2 cups (12-oz. pkg.) NESTLE® TOLL HOUSE® Semi-Sweet Chocolate Morsels, divided
1 cup (2 sticks) butter, softened divided
1¾ cups (about 30 cookies) finely crushed chocolate wafer cookies
2 tablespoons milk
1¼ teaspoons peppermint extract, divided
½ teaspoon vanilla extract
2 to 4 drops green food coloring
2½ cups powdered sugar

Steps:

  • GREASE 9-inch-square baking pan.
  • MICROWAVE 1/3 cup morsels and 1/3 cup butter in small, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 30 seconds; STIR. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Stir crushed cookies into melted morsel mixture. Press onto bottom of prepared pan. Refrigerate for 10 minutes or until firm.
  • MEANWHILE, BEAT 1/3 cup butter, milk, 1/2 teaspoon peppermint extract and vanilla extract in medium mixer bowl until smooth. Gradually beat in powdered sugar until smooth and creamy. Add food coloring, 1drop at a time, until desired color is reached. Spread powdered sugar mixture evenly over cookie crumb layer.
  • MICROWAVE remaining 1 2/3 cups morsels, 1/3 cup butter and 3/4 teaspoon peppermint extract in small, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 30 seconds; STIR. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Let stand for 10 minutes. Spread chocolate layer evenly over powdered sugar mixture. Refrigerate for at least 2 hours. For easier cutting, allow bars to sit at room temperature for 10 minutes.

2 tablespoons butter or margarine
1/4 teaspoon salt
2 cups miniature marshmallows
1 2/3 cups (10-oz. pkg.) NESTLE® TOLL HOUSE® Dark Chocolate Morsels
3/4 cup (4 oz.) dried cherries, coarsely chopped
1 teaspoon vanilla extract

Steps:

  • LINE 8-inch-square baking pan with foil.
  • COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
  • STIR in marshmallows, morsels, dried cherries and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan. Refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into 48 pieces.
  • VARIATION: For an equally delicious fudge, try substituting ¾ cup dried berry blend for the cherries.

1 cup flaked coconut
1 (14 ounce) can NESTLÉ® CARNATION® Sweetened Condensed Milk
1 2/3 cups NESTLÉ® TOLL HOUSE® Dark Chocolate & Mint Morsels

Steps:

  • PREHEAT oven to 350°F.
  • MELT butter in 13 x 9-inch baking pan in oven; remove from oven. Sprinkle cookie crumbs over butter. Stir well; press mixture onto bottom of pan. Sprinkle with nuts and coconut. Pour sweetened condensed milk evenly over top. Sprinkle with morsels; press down slightly.
  • BAKE for 20 to 25 minutes or until coconut is light golden brown. Cool completely in pan on wire rack. Cut into bars.

  • BEAT butter, sugar, vanilla extract and salt in large mixer bowl until creamy. Gradually beat in flour; stir in morsels and nuts. Shape level tablespoons of dough into 1 1/4-inch balls. Place on ungreased baking sheets.
  • BAKE for 10 to 12 minutes or until cookies are set and lightly browned. Remove from oven. Sift powdered sugar over hot cookies on baking sheets. You can't grow up in Chicago without becoming obsessed with Frango mints. They're a simple combination of chocolate and mint ganache -- a pastry term for chocolate and cream mixed together -- but I didn't know that when I was a kid begging to go to Marshall Field's to watch them being made. The chocolate seems to preserve the mint leaf; it will stay green and fresh for two or three days.

20 fresh whole mint leaves, unblemished
4 ounces semisweet chocolate, tempered if possible

Steps:

  • Lay a sheet of acetate or parchment or a nonstick baking mat (smooth-side up) on a work surface. Place the mint leaves on the sheet, face down, about 2 inches apart.
  • Melt the chocolate over a water bath. Use a spoon or pastry bag to cover each mint leaf with a teaspoon of melted chocolate. Working carefully, place another sheet of acetate or baking mat (smooth side down) over the first one. Gently press down directly on top of each leaf to spread the chocolate around the leaf, making a border about 1/4-inch wide all around (don't worry if they're not very neat). Let set at least 1 hour, until firm. Gently peel off the acetate. Store in an airtight container for up to 3 days. Serve on a platter with the mint leaf showing.

1 cup sugar
1/2 cup margarine, softened
4 eggs, beaten
1 teaspoon salt
1 teaspoon vanilla
1 cup flour
1 (16 ounce) can hershey chocolate syrup
2 cups powdered sugar
1/2 cup margarine, softened
1 tablespoon milk
2 teaspoons peppermint extract
green food coloring
1 cup semi-sweet chocolate chips
6 tablespoons margarine

Steps:

  • Mix sugar through chocolate syrup for bars and put into a greased 9x13" pan.
  • Bake at 350 degrees for 30 minutes.
  • (Don't use a glass pan).
  • Cool.
  • Mix Filling ingredients (powdered sugar through green food coloring) and spread over cooled bars.
  • Melt chocolate chips and 6 Tbsp margarine over stove top and smooth over the filling.
  • Chill until firm.
