FLORIDA LOBSTER AND SEA SCALLOP FRITTERS



Florida Lobster and Sea Scallop Fritters image

One 6-ounce jar apple jelly
1/2 green bell pepper, finely diced
1/2 red bell pepper, finely diced
1/2 large jalapeno, finely diced
1/4 cup finely diced fresh parsley
1/4 cup finely diced red onion
2 tablespoons chopped cilantro
4 ounces Florida lobster meat
4 ounces sea scallops
2 teaspoons olive oil
1/2 cup all-purpose flour
1/2 cup semolina flour
2 teaspoons baking powder
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon black pepper
2 large eggs
1/2 cup chopped green onion
1/4 cup finely diced red onion
1/4 cup clam juice
1/4 cup lager beer
1 teaspoon chopped jalapeno
Vegetable or canola oil, for frying

Steps:

  • For the pepper jelly: Mix together the apple jelly, green pepper, red pepper, jalapeno, parsley, onion and cilantro in a small bowl. Let set at least 1 hour to infuse the flavors.
  • For the fritters: Preheat the oven to 400 degrees F. Toss the lobster and scallops with the olive oil on a rimmed baking sheet and roast for 5 minutes to parcook. Chop the lobster and dice the scallops.
  • Mix together the all-purpose flour, semolina flour, baking powder, sugar and salt in a large bowl. Add the eggs, green onion, red onion, clam juice, beer, jalapeno, lobster and scallops and mix to combine. Let stand for 5 minutes
  • Heat 1 inch of vegetable or canola oil in a frying pan over medium high to about 350 degrees F. Scoop the mixture in 1-tablespoon portions into the frying pan and cook until golden brown, being careful not to overcrowd the pan; carefully turn the fritters if necessary.
  • Drain on paper towels and serve with the pepper jelly on the side.

1/2 cup all-purpose flour
1/2 cup yellow cornmeal
2 teaspoons baking powder
kosher salt
fresh ground black pepper
2 large eggs, lightly beaten
1/4 cup bottled clam juice
1/4 cup pilsnet beer
1/4 lb fresh scallops, coarsely chopped
3 scallions, thinly sliced (white and green parts)
1/4 cup finely chopped red onion
1 small jalapeno pepper, minced
tartar sauce
lemon wedge

Steps:

  • In a large saucepan, heat 2" of oil to 350 degrees. Meanwhile, in a medium bowl, whisk the all purpose floue with cornmeal, baking powder, 1 1/4 teaspoons of salt and pinch of black pepper. Add the eggs, clam broth, and beer, and whisk until the batter is smooth. Fold in scallops, scallions, onion, and jalapeno.
  • Working in batches, drop heaping teaspoons of the batter into the oil and fry, turing occasionally, until golden brown all over, about 7 minutes. Using a slotted spoon, transfer the fritter to paper towels. Serve with tartar sauce and lemon wedges.

The batter is made with clam broth and pilsner, Brooklyn Brewery Brooklyn Pilsner or Victory Brewing Company's hoppy Prima Pils, are his choices. Haven't tried these as yet but they looked very interesting, so I figured I'd post for safekeeping. Food & Wine Magazine, May/07.

For chipotle mayonnaise
1/2 cup mayonnaise
1 tablespoon finely chopped canned chipotle chiles in adobo plus 2 teaspoons adobo sauce (from can)
1/4 teaspoon fresh lemon juice
For fritters
1/2 lb sea scallops, tough muscle removed from side of each if necessary
1 large egg white
1 tablespoon chopped shallot
1/2 teaspoon salt
1/8 teaspoon black pepper
1/3 cup chilled heavy cream
1/2 lb shrimp in shell, peeled, deveined, and cut into 1/4-inch pieces
1 cup plain fine dry bread crumbs
About 1/2 cup vegetable oil
Accompaniment: lemon wedges

Steps:

  • Make chipotle mayonnaise:
  • Stir together mayonnaise, chiles, adobo sauce, and lemon juice in a small bowl, then season with salt.
  • Make fritters:
  • Purée scallops, egg white, shallot, salt, and pepper in a food processor. Add cream and pulse until just combined. Transfer mixture to a bowl and stir in shrimp. Chill, covered, 10 minutes.
  • Put bread crumbs in a pie plate. Drop 6 (2-tablespoon) mounds of scallop mixture onto crumbs, then gently coat with crumbs and shape mounds into 3-inch patties. Transfer as coated to a wax-paper-lined tray. Make 6 more patties in same manner with remaining scallop mixture and crumbs.
  • Heat 1/4 inch oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then fry patties in 2 batches, turning once, until golden and firm to the touch, about 4 minutes total. Drain on paper towels.
  • Serve fritters with chipotle mayonnaise.

60 g plain flour
125 ml soda water
1 egg, lightly beaten
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon turmeric
1 teaspoon sea salt
1 small red chili pepper, de-seeded and finely chopped
235 g carrots, grated
8 shallots (spring onions)
25 g coriander, chopped (cilantro)
60 ml vegetable oil
12 medium scallops, roe removed
2 tablespoons olive oil
sea salt
fresh ground black pepper
watercress, to serve
125 g plain yogurt
1 tablespoon lime juice
sea salt
fresh ground black pepper
1 tablespoon olive oil

Steps:

  • To make the carrot fritters, preheat the oven to 160degC (315degF); place the flour, soda water, egg, cumin, coriander, turmeric and salt in a bowl and mix well, add the chilli, carrot, spring onion and coriander and stir to combine.
  • Heat a frying pan on a medium to high heat, add the oil and heat until hot.
  • Cooking in batches, add two tablespoons of batter per fritter and cook for two minutes on each side, or until golden brown; drain on paper towels, cook the remaining fritter batter, adding extra oil if necessary.
  • Place the fritters on an ovenproof plate lined with paper towels and keep warm in the oven while you cook the scallops.
  • For the scallops, place the scallops in a bowl, add the olive oil, season with salt and pepper and stir to combine; heat a nonstick frying pan over a medium to high heat and cook the scallops for no more than one minute on each side.
  • For the yoghurt dressing, place all the ingredients in a bowl and whisk to combine.
  • Place three carrot fritters on each plate, top with the watercress and scallops and drizzle with the yoghurt dressing; season with pepper and serve.
