Scrambled Eggs With Dill and Smoked Salmon image

This is one of my favorite breakfast recipes to make on a lazy Sunday morning, although it comes together very quickly. I recently discovered Thomas' Bagel Thins, which work perfectly for this recipe. They are nice and thin, but any type bread of your preference would work too.

3 everything bagels (I use Thomas's Bagel Thins) or 3 onion bagels (I use Thomas's Bagel Thins)
3 tablespoons soft cream cheese with chives
4 jumbo eggs
2 tablespoons chopped fresh dill
salt and pepper
2 tablespoons milk
2 tablespoons heavy cream
3 tablespoons chopped red onions
4 ounces smoked salmon
capers (optional)
dill sprigs (optional)

Steps:

  • Toast bagels medium-well and keep warm.
  • In bowl, beat eggs well, then add dill, salt and pepper and beat some more. Add milk and cream and beat again until frothy.
  • Melt butter in skillet and add egg mixture. Scramble until soft.
  • To assemble, divide cream cheese evenly among bagel slices and spread. Divide salmon slices evenly and place atop cream cheese. Sprinkle chopped red onion over salmon, then mound cooked eggs on top. Garnish each with capers and dill sprigs, if desired.

I've been struggling with my weight since i was a lil kid so i've tried hundreds of things and i haven't found a diet that i can keep up with except for the Atkins diet, which gave me great great results. I found this recipe in the Atkins Meal Planner and it's delicious and soooo easy to make. The smoked salmon, the green onions and the dill will give your breakfast a whole new dimension. Enjoy! :)

8 eggs
3 tablespoons cream
1 tablespoon fresh dill, chopped
1/2 teaspoon salt
4 tablespoons butter
4 green onions, thinly sliced
6 ounces smoked salmon, thinly sliced and cut into strips

Steps:

  • In a large bowl, beat eggs, cream. dill and salt.
  • Melt butter in a large skillet over medium heat.
  • Add green onions; cook 8 minutes, until softened.
  • Pour in egg mixture; cook 3-4 minutes, stirring occasionally, until almost set.
  • Mix in salmon, cook 1 more minute more or until eggs reach desire doneness.
  • Serve and enjoy!

1 tablespoon butter or 1 tablespoon margarine
1 (4 ounce) chunk smoked salmon, flaked
4 eggs
1/4 cup water
1/4 teaspoon pepper
1 tablespoon snipped dill weed
4 slices toast
lemon slice
dill weed

Steps:

  • Heat butter in 10-inch skillet over medium heat until hot and bubbly; cook and stir salmon 1 minute.
  • Beat eggs, water and pepper; pour into skillet.
  • Cook uncovered over low heat, stirring occasionally, until eggs are thickened throughout but still moist, 3 to 5 minutes; sprinkle with snipped dillweed.
  • Serve eggs on toast; garnish with lemon slices and dill weed.

2 slices whole wheat bread, toasted

Steps:

  • In a small bowl, beat eggs, milk and seasonings.
  • Spray a skillet with non-stick spray or use a non-stick skillet. Heat over medium heat.
  • When hot, add egg mixture.
  • Cook eggs, stirring occasionally until slightly set, about 2-3 minutes.
  • Stir in salmon and spinach until salmon is heated through and the spinach has wilted.
  • Serve over toasted bread.
  • Sprinkle with additional fresh chives and dill.

  • Heat a large, flat based fry-pan over a low heat and add the butter, heat until butter is melted and beginning to froth. Break the eggs in a bowl and gently combine with a whisk until all of the yolks are broken and are combining with the whites, season eggs with a little salt and pepper.
  • Keeping the pan on a very low heat, add the eggs and move around until the bottom of the fry pan is covered and let them sit until they begin to become firm underneath. Add the Safcol smoked salmon, spring onions and dill evenly across the eggs then distribute small dollops of the sour cream over the top.
  • Lift the eggs from the bottom of the pan with the spatula and chop roughly with the spatula using a lift and chop motion, so that the raw mixture hits the bottom of the pan. As soon as the eggs are just set, do a quick, rough chop with the spatula again and remove from the pan. Serve immediately with sourdough toast.
