An incredibly soft and chewy cookie, brimming with rich, deep molasses flavor and boasting of warm spices to perfectly highlight them. They're deliciously sweet and buttery and oh so addictive! A holiday staple!

2 cups (283g) unbleached all-purpose flour ((scoop and level to measure))
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
3/4 cup (170g) unsalted butter, (at room temperature)
3/4 cup (150g) packed light brown sugar
1/4 cup + 2 Tbsp molasses*
1 large egg yolk
2 tsp vanilla extract
1/4 cup (50g) granulated sugar

Steps:

  • Preheat oven to 350 degrees. Line two 18 by 13-inch baking sheets with parchment paper, set aside.
  • In a medium mixing bowl whisk together flour, baking soda, salt, ginger, cinnamon, cloves and nutmeg for 30 seconds, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment, blend together butter and brown sugar until well combined. Scrape down sides and bottom of bowl.
  • Mix in molasses, egg yolk and vanilla extract. Scrape down sides and bottom of bowl.
  • Add flour mixture and mix until combined.
  • Pour granulated sugar into a small bowl. Scoop dough out and shape into balls nearly the size of a golf ball (30g each).
  • Roll each dough ball through granulated sugar then transfer to baking sheets spacing 2-inches apart.
  • Bake one sheet at a time in preheated oven 9 - 11 minutes until cookies are puffed and appear just lightly under-baked in the center.
  • Let cool on baking sheet 5 minutes then transfer to a wire rack to cool completely.
  • Store cookies in an airtight container at room temperature up to 4 days.

2 cups (250g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3/4 teaspoon ground ginger
1/2 teaspoon salt
3/4 cup (170g) unsalted butter, softened to room temperature
1 cup (200g) granulated sugar
1/4 cup (60ml) unsulphured or dark molasses*
1 large egg, room temperature
1 teaspoon pure vanilla extract
for rolling: 2/3 cup granulated or coarse sugar*

Steps:

  • Whisk the flour, baking soda, cinnamon, cloves, ginger, and salt together. Set aside.
  • Using a hand mixer or a stand mixer fitted with paddle attachment, beat the butter on high speed until completely smooth, about 1 minute. Add the granulated sugar and beat the two together until smooth and creamy, about 1 minute. Add the molasses, egg, and vanilla and beat on high until completely combined, about 2 minutes. Scrape down the sides and bottom of the bowl as needed.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. Cover and chill the dough for 1 hour in the refrigerator (and up to 2-3 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard and the cookies may not spread.
  • Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Roll balls of dough (about 1 scant Tablespoon of dough per cookie) into the granulated/coarse sugar. Place each ball 2 inches apart on the baking sheets. Bake for 13 minutes or until cracked on the top.
  • Remove from the oven and allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1 cup raisins
2/3 cup melted shortening
1 egg, beaten
3/4 cup molasses
1 tablespoon milk

Steps:

  • Sift together dry ingredients.
  • Combine oats and rasins,sift flour mixture over top.
  • Combine remaning ingredients in bowl.
  • Pour over dry ingredients,mix well.
  • Drop by teaspoonfuls 2-3 inches apart onto greased baking sheet.
  • Bake at 350 for 8-12 minutes.

1 1/4 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground clove
1/2 cup shortening, melted and cooled
1 large egg
1/4 cup unsulfured molasses
3/4 cup rolled oats

Steps:

  • Heat oven to 375 degrees. Line 2 baking sheets with silpats.
  • Sift together flour, 1 cup of the sugar, baking soda, salt, ground ginger, and ground clove into a large mixing bowl.
  • Add the shortening, egg, and molasses. Mix until smooth. Add oatmeal and stir until just incorporated.
  • Using a 1-ounce ice cream scoop, scoop batter onto baking sheets, about 3 inches apart. In a small bowl, place 1/4 cup sugar. Dip the bottom of a glass in sugar and press down on each scoop of dough until it is about 1/4-inch thick, dipping the glass in sugar between each one. For your first dip, you may want to press the bottom of the glass onto a cookie. The moisture from the cookie will allow the sugar to stick to the glass.
  • Bake until brown and crisp, about 12 minutes. Remove from the oven and transfer to a wire rack to cool.
