetened applesauce
1 cup whiskey (such as Jack Daniel's® Tennessee Honey)

Steps:

  • Combine ketchup, tomato sauce, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, garlic powder, lemon juice, cayenne pepper, water, black pepper, paprika, salt, butter, liquid smoke, tomato juice, molasses, applesauce, and whiskey, respectively, in a large pot; bring to a boil. Reduce heat to low and simmer until sauce is smooth and thickened, about 1 hour.

This vinegary, red tomato Barbeque sauce, is very tart, and to me, sort of beguilingly delicious, I use it on all sorts of things. It's not really kid friendly, but lasts up to three months well-covered in the fridge.

2 tablespoons vegetable oil
1/2 medium onion, finely chopped
1 1/2 teaspoons dry mustard
1 pinch celery seed (or Beau Monde)
1/2-1 teaspoon cayenne pepper
1 1/2 teaspoons regular paprika
1/2 teaspoon ground allspice
2 cups ketchup
1/2 teaspoon Worcestershire sauce
1 cup distilled white vinegar
1 cup apple cider vinegar
salt, as needed

Steps:

  • In a 12-inch sauté pan, cook the onion till lightly gold, or slightly dark.
  • Add all remaining ingredients, and simmer gently for 30 minutes, uncovered, can cover, if desired.
  • Cool, and place into a container, put into the refrigerator to store.

TOMATO BASED BARBECUE SAUCE

I was responsible for this recipe in class. It is not the typical BBQ sauce, but is out of this world. The list of ingredients may be long, but it is well worth it!! The will yield 1 qt of sauce, enough for 3-4 slabs of ribs or 4-6 chickens. It can also be canned. Just follow the instructions for canning high acid foods. This is also a mild sauce, but you may add 1/4 tsp. of cayenne pepper (or to taste) for a hotter sauce. The chiles used in this recipe are the large dried MILD red chiles called California or New Mexico chiles.

2 tablespoons oil
1 large onion, minced
3 garlic cloves, minced
2 tablespoons fresh ginger, minced
2 lbs tomatoes, roughly chopped or
1 (25 ounce) can crushed tomatoes
1 teaspoon dried oregano, crumbled
4 dried red chilies, seeded and torn into pieces (California or New Mexico)
1 cup cider vinegar
1/4 cup honey
2 tablespoons soy sauce
3 cardamom seeds
5 cloves
1 teaspoon coriander seed
1/2 teaspoon fennel seed
1 (1 inch) cinnamon stick
1 tablespoon mustard seeds

Steps:

  • Heat the oil in a large saucepan over medium high heat.
  • Add the onion, garlic and ginger.
  • Saute until the onion is translucent, about 5 minute.
  • Add the tomatoes, oregano, chile pieces, vinegar, honey, and soy sauce.
  • Stir to combine and lower the heat to medium low.
  • Grind the whole spices (cardamom, cloves, fennel, cinnamon stick, and mustard seeds) in a spice grinder or for a workout in a mortar.
  • Add the spices to the sauce.
  • Simmer, stirring frequently to prevent sticking, until the sauce is thick and tasty, up to 2 hours.
  • Strain sauce or put through a fine disk of a food mill.
  • Use immediately or refrigerate for short term use. Can also be canned.
