SMOKED SHRIMP BOUDIN

5 onions, julienned
1 cup (2 sticks) unsalted butter
5 pounds small (90/110 count) Gulf shrimp
7 tablespoons salt
4 tablespoons ground black pepper
3 tablespoons cayenne pepper
10 bay leaves
2 sprigs fresh sage
1/2 bunch fresh thyme
1 gallon crab stock
One 3-ounce packet crab boil seasoning, such as Zatarain's
3 tablespoons MSG
2 quarts Louisiana popcorn rice
1 bunch green onions, chopped
1 bunch fresh parsley, chopped
15 feet hog casing (29- to 32-millimeter diameter)

Steps:

  • Cook the onions in the butter in a large rondeau, skillet or Dutch oven over very low heat, stirring occasionally, until caramelized, about 45 minutes. Add the shrimp, 3 tablespoons of the salt, 2 tablespoons of the black pepper and 1 tablespoon of the cayenne. Cook until the shrimp are pink and fully cooked, about 10 more minutes. Turn off the heat and set aside.
  • Wrap the bay leaves, sage and thyme in a cheesecloth and tie with twine. Add the sachet to a large stockpot or Dutch oven along with the crab stock, crab boil seasoning, MSG and the remaining 4 tablespoons salt, 2 tablespoons pepper and 2 tablespoons cayenne. Bring to a boil, add the rice and stir once. Lower the temperature to medium low, cover the pot and cook until the rice is done, 15 to 20 minutes.
  • In a large bowl, mix the cooked rice together with the reserved shrimp mixture and the green onions and parsley. Let cool briefly. While still warm, pipe the mixture into the hog casing with a sausage stuffer and twist into 6-inch sausages.
  • Prepare a smoker for smoking at about 200 degrees F. Smoke the sausages until the internal temperature has reached 155 degrees F, 1 hour to 1 hour 30 minutes. Serve immediately.

Boudin (boo-dahn) is a wonderfully scrumptious Cajun dish made with meat, rice, and seasonings. Boudin sausage is normally stuffed with pork and rice, but you can add shrimp, crawfish, or alligator meat.

2 ½ pounds boneless pork shoulder, cubed
1 pound pork liver, cut into pieces
4 cups water
2 cups uncooked white rice
4 cups water
1 ¼ cups green onions, chopped
1 cup chopped onion
½ cup minced celery
1 red bell pepper, chopped
1 cup chopped fresh parsley
2 tablespoons finely chopped cilantro
1 teaspoon minced garlic
4 teaspoons salt
2 ½ teaspoons cayenne pepper
1 ½ teaspoons ground black pepper
½ teaspoon red pepper flakes
4 feet 1 1/2 inch diameter hog casings

Steps:

  • Combine the pork shoulder, liver, and 4 cups of water in a large saucepan. Bring to a boil; reduce heat to medium-low, cover, and simmer until the pork cubes are tender, about 1 1/2 hours.
  • Bring the rice and 4 cups of water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes. Set aside.
  • Once the pork is tender, remove from the saucepan with a slotted spoon and allow to cool a bit. While the pork is cooling, stir the green onion, chopped onion, celery, bell pepper, parsley, cilantro, and garlic into the simmering pork broth. Season with salt, cayenne pepper, black pepper, and red pepper flakes. Cook until the onion is tender. Meanwhile, grind the meat using the coarse plate of a meat grinder. Stir the ground meat into the vegetable mixture, and cook, stirring frequently until the water has nearly evaporated, about 10 minutes. Stir in the cooked rice, and set aside to cool.
  • While the meat mixture is cooling, rinse the sausage casings inside and out with plenty of warm water. Keep the casings in a bowl of warm water until ready to stuff. Once the sausage mixture is cool enough to handle, stuff into the prepared casings using a sausage stuffer. Prick the sausage with a needle every 4 to 6 inches.
  • Bring a large pot of salted water to a boil over high heat. Reduce the heat to keep the water at a very gentle simmer. Add the sausage and cook gently until the sausage is hot on the inside, firm to the touch, and has plumped, about 5 minutes. Serve immediately.

1/3 cup minced shallots
1/2 cup heavy cream
1/4 cup brandy
1 1/2 teaspoons salt
1/2 teaspoon cayenne
1/4 teaspoon freshly-ground white pepper
3 cups cooked medium-grain rice
2 tablespoons finely-chopped parsley
Casings abt 1 1/2" dia and 4 feet long
1/4 teaspoon black peppercorns
1 yellow onion quartered
4 lemon slices
1 bay leaf
4 tablespoons butter
Mustard Cream Sauce (see recipe)

Steps:

  • In a food processor, combine the crawfish, shrimp, shallots, cream, brandy, salt, cayenne, and pepper. Turn the mixture into a mixing bowl. Stir in the rice and parsley. Using the feeding tube on a mixer, stuff the seafood mixture into the casings to make 3-inch links. Bring a large saucepan of salted water up to a boil. Add the peppercorns, onion, lemon slices and bay leaf and cook for 2 minutes. Add the sausage and poach until firm to the touch and plump, about 5 minutes. Remove from the water and let cool. In a large saute pan, over medium heat, melt the butter. Pan-fry the sausage for 3 to 4 minutes on each side. Remove from the pan and keep warm. To serve, spoon the sauce in the center of each plate, and top with sausages. Serve immediately with Mustard Cream Sauce. This recipe yields 8 servings.

A flavorful blast from the Prudhomme family cookbook. To stuff the casings, you will need a meat grinder with a sausage horn attachment. If you don't have such a device, use the mixture to make fried crawfish patties by shaping 1/4 cup of filling into a 1/2 inch thick patty and frying in hot oil until golden brown on both sides.

1 package natural hog casing (37 millimeter)
2 lbs peeled crayfish tails, coarsely chopped (if you can't find crawfish tails, shrimp may be substituted)
2 teaspoons salt
1 1/2 teaspoons cayenne pepper (or red pepper of your choice)
3/4 teaspoon black pepper
1/4 cup vegetable oil
1 cup chopped onion
1/8 teaspoon finely minced garlic
1 cup chopped green onion top (save the white part for another recipe)
1/4 cup chopped fresh parsley
3 cups hot cooked rice (for best results, use freshly made rice)
water, to heat the boudin

Steps:

  • To prepare casings: Let casings soak in cool water about five minutes to remove salt on outer surface (no longer, or they will become too tender to stuff) and flush salt from the inside by placing one end on faucet nozzle and turn on cold tap water (if you see holes or water leaking, cut and discard).
  • Remove casing from faucet and gently squeeze out water; cover rinsed casings and refrigerate until ready to use.
  • Place the crawfish in a bowl and sprinkle the seasonings on top; mix well and set aside.
  • Heat the oil in a saucepan and saute the vegetables over medium heat for about five minutes or until translucent.
  • Add the seasoned crawfish and cook about 20 minutes more, stirring occasionally.
  • Remove from heat and stir in the rice, mixing very well.
  • While the mixture is still hot, fill the casings, making links by twisting the filled casing several turns periodically (a four inch link is a good size).
  • To cook:.
  • Place the sausage in a single layer in a large pan or dutch oven and cover with water.
  • Heat over high until water is nearly simmering and reduce heat to maintain just under simmering until the sausage is heated through about 15 to 20 minutes (cooking over higher heat may lead the casings to burst).
  • Drain and serve immediately.
  • An alternate method of cooking would be to saute the sausages in a frying pan in a little oil or butter.
