FROGMORE STEW
This picnic-style medley of shrimp, smoked kielbasa, corn and spuds is a specialty of South Carolina cuisine. It's commonly dubbed Frogmore stew or Beaufort stew in recognition of the two low country communities that lay claim to its origin. - In a stockpot, combine water, onion, seafood seasoning and, if desired, lemons; bring to a boil. Add potatoes; cook, uncovered, 10 minutes. Add kielbasa and corn; return to a boil. Reduce heat; simmer, uncovered, 10-12 minutes or until potatoes are tender. Add shrimp; cook 2-3 minutes longer or until shrimp turn pink., Drain; transfer to a bowl. Serve with cocktail sauce, butter and additional seasoning.

- In a large stockpot, add the shrimp boil and salt to the water and bring to a boil. Add the sausage and boil, uncovered, for 5 minutes. Add the corn and count 5 minutes. Add the shrimp and count 3 minutes. Do not wait for the liquid to come to a boil when timing the corn and shrimp. Drain immediately and serve.
FROGMORE STEW
I've been using this recipe for over 20 years, ever since I moved to South Carolina. It can be adjusted to serve any number. Allow 2 tablespoons of seasoning per quart of water. If you cannot find hot smoked sausage, use another smoked sausage such as kielbasa and add crushed hot red pepper to the pot.

- Bring water and Old Bay Seasoning to boil in a large stockpot.
- Add potatoes and cook for 15 minutes. Add sausage and cook for 5 minutes more. Add corn and cook for another 5 minutes. Stir in the shrimp and cook until shrimp are pink, about 5 minutes. Drain immediately and serve.

- Add tomatoes, and cook, stirring often, 5 minutes or until tomatoes begin to thicken slightly. Add seafood stock, and cook, stirring with a wooden spoon to loosen any browned bits from bottom of Dutch oven, 1 minute. Stir in salt, and bring mixture to a boil. Add potatoes; cover and cook 10 minutes.
- Add corn and sausage, and return to a boil; cover and cook 5 minutes. Stir in shrimp, submerging in cooking liquid; cover and cook 3 minutes. Remove Dutch oven from heat, and let stand 8 minutes or just until shrimp turn bright pink and firm. Stir in butter until melted. Remove and discard bay leaf.
- Spoon potatoes, corn, sausage, and shrimp into 8 shallow bowls using a slotted spoon. Ladle desired amount of cooking liquid into each bowl. Serve immediately.
