SUPER EASY SEARED AHI TUNA
Tired of spending ten dollars or more for a simple Seared Ahi Tuna Appetizer and over thirty dollars for a Seared Ahi Tuna dinner? Well, now you can go to your local fish market, grocery store or even Costco and pick up some Ahi (or Yellowfin) Tuna and do it yourself. So simple, but so elegant!

- With a sharp knife, cut the tuna into 4 large pieces for appetizer portion, 2 large pieces for dinner portion. Use your judgment on what shape you want to cut your tuna because not all tuna is the same size or shape. However, the shape should somewhat resemble a miniature brick.
- Season the tuna pieces with salt and pepper. Coat lightly on all sides with bread crumbs. Heat olive oil in a large heavy skillet over high heat. The pan should be as hot as you can get it. Place the tuna in the pan, and sear on each side for about 45 seconds for small portions, or 1 minute for large. Remove from pan. The tuna will be very rare.
- Slice each 'brick' into 1/4 inch thick slices, and fan out on a serving plate. Enjoy plain, or with the condiments of your choice.

- In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.
- Spread the sesame seeds out on a plate. Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.
- Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan, and sear for about 30 seconds on each side. Serve with the dipping sauce and wasabi paste.

- Combine the kosher salt (NOT table salt) coriander, paprika, cayenne pepper and black pepper in a bowl. Mix well and set aside.
- Combine black and white sesame seeds in another bowl and set aside.
- With paper toweling, pat the excess moisture from the ahi tuna pieces.
- Generously rub the seasoning mixture all over tuna, pressing into the tuna without mashing it.
- Next, press the mixed sesame seeds into the tuna, covering it all over.
- Place a heavy bottomed non-stick or cast iron skillet on medium high heat. Add the oil and distribute it evenly all over the pan surface.
- When the oil begins to smoke slightly and/or is starting to swirl, place the tuna in the pan.
- Cook for approximately 45 seconds on each side.
- Lastly, using tongs, cook the ends and (cut) sides for 20 seconds each.
- Remove from heat. Slice to desired thickness (preferably using a very sharp sashimi knife) and serve.

- 1 Mix the marinade ingredients together and coat the tuna steaks with the marinade, cover tightly, and refrigerate for at least an hour. 2 Heat a non-stick skillet over medium high to high heat. When the pan is hot, remove the tuna steaks from the marinade and sear them for a minute to a minute and a half on each side ( even a little longer if you want the tuna less rare than pictured.) 3 Remove from pan and slice into 1/4-inch thick slices. Sprinkle with a few green onion slices.

- Crush blackberries in a bowl until smooth. Add passion fruit juice, soy sauce, lemon juice, honey, parsley, sea salt, and pepper and stir until marinade is thoroughly mixed.
- Place tuna in a glass dish and pour marinade over top; flip several times to coat. Cover the dish with plastic wrap and marinate in the refrigerator for 2 hours.
- Remove tuna from the marinade and shake off excess. Discard the remaining marinade.

SEARED SESAME-CRUSTED AHI TUNA
I have tried several different recipes for making ahi tuna and was disappointed every time. So I have blended several things about other recipes to create this. I'm sure this isn't completely original, but it is original to me. This can be served as a main course with some rice and asparagus (or stir-fry vegetables) or as an appetizer. I like a little soy sauce for dipping, but there are many other spicier dipping sauces you could use.

- Rinse tuna and pat dry. Place in a prep dish and sprinkle both sides with blackened seasoning. Brush teriyaki sauce on all sides of the tuna to glaze it.
- Mix white and black sesame seeds together in a shallow dish. Dredge tuna in the sesame seeds until all sides are coated.
- Heat oil in a cast iron skillet over high heat until smoking. Arrange tuna in the pan and cook for 30 to 45 seconds. Flip and cook for another 3o to 45 seconds; do not overcook!
- Quickly transfer tuna to a cutting board and cut into 1/4-inch thick slices. Arrange tuna on individual plates, overlapping slices slightly. Serve immediately.
