TROPICAL SUNSHINE GELATIN SALAD
A refreshing salad that is great for picnics, potlucks and even friendly gatherings. Allow 2-4 hours for salad to set in the fridge.

Steps:
- In a bowl, dissolve gelatin with boiling water.
- Drain the pineapple, reserving the juice and set pineapple to the side.
- Add enough water to the pineapple juice to equal 1 cup then stir this into the gelatin.
- Add orange juice concentrate to gelatin.
- Chill mixture until partially set.
- Fold in the pineapple and mandarin oranges.
- Pour into a 4 cup mold or pretty glass bowl.
- Chill until fully set before serving.
SEASIDE SALAD
We've been eating this salad over 25 years. It's best if you make it ahead of time and let it chill well before eating. A fine summertime meal.

- Cook macaroni according to package directions, adding a little vegetable oil to keep separated; drain and chill.
- Mix with tuna, egg, onion, celery, green pepper and olives.
- With a whisk or fork, beat together dressing ingredients; toss with macaroni-tuna mixture.
- Cover and chill until serving time.
- Garnish with salad greens.

Steps:
- Drain pineapple, reserving 1/2 cup; set aside.
- In a saucepan, bring water to a boil; remove from heat. Add gelatin and marshmallows; stir until dissolved.
- Chill until partially set.
- Toss bananas with lemon juice; fold bananas and pineapple into gelatin.
- Pour into an 8" square dish.
- Chill until firm.
- Combine the sugar, flour and salt in saucepan. Stir in egg and reserved pineapple juice; cook and stir over low heat until thickened.
- Remove from heat; stir in butter. Cool.
- Fold in whipped cream; spread over firmed gelatin and sprinkle with pecans
- Chill overnight.

- In a bowl, dissolve cherry gelatin in 1 cup boiling water. Add 1/2 cup cold water; stir. Pour into a 13-in. x 9-in. dish coated with cooking spray; refrigerate until set but not firm, about 30 minutes., In a small saucepan, sprinkle unflavored gelatin over 1/2 cup cold water. Let stand for 1 minute. Stir in milk and sugar. Cook and stir over medium heat until gelatin and sugar are dissolved. , Remove from the heat. Whisk in sour cream and vanilla until smooth. Spoon 1-2/3 cups creamy gelatin mixture over the first flavored layer. Chill until set but not firm. Prepare remaining flavored gelatin as directed for cherry gelatin. Alternately layer flavored gelatins with creamy gelatin layers, allowing each to set before adding next layer. Top with lime gelatin. Refrigerate overnight. Cut into squares.

- In a small bowl, add 3/4 cup boiling water to 1 gelatin package; stir 2 minutes to completely dissolve. Stir in 3/4 cup cold water. Pour into a 3-qt. trifle or glass bowl. I've had this recipe forever; it was an instant hit the first time I made it, and now my daughter makes it for her family. If you are not a salmon fan, I imagine you could substitute tuna----but it is so tasty with the salmon, I've never had to alter it.It is great for picnics or family gatherings.

- Cook macaroni in boiling, salted water until tender. Drain.
- Add Catalina dressing while still hot and toss. Chill.
- Drain and flake salmon.
- Add flaked salmon, celery, relish, eggs, green onion, parsley, seasonings and mayonnaise to macaroni. Toss all together lightly.
- Chill at least 2 hours to marry the flavors.
- Serve as a side dish or on lettuce leaves with sliced tomatoes and cucumbers as a meal.
