This is a basic alfredo sauce, but with less fat and calories than most. Use your favorite seafood or chicken - both work very well with this recipe.

1 (16 ounce) package dry fettuccine noodles
1 ½ tablespoons butter or margarine
1 cup chopped green onions
4 garlic cloves, peeled and minced
1 pound medium shrimp - peeled and deveined
1 pound sea scallops
2 cups half-and-half cream
1 cup freshly grated Parmesan cheese
salt and pepper to taste
2 tablespoons cornstarch

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large, non-stick skillet over medium-high heat. Stir in onions and garlic, and cook for 1 minute. Add shrimp and scallops, stirring to combine, and cook 3 minutes more. Reduce heat to medium-low.
  • Pour half-and-half, salt, and pepper into the pan and bring to a simmer, stirring constantly. Do not boil. Gradually sprinkle 1/2 cup Parmesan cheese over seafood mixture and continue stirring another minute. Remove from heat.
  • Toss cooked pasta into the pan, coating thoroughly. Sprinkle with remaining Parmesan cheese, and serve.

2 lbs sea scallops, rinsed
7 slices fresh ginger (about 1/4 inch each)
7 scallions, trimmed
4 cups water
1/4 cup chinese rice wine or 1/4 cup sake
3 1/2 tablespoons chinese rice wine or 3 1/2 tablespoons sake
1 tablespoon minced garlic
1 cup chicken broth
1/4 cup oyster sauce
1 tablespoon soy sauce
1 tablespoon cornstarch
2 teaspoons sugar
1 teaspoon oriental sesame oil
3 tablespoons safflower oil or 3 tablespoons corn oil
1 lb snow peas, trimmed and stringed
1/4 teaspoon salt

Steps:

  • Cut each scallop horizontally in half to make 2 coins.
  • Smash 6 slices ginger with flat side of knife. Cut 6 scallions crosswise in half and smash. Heat smashed ginger and scallions, the water, and 1/4 cup rice wine in large saucepan to boiling. Reduce heat to low and simmer 5 minutes.
  • Meanwhile, mince remaining slice ginger and scallion and mix with garlic in small bowl.
  • Mix broth, oyster and soy sauces, 1-1/2 T. rice wine, the cornstarch, sugar, and sesame oil in mixing bowl; set oyster sauce aside.
  • Add scallops to poaching liquid in saucepan and simmer until just cooked through, about 1-1/2 minutes. Drain scallops.
  • Heat wok or large skiller over high heat. Add 1 T. oil and heat until hot. Add snow peas, remaining 2 T. rice wine, and the salt; stir-fry until peas are tender but still bright green, about 2 minutes. Spoon peas around edge of large platter and spoon scallops in center.
  • Heat work over high heat, add remaining 2 T. oil and garlic mixture, and stir-fry 10 seconds. Stir in oyster sauce and cook until thickened. Pour sauce over scallops and serve at once.

2 cups crushed butter-flavored crackers (about 50)
1/2 cup butter, melted
1/2 teaspoon salt
Dash pepper
1 pint shucked oysters or 2 cans (8 ounces each) whole oysters, drained
1 cup heavy whipping cream
1/4 teaspoon Worcestershire sauce

Steps:

  • Combine cracker crumbs, butter, salt and pepper; sprinkle a third into a greased 1-1/2-qt. baking dish. Arrange half of the oysters over crumbs. Top with another third of the crumb mixture and the remaining oysters. , Combine cream and Worcestershire sauce; pour over oysters. Top with remaining crumb mixture. Bake, uncovered, at 350° for 30-40 minutes or until top is golden brown.

Creamy Pan-Roasted Scallops With Fresh Tomatoes image

In this homage to a classic dish at Grand Central Oyster Bar in New York, scallops are quickly poached in a creamy, piquant tomato sauce that's spiked with Worcestershire and celery seed. If you want to work a little ahead, you can make the sauce through Step 2, and leave it in the pan, covered for an hour or two. Reheat it before adding the scallops in Step 3. Then serve the scallops right away, with some bread or rice to soak up every last drop of the herby, savory sauce.

2 tablespoons unsalted butter
1/4 cup thinly sliced shallots or red onion
Pinch of celery seeds
Salt and black pepper
2 cups chopped fresh tomatoes
2/3 cup dry white vermouth, dry white wine or clam juice
4 teaspoons Worcestershire sauce
1 cup heavy cream
2 pounds sea scallops, patted dry
1/2 cup chopped fresh chives, plus more for garnish
1/2 cup chopped celery leaves or parsley leaves, or a combination, plus more for garnish

Steps:

  • Heat a large skillet over medium-high and add the butter, letting it melt. Add shallots, celery seeds and a pinch each salt and pepper, and cook until the shallots are tender and opaque, about 3 to 5 minutes. Stir in tomatoes. Bring to a simmer, stirring occasionally, and cook until jammy, 9 to 13 minutes.
  • Increase heat to medium-high and stir in vermouth. Cook until about a third of the liquid evaporates, about 5 minutes. Add Worcestershire and cream, and simmer, reducing heat if needed and stirring occasionally, until sauce thickens enough to coat a spoon, 5 to 7 minutes.
  • Season scallops with salt and pepper, and add to the pan. Cook, uncovered, until scallops are just cooked through and opaque, 3 to 6 minutes, depending on the size of the scallops. Stir in chives and celery leaves. Serve immediately, garnished with more chives and celery leaves.

3 cups crushed saltine crackers
¾ cup unsalted butter, melted
4 cups shucked small oysters with liquor
⅛ teaspoon cayenne pepper
salt and ground black pepper to taste
2 tablespoons chopped fresh Italian flat-leaf parsley
1 cup heavy cream

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine saltine crackers and butter in a bowl; stir until all crumbs are saturated with butter.
  • Spread 1/3 of the saltines mixture on the bottom of a 9x13-inch casserole dish. Pour half of the oysters with their liquor over the saltines mixture. Season with cayenne pepper, salt, and black pepper. Repeat with next 1/3 of saltines and remaining oysters. Season with cayenne pepper, salt, black pepper, and Italian parsley.
  • Sprinkle remaining saltines mixture over the oysters. Drizzle cream slowly and evenly over the top.
  • Bake in the preheated oven until bubbling and browned, 40 to 45 minutes. Let rest 10 minutes before serving.

½ cup bread crumbs
25 buttery round crackers, crumbled
½ cup melted butter
1 pint shucked oysters, drained with liquid reserved
1 pinch salt and ground black pepper to taste
2 tablespoons milk

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Butter a shallow baking dish.
  • Combine bread crumbs and cracker crumbs; stir in the melted butter. Place a thin layer of the crumb mixture in the bottom of the prepared baking dish. Layer the oysters over the crumbs and sprinkle with salt and pepper to taste. Pour 2 tablespoons oyster liquid and 1 tablespoon milk over the top. Repeat then cover the top layer with the remaining crumb mixture.
  • Bake at 450 degrees F (230 degrees C) for 30 minutes.
