SHRIMP AND PASTA SHELL SALAD



Shrimp and Pasta Shell Salad image

When I want to make a macaroni salad just a little bit extra-special, nothing does the trick like some small, sweet shrimp. This is one of my favorite summer salads, and it's oh-so-easy.

1 ¼ cups mayonnaise, or more if needed
2 teaspoons Dijon mustard
2 teaspoons ketchup
¼ teaspoon Worcestershire sauce
1 teaspoon salt, or to taste
1 pinch cayenne pepper, or to taste
1 lemon, juiced
⅓ cup chopped fresh dill
1 (12 ounce) package small pasta shells
1 pound cooked, peeled, and deveined small shrimp - cut in half
½ cup finely diced red bell pepper
¾ cup diced celery
salt and ground black pepper to taste
1 pinch paprika, for garnish
3 sprigs fresh dill, or as desired

Steps:

  • Whisk 1 1/4 cup mayonnaise, Dijon mustard, ketchup, Worcestershire sauce, salt, and cayenne pepper together in a bowl; add lemon juice and 1/3 cup chopped dill. Whisk until thoroughly combined. Refrigerate.
  • Bring a pot of well-salted water to a boil and stir in pasta shells; cook until tender, 8 to 10 minutes. Drain and rinse with cold water to cool pasta slightly; drain again. Transfer to a large bowl.
  • Toss shrimp with pasta; add red bell pepper, celery, and dressing to pasta and shrimp. Mix thoroughly to coat and fill shells with dressing. Cover bowl with plastic wrap and refrigerate until chilled, 2 to 3 hours.
  • Stir salad again before serving and season to taste with more salt, black pepper, lemon juice, and cayenne pepper if desired. If salad seems a little dry, mix in a little more mayonnaise. Garnish with paprika and sprigs of dill.

This is the perfect picnic dish - no mayo!! Very easy to prepare and a nice change from the usual covered dish take along. I've been making this for 20 years (and I'm still young)!

1 (1 lb) box of medium sea shell macaroni or 1 (1 lb) box large sea shell macaroni
1 can tomato soup
1 medium chopped green bell pepper
1 medium chopped onion
1 (4 ounce) jar pimientos
3/4 cup sugar
3/4 cup cooking oil
3/4 cup cider vinegar
salt and pepper

Steps:

  • Mix all ingredients EXCEPT macaroni in a 3 quart glass covered dish.
  • Chill in refrigerator overnight to blend flavors.
  • Cook macaroni according to package directions and drain.
  • Add to liquid mixture stirring well and refrigerate at least 2-3 hours before serving.

2 cups uncooked small pasta shells
3 packages (8 ounces each) imitation crabmeat
1 pound cooked small shrimp, peeled and deveined
1/4 cup finely chopped sweet onion
1/4 cup finely chopped celery
3 tablespoons each finely chopped green, sweet red and yellow pepper
3 tablespoons minced fresh parsley
2 tablespoons snipped fresh dill or 2 teaspoons dill weed
1-1/2 cups fat-free mayonnaise
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water., In a large bowl, combine the crab, shrimp, onion, celery, peppers, parsley and dill. Stir in pasta. In a small bowl, combine the mayonnaise, lemon juice, salt and pepper. Pour over salad and toss to coat. Chill until serving.

24 uncooked jumbo pasta shells
1 tablespoon finely chopped green pepper
1 tablespoon chopped red onion

1 package (5 ounces) frozen cooked salad shrimp, thawed
1 large egg, lightly beaten
1/2 cup shredded part-skim mozzarella cheese
1/4 cup mayonnaise
2 tablespoons plus 4 cups 2% milk, divided
1-1/2 teaspoons seafood seasoning, divided
1/4 teaspoon pepper
1/4 cup all-purpose flour
1/4 teaspoon coarsely ground pepper
1-1/2 cups grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. , Meanwhile, in a small skillet, saute green pepper and onion in 1 teaspoon butter until tender; set aside., In a large bowl, combine crab, shrimp, egg, mozzarella cheese, mayonnaise, 2 tablespoons milk, 1 teaspoon seafood seasoning, pepper and green pepper mixture., Preheat oven to 350°. I love these! They are not what people are expecting of a stuffed shell so everyone talks about them when Iput out the finger food.

1 lb seafood salad (from the deli counter)
1 lb jumbo pasta shells
1/2 green pepper
1/2 red pepper

Steps:

  • Boil shells in plenty of water until just done. Allow them to cool completely and discard any broken ones.
  • Chop peppers and add to the seafood salad. Break up any large pieces of seafood.
  • Fill each shell with salad mixture.
  • Sprinkle with Old Bay Seasoning as a garnish if you wish.

1 cup fat-free mayonnaise
1/2 cup seafood cocktail sauce
1 teaspoon prepared horseradish
1/2 teaspoon dried tarragon

2 hard-boiled large eggs
2 cups cooked small shrimp, divided
2 cups cooked small pasta shells
3 celery ribs with leaves, chopped
3 green onions, thinly sliced
5 lettuce leaves

Steps:

  • For dressing, in a bowl, whisk the first seven ingredients. Cover and refrigerate until chilled. Cut eggs in half; discard yolks or save for another use. Chop egg whites. Set aside 10 shrimp for garnish; chop remaining shrimp., In a bowl, combine the chopped shrimp, pasta, celery, egg whites and green onions. Add dressing and toss to coat. Serve on lettuce.
