1/2 pound French green lentils (lentilles du Puy)
1/4 cup good olive oil, plus extra for salmon
2 cups chopped yellow onions
2 cups chopped leeks, white and light green parts only
1 teaspoon fresh thyme leaves
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon minced fresh garlic
1 1/2 cups chopped celery (4 stalks)
1 1/2 cups chopped carrots (3 carrots)
1 1/2 cups Homemade Chicken Stock, recipe follows, or good canned broth
2 tablespoons tomato paste
2 tablespoons good red wine vinegar
Four 8-ounce center-cut salmon fillets, skin removed
Three 5-pound chickens
3 large onions, unpeeled and quartered
6 carrots, unpeeled and halved
4 celery stalks with leaves, cut in thirds
4 parsnips, unpeeled and cut in half, optional
20 sprigs fresh flat-leaf parsley
15 sprigs fresh thyme
20 sprigs fresh dill
1 head garlic, unpeeled and cut in half crosswise
2 tablespoons kosher salt
2 teaspoons whole black peppercorns

Steps:

  • Place the lentils in a heat-proof bowl and cover with boiling water. Set aside for 15 minutes, then drain.
  • Meanwhile, heat the oil in a saute pan, add the onions, leeks, thyme, salt, and pepper and cook over medium heat for 10 minutes, until the onions are translucent. Add the garlic and cook for 2 more minutes. Add the drained lentils, celery, carrots, chicken stock, and tomato paste. Cover and simmer over low heat for 20 minutes, until the lentils are tender. Add the vinegar and season, to taste.
  • Preheat the oven to 450 degrees F.
  • For the salmon, heat a dry oven-proof saute pan over high heat for 4 minutes. Meanwhile, rub both sides of the salmon fillets with olive oil and season the tops very liberally with salt and pepper. When the pan is very hot, place the salmon fillets seasoning-sides down in the pan and cook over medium heat without moving them for 2 minutes, until very browned. Turn the fillets and place the pan in the oven for 5 to 7 minutes, until the salmon is cooked rare. Spoon a mound of lentils on each plate and place a salmon fillet on top. Serve hot.
  • Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, salt, and peppercorns in a 16 to 20-quart stockpot with 7 quarts of water and bring to a boil. Skim the surface, as needed. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander, discarding the chicken and vegetables, and chill. Discard the hardened fat, and then pack the broth in quart containers.

Seared Salmon Fillets With Roasted Fennel And Balsamic Lentils image

2 red bell peppers
2 yellow bell peppers
1 cup French lentils or brown lentils, rinsed
2 large fennel bulbs, very thinly sliced, fronds reserved for garnish
4 cloves garlic, very thinly sliced
4 tablespoons extra-virgin olive oil
Salt and pepper to taste
Juice of 1 lemon
1 shallot, minced
4 tablespoons balsamic vinegar
4 6-ounce salmon fillets

Steps:

  • Preheat broiler with rack placed 6 inches under the heat source. Place the bell peppers on a pan in the broiler. Cook, turning occasionally, until the skin is blackened on all sides. Remove from heat, and cool.
  • Lower oven heat to 425 degrees. In a medium saucepan, combine the lentils and 6 cups water. Bring to a boil, lower heat to a simmer and cook until tender, about 40 minutes. Drain the cooked lentils, rinse with cool water and reserve. While lentils are cooking, prepare the fennel salad: in a medium mixing bowl, combine the fennel, garlic, 2 tablespoons of olive oil and salt and pepper. Place the mixture in a shallow oven-proof dish, and roast until the fennel is lightly browned, about 40 minutes. Remove fennel from oven, add lemon juice and reserve until serving time.
  • Skin and seed the cooled bell peppers and cut into small dice. In a medium saute pan over medium heat, combine 1 tablespoon olive oil and shallots. Saute until shallots begin to soften, about 1 minute. Add lentils and diced peppers. Saute another minute, and remove from heat. In a small saucepan over low heat, simmer the balsamic vinegar until reduced by a third, about 2 minutes. Cool, add to the lentil mixture and toss gently. Set aside until serving time.
  • Preheat oven to 425 degrees. Season salmon fillets with salt and pepper to taste. In a well-seasoned or nonstick skillet over high heat, place 1 tablespoon olive oil. Quickly sear the fillets so they are well browned on the surface, and remove from heat. Transfer to an oiled baking dish, and bake about 5 minutes or to taste.
  • To serve, spread half of each plate with balsamic lentils, and half with roasted fennel salad. Top with a salmon fillet, and garnish with a sprig of fennel frond. Serve immediately.

2 medium carrots, peeled and cut into 1/4-inch dice (about 3/4 cup)
2 garlic cloves
1 bay leaf
Coarse salt and freshly ground pepper
1/4 cup extra-virgin olive oil
4 slices thick-cut bacon, cut into 1/2-inch pieces
3 tablespoons unsalted butter
1 medium leek, white and pale-green parts only, cut into 1/2-inch-thick rounds, rinsed well
1 small Savoy cabbage (about 1 pound), cored and cut into 1-inch-thick wedges
3 tablespoons Dijon mustard
4 salmon fillets (at least 2 1/2 inches wide and about 7 ounces each), with skin
1/4 cup chopped fresh flat-leaf parsley
1/2 lemon

Steps:

  • Put the lentils, carrots, garlic, and bay leaf in a medium saucepan; cover with cold water by 4 inches. Bring to a boil. Reduce heat; simmer, stirring occasionally, until the lentils are tender, about 15 minutes. Drain; return the mixture to the pan. Add 1 teaspoon salt; season with pepper. Stir in 1 tablespoon oil; cover to keep warm.
  • Cook the bacon in a medium skillet over medium-high heat, stirring occasionally, until crisp. Drain on paper towels. Reserve the fat; wipe the skillet clean. Add the bacon to the lentil mixture.
  • Melt the butter in a medium saucepan over medium-low heat; add the leek. Cook, stirring, until softened, about 8 minutes. Stir in the cabbage and a pinch of salt. Add 1/4 cup water. Cover; cook over medium heat, stirring occasionally, until the cabbage is just tender, 4 to 5 minutes. Season with salt and pepper. Cover to keep warm.
  • Stir together the mustard and 1 tablespoon oil in a shallow dish. Season the fillets with salt and pepper. Place the fillets in the dish to coat the skins with the mustard mixture.
  • Add 1 tablespoon reserved bacon fat to the reserved skillet; heat over medium-high heat. In batches, if necessary (allow 1 inch between fillets), cook the fillets, skin sides down, until the skins are browned and very crisp, about 4 minutes. Flip; cook 3 minutes more (for medium-rare).
  • Add the remaining 2 tablespoons oil to the lentil mixture; stir in the parsley. Divide the lentils and salmon among serving plates. Squeeze the lemon over the cabbage; divide among plates.
