SCRAMBLED FRENCH TOAST
I make a point of saving my leftover bread just so I can make this family-favorite recipe. Kids will have fun helping you prepare it, but will enjoy eating this sticky "scrambled" version of French toast even more!

- In a large bowl, beat eggs. Add milk, vanilla, cinnamon and nutmeg. Add bread cubes and toss; let stand for 5 minutes. Melt butter in a large skillet. Add bread cubes and stir until cooked and browned. Gradually add sugar; stir to coat evenly. Cook until all sugar is dissolved, about 5 minutes.

SWEET SCRAMBLED FRENCH TOAST
Cubes of French bread are dipped in egg batter and fried in butter. Then, sugar is added to the toast cubes in the saute pan and heated until dissolved, forming a sugary glaze. Recipe can be halved successfully. This is awesome!

Steps:
- Heat the oil in a frying pan over a medium heat and gently fry the onion for 8 -10 mins or until golden brown and sticky. Stir in the garlic, turmeric, cumin and paprika and cook for 1 min.
- Roughly mash the tofu in a bowl using a fork, keeping some pieces chunky. Add to the pan and fry for 3 mins. Raise the heat, then tip in the tomatoes, cooking for 5 mins more or until they begin to soften. Fold the parsley through the mixture. Serve on its own or with toasted rye bread (not gluten-free), if you like.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Lay bacon strips in a single layer on prepared baking sheet.
- Bake in the preheated oven until browned and crisp, 10 to 15 minutes. Drain bacon slices on paper towels.
- Beat 3 eggs, brown sugar, cinnamon, and nutmeg together in a large, shallow bowl. Dip each slice of bread into egg mixture to saturate completely.
- Heat oil in a large skillet over medium-high heat. Working in batches, cook bread slices in hot oil, turning once, until browned on each side, about 5 minutes. Transfer toast to a plate.
- Beat remaining eggs in a bowl. Cook and stir eggs in the same skillet over medium heat until eggs are scrambled and set, 3 to 4 minutes.
- Place 1 slice of toast on a plate and top with 1/2 of the bacon, 1/2 of the scrambled eggs, and 1 slice of toast. Repeat with remaining toast, bacon, and eggs. Top each sandwich with maple syrup.
