FRENCH ONION SCALLOPED POTATOES



French Onion Scalloped Potatoes image

Creamy, cheesy scalloped potato casserole topped with crispy French onions.

Number Of Ingredients 10

1 ½ pounds gold potatoes (or baby Yukon potatoes, washed and thinly sliced (⅛ of an inch thick))
2 tablespoons butter
3 tablespoons flour
2 teaspoons garlic powder
2 cups milk
1 ½ cups shredded white sharp cheddar cheese (divided (may sub an Italian cheese blend for milder flavor))
½ packet ranch seasoning/dressing mix ((If you love ranch flavor, you can use the whole packet))
salt and pepper to taste ((I used about 1 teaspoon salt, ½ teaspoon pepper))
optional: ½ red onion (thinly sliced)
1 cup crispy French onions ((usually found with the salad toppings and croutons))

Steps:

  • Preheat oven to 375. Place sliced potatoes in a large pot and cover with water. Bring to a boil over medium high heat. Cover and cook about 15-minutes or until potatoes are tender. (The thicker your potato slices are, the longer they will take to cook) Drain and set aside.
  • While potatoes are boiling, prepare the sauce. In a large sauce pan melt butter over medium heat. Add flour and stir until mixture clumps up. Slowly whisk in the milk until a thick sauce forms. Add garlic powder, 1 cup of cheese, ranch seasoning, salt, and pepper and stir until cheese is melted and completely incorporated.
  • Add the sauce and potatoes to a large bowl and toss to coat. Transfer to a casserole dish. (If using red onions, layer them in with the potatoes) Sprinkle with remaining cheese. Bake, uncovered, for about 10 minutes until cheese is bubbly. Top with French onions and serve.

6 tablespoons butter, divided
1/4 cup all-purpose flour
1 teaspoon dried parsley flakes
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
3 cups 2% milk
6 cups thinly sliced peeled potatoes
1-1/2 cups chopped fully cooked ham
1 small onion, grated

Steps:

  • Preheat oven to 375°. In a large saucepan, melt 4 tablespoons butter over medium heat. Stir in flour, parsley, salt, thyme and pepper until smooth. Gradually add milk; bring to a boil. Cook and stir for 2 minutes. , Combine potatoes, ham and onion; place half in a greased 2-1/2-qt. baking dish. Top with half of the sauce; repeat layers. , Cover and bake until potatoes are almost tender, 65-75 minutes. Dot with remaining 2 tablespoons butter. Bake, uncovered, until potatoes are tender, 15-20 minutes.

1 package (1 oz) ranch salad dressing and seasoning mix (milk recipe)
3 1/2 cups boiling water
2 cups half-and-half
3/4 cup chopped red bell pepper
1 can (2.8 oz) French-fried onions
2 tablespoons chopped fresh parsley, if desired

Steps:

  • Heat oven to 400°F.
  • In 13x9-inch (3-quart) glass baking dish, stir together both Sauce Mixes (from potato boxes), the dressing mix, boiling water and half-and-half with wire whisk. Stir in both Potatoes pouches and the bell pepper. Bake uncovered 35 minutes or until potatoes are tender.
  • Top with onions; bake 10 minutes longer. Sprinkle with parsley before serving. Let stand 5 minutes before serving (sauce will thicken as it stands).

5 large potatoes, peeled and thinly sliced
3/4 cup chopped onion
3 tablespoons butter
1/4 cup all-purpose flour
1-3/4 cups chicken broth
2 tablespoons mayonnaise
3/4 teaspoon salt
1/8 teaspoon pepper
Paprika

Steps:

  • In a greased 2-1/2-qt. baking dish, layer potatoes and onion. In a saucepan, melt the butter; stir in flour until smooth. Gradually add broth, mayonnaise, salt and pepper; cook and stir for 2 minutes or until thick and bubbly. Pour over potatoes. Sprinkle with paprika. Cover and bake at 325° for 2 hours or until tender.

These are made with stock instead of milk.

1/4 c butter
about 2 c chicken or vegetable stock
8 medium yukon gold potatoes
salt and pepper to taste
1 large onion, sliced
2 Tbsp olive oil
2 Tbsp chopped parsley, for garnishing

Steps:

  • 1. Preheat oven to 375 degrees F. Butter a large baking dish with 1 tablespoon of butter.
  • 2. Bring stock to boil as you slice the potatoes.
  • 3. Thinly slice the potatoes. Add potatoes to a large bowl, season with salt and pepper and toss.
  • 4. Add potatoes and a few pieces of butter to the prepared baking dish. Add enough stock to cover the potatoes by about 2/3's. Press down gently with your hands.
  • 5. Sprinkle sliced onion evenly on top. Drizzle with olive oil and dot with a few more pieces of butter.
  • 6. Cover with foil and bake for 1 hour. Remove foil and continue to bake potatoes until golden brown and fork tender, about 30 to 60 minutes.

  • Thinly slice the onions. Heat the 4 tablespoons of butter in a skillet over medium heat. Add in the onions with a big pinch of salt and pepper. Stir. Cook for 10 minutes, stirring occasionally, until the onions soften. Reduce the heat to medium-low, stir in the thyme and cook for another 30 to 40 minutes, stirring often, until the onions are golden and caramelly in color. If at any time the onions start to burn, turn down the heat or add a splash of water to the pan. If the onions are not cooking, you need to raise the temperature a bit.
  • Use a mandoline or sharp knife to thinly slice the potatoes - you want them to be very thin, uniform in size and ⅛ inch thick or thinner. If you are slicing them ahead of time or with a while to go before assembling, place them in a bowl of ice water so they don’t brown.
  • Make the sauce! Heat the other 4 tablespoons of butter in a saucepan until melted. Whisk in the flour to create a roux. Cook for 2 to 3 minutes, stirring, until the roux is golden in color and smells fragrant and nutty. Slowly stream in the milk while whisking the entire time, bringing the sauce together.
