SAVORY TOMATO BEEF SOUP



Savory Tomato Beef Soup image

This is a nice slow cooker soup. I like soups and slow cooking is the best. I like having dinner waiting on me when I get home.

Number Of Ingredients 14

1 lb beef stew meat-cubed
2 Tbsp oil
4 c beef stock
28 oz tomatoes, canned and cut up-undrained
1 c sliced carrot
1 c chopped celery
1/4 c snipped celery leaves
1 tsp salt
1/2 tsp marjoram, dried-crushed
1/2 tsp basil, dried-crushed
1/4 tsp savory dried-crushed
1/4 tsp thyme, dried-crushed
1/8 tsp mace
several dash(es) hot pepper sauce

Steps:

  • 1. Trim fat from meat. Place oil and meat in skillet; brown meat and drain.
  • 2. Place browned meat in slow cooker. Stir in remaining ingredients.
  • 3. Cover and cook on low setting for 8 - 10 hours.
  • 4. Skim fat off of soup and stir soup well.

2 carrots small, thinly sliced (about 1 cup)
2 ribs celery chopped (about 3/4 cup)
1/2 cup onion finely chopped
2 tablespoons water plus 1 1/2 cups
1 (14 1/2-ounce) can tomato peeled cut up and juice reserved
1/2 cup macaroni uncooked
3 teaspoons beef bouillon
1/4 teaspoon Italian seasoning dried crushed
dash black pepper
1 bay leaf (optional)
1 (8 1/2-ounce) can garbanzo beans
1 cup roast beef lean cooked, cut in 1/4 -inch pieces

Steps:

  • * Cooking Time: 18 to 20 minutes Power: 100% (700 watts) 50% (350 watts) Standing Time: 5 minutes Place carrots, celery, onion and 2 tablespoons water in a 2 1/2-quart microwavable casserole. Cover with a glass lid or plastic wrap, turning one edge back. Microwave at 100% power (700 watts) for 8 to 9 minutes or until vegetables are almost tender.Add 1 1/2 cups water, tomatoes with juice, macaroni, bouillon granules. Italian herbs, pepper and, if desired, bay leaf. Re-cover and vent. Microwave at 100 % for 4 minutes or until mixture comes to a boil. Stir, then re-cover and vent. Reduce power and microwave at 50% power (350 watts) for 4 minutes.Stir in beans with liquid and meat. Re-cover and vent. Microwave at 50% power 2 to 3 minutes longer or until pasta is barely tender. Let stand, covered, for 5 minutes before serving to finish cooking pasta.

2 pounds ground beef
3 medium onions, chopped
1 garlic clove, minced
3 cans (10-1/2 ounces each) condensed beef broth, undiluted
1 can (28 ounces) diced tomatoes, undrained
3 cups water
1 cup each diced carrots and celery
1 cup fresh or frozen cut green beans
1 cup cubed peeled potatoes
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
1 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper to taste

Steps:

  • In a large skillet, cook beef and onions over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Transfer to a 5-qt. slow cooker. Stir in remaining ingredients. Cover and cook on low until vegetables are tender, 6-8 hours.

4 large potatoes, peeled and cubed
2 cups water
3 large carrots, sliced
1 large onion, chopped
Salt and pepper to taste
4 cups fresh or frozen cut green beans
4 cups tomato juice
1-1/2 pounds ground beef, cooked and drained
2 cups fresh or frozen corn
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
2 bay leaves

Steps:

  • In a large saucepan, combine the potatoes, water, carrots, onion, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 25 minutes or until tender. Add the remaining ingredients. , Cover and simmer 30 minutes longer or until heated through, stirring occasionally. Discard bay leaves.

1 pound beef stew meat, cut into 1/2-inch cubes
1 small meaty beef soup bone (beef shanks or short ribs)
2 tablespoons vegetable oil
4 cups water
1 can (28 ounces) diced tomatoes, undrained
1 cup chopped carrots
1 cup chopped celery
1/4 cup chopped celery leaves
1 tablespoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried basil
1/4 teaspoon dried savory
1/4 teaspoon dried thyme

Steps:
