1 tbsp. GOYA® Extra Virgin Olive Oil
2 tbsp. GOYA® Tomato Sauce
1 tsp. GOYA® Minced Garlic
1 tsp. GOYA® Sofrito
2 packets Sazón GOYA® without Annatto
1 packet Sazón GOYA® with Coriander and Annatto
1 can GOYA® Small Red Beans
1½ cups CANILLA® Parboiled Extra Long Grain Rice
½ tsp. sugar

Steps:

  • Step 1 Heat oil in medium saucepan over medium-high heat. Add tomato sauce, garlic, sofrito and sazon, cook until fragrant, about 1 minute. Step 2 Transfer liquid from can red beans to measuring cup; add enough water to measure 3½ cups. Add liquid to pot; bring to boil. Add beans, rice and sugar; stir. Bring rice mixture to a boil; reduce heat to medium low and cook, covered, until water is absorbed, about 20 min. Step 3 Remove rice from heat. Let sit until rice becomes tender, 5 minutes. Goes great with Mexican food. I can't remember where I picked this recipe up, but originally I found it on the internet. Unfortunately, I didn't have the url on the printout I had laying around. Originally it called for 1 packet of Sazon seasoning, but I used dry Sazon instead. If you don't have that, you might try using some Mexican seasoning blend with perhaps a little bit of annato.

1 cup basmati rice, uncooked
12 ounces water or 12 ounces broth
1/4 cup stuffed green olive, sliced if desired
1 -2 tablespoon olive brine, to taste
1/3 cup cooked garbanzo beans
1 medium potato, peeled and chopped
1 teaspoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 -3 teaspoons dry sazon goya (may use seasoned adobo)

Steps:

  • Combine all ingredients in a small saucepan and bring to a boil.
  • Reduce heat, cover, and simmer for about 15-20 minutes or until water is absorbed and rice is tender.
  • Allow to sit 5-10 minutes undisturbed, then remove lid and fluff rice with a fork before serving.

1 tablespoon olive oil
1 onion, diced
2 garlic cloves, minced
1 bell pepper, diced (any color, I like red best)
1 1/4 tablespoons sazon goya
1/3 cup chopped cilantro, vary amount to taste
2 limes, cut in 8ths vary amount to taste

Steps:

  • Saute onions in olive oil for 2 minutes.
  • Add garlic and bell pepper and saute 3 minutes.
  • Stir in 2 cans of beans (including the liquid) and the sazon goya spice mix.
  • Simmer for 10 minutes - more for softer beans - less for firmer beans.
  • Serve over brown rice and top with chopped cilantro. I like to squeeze several drops of lime juice on every bite, but I'm a hard-core citrus lover. :-).

  • STEP 1: Soak the beans and bay leaf for 6-8 hours in 6-8 cups of water or broth; you want about 1 inch of liquid on top of the beans. I recommend soaking your beans for no more than 8 hours. You can soak at room temperature.
  • STEP 2: After you soak the beans, bring beans to boil for 1-2 minutes, then reduce heat to low, cover and simmer gently for 1-2 hours or until beans are tender and soft. The last half hour that your beans are cooking you can begin to make your sofrito (see below), or once the beans are done cooking you can turn the heat off and allow the beans to sit while you cook your sofrito. It’s just up to your advancement level of cooking and preference. REMOVE THE BAY LEAF BUT DO NOT DRAIN THE BEANS. The liquid is essential to the recipe!
  • STEP 3: How to make Sofrito (for 1 pound beans): Sofrito in spanish means sauce -- very traditional in many of the main staple foods in Puerto Rico: Add oil to a medium skillet and place over medium heat. Once oil is hot, add in onion, green pepper, cilantro and garlic. Saute until onions are translucent and green peppers soften, about 3-5 minutes. Bring heat to low and add tomato sauce, sazon and simmer for 2-3 minutes until sauce comes together. Add your sofrito to the beans (remember you were not supposed to drain the beans) and simmer uncovered over medium low heat for 20-30 minutes, stirring occasionally, so that the spices infuse with the beans. After that, turn the bean off and cover so that they keep the heat while you finish making everything else. They should stay hot enough for an hour or so.
  • STEP 4: While the beans are simmering with sofrito, start making the rice: Add oil to a medium pot and place over medium heat. Once oil is hot, add in onion, green pepper, cilantro and garlic. Saute until onions are translucent and green peppers soften, about 3-5 minutes. Bring heat to medium-low and add tomato sauce, sazon and adobo and simmer for 2 minutes until sauce comes together. Next add in entire can of pigeon peas (with the liquid -- DO NOT DRAIN) and 3 cups water, and bring to a boil. Once it boils, stir in 2 cups of rice, cover, reduce heat to low and simmer 20 minutes or until rice is tender.
