NAVY BEAN SOUP W CHICKEN SAUSAGE
After my husband suffered a mild heart attack I have had to add in beans and greens to his daily menu. This recipe was inspired by the chicken sausage and the need to make good tasting, Low Fat Bean Soup. Beans help lower bad cholesterol. - 1. Sorting Beans: Pour cold water over the beans to cover. Soak beans for 8 hours or overnight. Drain beans, discard soak water and rinse with fresh cold water. **Drain once again and proceed to next step. For more tips and tricks with beans: http://www.usdrybeans.com/recipes/beans-pre-prep/
- 2. **Cover-Simmer: Place freshly soaked and drained beans in a Dutch oven or similar large pot. Cover beans with large package of chicken or vegetable broth (Low Salt). You should have enough broth to cover the beans plus two - four inches of broth to cover the beans. Add remaining ingredients, (onion, garlic, sausage, broth). Simmer for 1-1/2 hours or until beans are tender. Do Not add salt till the beans are tender..
- 3. Completing Bean Soup: When beans are soft add a cup or two to the blender with broth to cover the beans. Process enough to achieve a smooth slurry that will thicken the broth. When done puréeing the beans add them back to the soup pot. Stir beans and simmer for 5-10 minutes to finish off cooking the beans. Test beans for tenderness then, Serve Warm in soup bowls. Beans freeze well in small ziplock containers made for the freeze. Make sure beans are cold before freezing them. Freeze up to 3 months for best flavor!

- Preheat oven to 350 degrees. In a food processor, pulse bread until very coarse crumbs form (you should have about 3 cups). Add 2 tablespoons oil; pulse briefly to moisten. Season with salt and pepper; set breadcrumbs aside.
- In a medium saucepan, heat remaining 2 tablespoons oil over medium-high heat. Add sage; cook until crisp, 2 to 3 minutes. Using a slotted spoon, transfer sage to a paper-towel-lined plate; set aside (reserve pan with oil).
- Add onion and garlic to pan; cook, stirring occasionally, until onion is tender, 5 to 7 minutes. Add sausage and wine; cook, breaking sausage up with a wooden spoon, until cooked through, 3 to 5 minutes. Stir in beans; cook until beans are tender and creamy, about 5 minutes. Season with salt and pepper.
- Transfer sausage-and-bean mixture to a shallow 4-quart baking dish; scatter breadcrumbs over top. Place dish on a rimmed baking sheet, and bake until topping is golden, 25 to 30 minutes. Let cool 5 minutes before serving. Serve casserole topped with fried sage leaves.

SPICY RED BEANS WITH CHICKEN AND ANDOUILLE SAUSAGE
This recipe came to The Times in a 2012 article about cooking in a bean hole, a classic method of outdoor cooking popular in Maine. Here's how it works: Dig a hole big enough for the pot you're planning to cook in, then build a fire of hardwood logs in it. Drop a dozen or so rocks into the fire once it's started. When the wood has burned down to embers, remove the rocks using barbecue gloves, put your pot of presoaked beans into the embers, drop the rocks around and on top of the pot, cover everything with dirt and walk away. - Drain and rinse the soaked beans and heat the oven to 350.
- Heat the oil in a 6-quart Dutch oven or other large, heavy pot over medium-high until hot but not smoking. Add the chicken thighs and brown well, 4 to 6 minutes. Remove the thighs, add the sausage to pot and brown well, another 4 to 6 minutes. Remove the sausage. Add the onion, bell pepper and celery and sauté, stirring occasionally, until tender, 5 to 7 minutes.

- Set a Dutch oven over medium-high heat, and add the olive oil to the pan.
- Season the chicken with 2 teaspoons of the Creole seasoning, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper.
- Place the chicken in the pan and sear until well browned, about 4 to 5 minutes.
- Turn over and sear on the second side for an additional 4 to 5 minutes.
- Remove the chicken pieces from the pan and set aside.
- Place the sausage in the pan and cook until well caramelized, stirring occasionally, about 5 minutes.
- Add the onions, peppers and celery to the pan and cook until soft, about 4 to 5 minutes.
- Add the garlic and saute until fragrant, about 30 seconds.

- Preheat the oven to 425˚ F. Line a baking sheet with foil. Toss the sausages with 1 teaspoon olive oil on the pan and bake, turning occasionally, until browned and heated through, about 15 minutes.
