10 ripe tomatoes
2 tablespoons olive oil
2 tablespoons butter
1 onion, chopped
1 green bell pepper, chopped
2 carrots, chopped
4 cloves garlic, minced
¼ cup chopped fresh basil
¼ teaspoon Italian seasoning
¼ cup Burgundy wine
1 bay leaf
2 stalks celery
2 tablespoons tomato paste

Steps:

  • Bring a pot of water to a boil. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, 1 minute. Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peel and squeeze out seeds. Chop 8 tomatoes and puree in blender or food processor. Chop remaining two tomatoes and set aside.
  • In a large pot or Dutch oven over medium heat, cook onion, bell pepper, carrot and garlic in oil and butter until onion starts to soften, 5 minutes. Pour in pureed tomatoes. Stir in chopped tomato, basil, Italian seasoning and wine. Place bay leaf and whole celery stalks in pot. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Stir in tomato paste and simmer an additional 2 hours. Discard bay leaf and celery and serve.

This is a basic tomato sauce; use it anytime a tomato sauce is called for - in pasta sauces, soups, stews or casseroles.

12 cups chopped ripe tomatoes
1 cup chopped onion
2 garlic cloves, minced
2 tablespoons chopped fresh oregano (or 1 tsp dried)
2 teaspoons granulated sugar
1/2 teaspoon fresh ground pepper
2 bay leaves
2 tablespoons lemon juice
1/2 teaspoon salt

Steps:

  • Combine tomatoes, onion, garlic, oregano, sugar, pepper & bay leaves in a large stainless steel or enamel saucepan.
  • Bring to a boil over high heat, reduce heat & boil gently, uncovered, until very thick, about 1 1/2 hours; stir frequently.
  • Press through a food mill or coarse sieve to remove skins & seeds; add lemon juice & salt.
  • Remove hot jars from the canning kettle & ladle sauce into jars leaving 1/2 inch of head space; remove any trapped air bubbles, readjust the head space, wipe rims & apply lids until finger tight.
  • Transfer jars to the canner & set timer for 35 minutes when the water returns to a boil.

My husband and I used to visit a Lebanese restaurant in DC and loved their dish called 'Loubieh Bel Zeit.' When we moved away we craved this dish, so I tried to re-create it and came up with the following recipe. My husband LOVES it and wants me to make it all of the time now.

2 tablespoons olive oil
1 onion, diced
3 tablespoons chopped garlic, or to taste
salt to taste
1 (28 ounce) can crushed tomatoes (such as San Marzano®)
1 (12 ounce) bag thin green beans, trimmed
1 teaspoon white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Heat olive oil in a skillet over high heat; cook and stir onion, garlic, and salt in the hot oil until onion is softened and browned, about 15 minutes.
  • Mix tomatoes and green beans into onion mixture. Add sugar and cinnamon to mixture; bring to a boil, lower heat to medium-low, cover, and simmer until green beans are tender, 20 to 25 minutes.

½ cup extra virgin olive oil
1 ½ tablespoons freshly ground black pepper
1 teaspoon chili seasoning mix
1 teaspoon salt
1 tablespoon minced onion
1 tablespoon dried oregano
1 tablespoon garlic powder
1 teaspoon finely minced fresh parsley
1 teaspoon white sugar

Steps:

2 cups sliced carrots
2 cups chopped celery
1 1/2 cups chopped green bell peppers
20 large tomatoes, peeled seeded and cored
1/4 cup olive oil
2 teaspoons salt

Steps:

  • Saute onion, carrot, celery and peppers in olive oil until onions are limp and transparent.
  • Add tomatoes to veg and cook for 15-20 min.
  • Puree veg in a mill or processor.
  • Add salt and cook uncovered for 1 hour, stirring often.
  • Ladle into hot jars leaving 1/4 inch head space and process in a boiling water bath for 45 minutes.

10 lbs tomatoes
3 onions, finely chopped
4 garlic cloves, minced
3 tablespoons olive oil
1 tablespoon dried basil
1 tablespoon oregano
1 tablespoon italian seasoning
1 tablespoon salt
1 teaspoon crushed red pepper flakes
1 teaspoon black pepper
1 teaspoon sugar
bottled lemon juice or citric acid

Steps:

  • Wash tomatoes; drain.
  • Peel, core and cut into small pieces; set aside.
  • Sauté onions and garlic in olive oil in a large saucepot. Add tomatoes and

1/2 cup extra virgin olive oil
1 small onion, chapped
2 garlic cloves, chopped
1 stalk celery, chopped
1 carrot, chopped
1 (32 ounce) can crushed tomatoes
4 -6 basil leaves
1/2 teaspoon sea salt
1 teaspoon fresh ground black pepper
5 tablespoons unsalted butter (optional)
2 bay leaves

Steps:

  • In a large pot, heat oil over medium-high heat.
  • Add onion and garlic and saute until soft and translucent--about 2 minutes. Add celery and carrot and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil and bay leaves and reduce the heat to low. Cover the pot and simmer for 1 hour or until thick. Remove bay leaves and taste for seasoning. If sauce tastes too acidic, add unsalted butter, 1 tablespoon at a time, to round out the flavour.
  • I like my sauce a little spicier, so I add a few red pepper flakes.
