Seafood congee is the ultimate comfort food. The rice is cooked into a tender, silky and rich broth that is full of goodies. This recipe reveals the secret of using dried scallop to create a super flavorful broth, totally effortlessly.

1/2 cup (50 grams) dried scallop
1/3 cup (100 grams) rice
8 cup water
8 to 10 (100 grams) shrimp
1 teaspoon Shaoxing wine ((or Japanese sake))
1/2 teaspoon ginger (, minced)
3/8 teaspoon salt ((or to taste))
1/2 teaspoon sesame oil
2 tablespoons green onion (, chopped (green part))

Steps:

  • Rinse dried scallop. Place in a small bowl and tap water to cover. Let rehydrate for 2 to 3 hours.
  • Rinse rice a few times and transfer to a large pot. Add 2 liters (8 cups) water. Bring to a boil over high heat. Stir a few times. Turn to medium low or medium heat. Cover the pot halfway to keep the water boiling without spilling. Cook for 30 minutes. Stir the congee a few times during cooking.
  • Cut the shrimp down the center of the back into two thin pieces.
  • Combine shrimp, Shaoxing wine, 1/2 teaspoon ginger, and 1/8 teaspoon salt in a small bowl. Mix well and set aside.
  • Drain dried scallop. Tear into smaller pieces by hand. Set aside.
  • When the congee has been cooking for 30 minutes and starts to thicken, add dried scallop. Keep cooking with the pot half covered, until the congee achieves the desired thickness, 15 to 20 minutes. Be careful, the congee will get quite thick and sticky towards the end. Stand close to the pot and stir frequently. It will easily spill if covered too much or if the heat is too high. The rice will stick to the bottom if you don't stir enough.
  • When the congee is cooked, add shrimp and the remaining 1/4 teaspoon ginger. Stir a few times. Stop heat immediately. Add the remaining 1/4 teaspoon salt or salt to taste. Stir well. Drizzle with sesame oil and scatter with green onion.
  • Serve warm.

4 dried shiitake mushrooms
1 cup boiling water
2 tablespoons vegetable oil
1/2-inch piece fresh ginger, peeled and grated
2 shallots, peeled and finely chopped
4 ounces squid, bodies cut into rings
8 littleneck clams, cleaned
8 mussels, cleaned and de-bearded
4 jumbo shrimp, peeled and deveined
3 cups cooked jasmine rice
3 to 4 cups vegetable stock
1 tablespoon Shaohsing rice wine or dry sherry
1 tablespoon light soy sauce
Sea salt
Freshly ground white pepper
3 baby bok choy, cut in half through the stem and sliced, stems and leaves separated
One 8-ounce can bamboo shoots
1 handful fresh cilantro, stems left whole and leaves chopped

Steps:

  • In a small bowl, soak the dried mushrooms in the hot water for 20 minutes. Drain and reserve the soaking liquid. Remove and discard the stems, dice the caps and set aside.
  • Heat a wok or pan over high heat and the vegetable oil. Once smoking, add the ginger, shallots and diced mushrooms and stir-fry for a few seconds. Add in the squid, clams, mussels and shrimp, and stir-fry until the shrimp tails begin to turn pink, about 2 minutes. Toss in the cooked rice. Then add the reserved mushroom soaking liquid and vegetable stock and bring to boil. Season the mixture with the rice wine, light soy sauce, a pinch of salt and 2 pinches of ground white pepper. Add the bok choy stems, bamboo shoots and cilantro stems and cook 1 minute before adding the bok choy leaves. Simmer until the seafood is cooked and the clam and mussel shells have opened. Discard any unopened clams or mussels. Serve immediately, garnished with the cilantro leaves.

Congee is a slow cooked rice porridge eaten in many Asian countries. It can be flavoured with seafood, pork, chicken, vegetables or whatever is on hand. You can serve soy sauce, sesame oil, green onions and peanuts in individual bowls, allowing everyone to add their own toppings.

1 cup pc thai jasmine rice, rinsed
2 slices gingerroot, peeled (each about the size of a quarter)
1/2 teaspoon salt
1 (240 g) package pc sustainably sourced wild pacific halibut skinless fillets
1 cup thinly sliced green beans
1/4 cup soy sauce
4 teaspoons pure sesame oil
1/2 cup thinly sliced green onion
1/2 cup dry roasted lightly seasoned peanuts
1/2 cup cilantro leaf

Steps:

  • Bring rice and 10 cups (2.5 L) water to a boil in large saucepan over medium-high heat, stirring occasionally. Stir in ginger and salt. Reduce heat to low, partially cover and simmer for 45 minutes to 1 hour or until rice has broken apart and is the consistency of thin porridge.
  • Cut fish into 1/2-inch (1 cm) cubes. Remove ginger from rice mixture; discard. Stir fish and beans into rice; cover and cook for 5 minutes, stirring once or twice, or until fish is cooked through.
  • Ladle into 8 soup bowls. Drizzle with soy sauce and sesame oil. Top with green onions, peanuts and cilantro.
  • Chef Tom's Tip: For a heartier dish, replace 4 cups (1 L) of the water with one 900 mL carton of chicken broth.

  • Rinse the shrimp under cold water, and remove the heads (don’t throw them away though). To clean the shrimp, cut open the back shell using kitchen shears to de-vein. Pat the shrimp dry with paper towels and set aside both the shrimp and the heads in the refrigerator.
  • For the crab, lift off the top shell of each crab and rinse clean using Bill’s detailed cleaning instructions in our recipe for Cantonese-style Scallion Ginger Crab for reference. Cut the cleaned crab into 4-6 pieces, and set aside in the refrigerator.
  • Now we’re ready to begin cooking! Heat the oil in a thick-bottomed soup pot over medium heat. Stir-fry the shrimp heads along with half of the julienned ginger for a couple of minutes, until they turn crispy and the oil turns a deep red color. Then add in the water, and bring it to a boil. Turn down the heat to medium low, and simmer for 10 minutes. After 10 minutes, turn off the heat, and scoop out/discard the shrimp heads.
  • Next, add the frozen white rice and Shaoxing wine, bring to a boil again, and cook for 15 minutes over medium heat. The congee should be bubbling gently. Remember to stir from the bottom periodically to prevent the rice from sticking. After 15 minutes, add in the cleaned shrimp and crab. Stir, cover, and cook for another 10 minutes--until the shrimp and crab are cooked through.
