Steps:
- Cook spinach according to package directions. Squeeze out as much liquid as possible.
- Mix all ingredients except english muffins.
- Toast or broil english muffins.
- Spread spinach mixture on english muffins.
- Bake 10 minutes at 350°F.
- Cut each english muffin half into quarters (or into 6).

SPINACH BITES
An appetizer I found on the Take Home Chef's website. Vegetarian and easy. Halve recipe if needed but use a smaller pan if you do.

Steps:
- Preheat oven to 350 degrees F. In a 9-inch x 13-inch cake pan, melt butter in the oven.
- In a large mixing bowl, beat eggs; add flour, milk, baking powder, salt, mustard, cayenne and chives. Blend well.
- Fold in cheese and spinach.
- Pour into pan on top of butter, and bake for 35 minutes or until almost set in center.
- Allow to sit for about 15 minutes; cut into bite-sized squares and serve warm.
- These may also be frozen after baking and reheated in 350-degree F oven for 15-20 minutes at serving time.
- Makes 10 dozen appetizers.

This cream cheese, spinach and Parmesan cheese dish is a very creamy and savory side dish!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a mixing bowl, combine cream cheese and milk; mix until blended. Spoon spinach into 1-quart casserole, top with cream cheese mixture and sprinkle with Parmesan cheese.
- Bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes.

SAVORY PUFF PASTRY SPINACH-AND-PESTO BITES
Steps:
- Heat oven to 375ºF.
- Unfold pastry sheet onto cutting board; cut into 12 squares. Press 1 pastry square onto bottom and up side of each of 12 muffin pan cups sprayed with cooking spray.
- Bake 12 to 14 min. or until pastry cups are puffed and golden brown. Meanwhile, mix cream cheese and feta until blended; set aside. Combine spinach, onions and pesto.
- Use rounded handle of wooden spoon to press indentation into center of each pastry cup, being careful to not press through to bottom of cup.
- Spoon cream cheese mixture into pastry cups; top with spinach mixture.
- Bake 7 to 10 min. or until heated through.

SAVORY SPINACH BITES
Compliments of The Curvy Carrot - a great yummy appetizer. I actually made these ahead of time for a camping trip -- skipped the dipping sauce and they were still amazing!

Steps:
- Preheat the oven to 350 degrees.
- In a large saute pan, over medium heat, melt the butter.
- Add the onion and cook until the onion is translucent & soft, about 5 minutes; then add garlic and cook for about 30 seconds. Remove pan from heat and let cool.
- In meantime, remove excess water from thawed spinach by pressing between paper towels (you do not need to cook the spinach).
- In a large bowl, combine the stuffing mix, spinach, eggs, Parmesan cheese, salt & pepper, and onion/garlic mixture. Combine well.
- Line a rimmed baking sheet with parchment paper.
- One at a time, using hands, roll mixture into individual 1" balls. Place each on partchment lined baking sheet.
- Bake the balls for 15-20 minutes or until very slightly browned.
- Dipping sauces: Marinara recommended but could use Ranch, sour cream, horseradhish, etc.
