5 large potatoes, peeled and diced
1/4 cup milk
1/2 teaspoon seasoning salt
3 tablespoons margarine
1 cup sour cream
3 ounces cream cheese, softened
1 teaspoon chives, dried
1/2 cup butter flavored cracker, crushed
1/4 cup cheddar cheese, shredded

Steps:

  • Cook potatoes in salted water until tender. Drain. Beat potatoes, milk, seasoned salt and two tablespoons margarine in a mixing bowl until fluffy.
  • Mix in sour cream, cream cheese and chives. Turn into buttered cassrole dish.
  • Combine remaining tablespoon of margarine with crushed cracker crumbs. Sprinkle on top of potato mixture.
  • Base for 30 minutes tin a 350 degree oven.
  • Top with shredded cheese during last 10 minutes of baking time.
  • This recipe can be prepared a day in advance.

I got this from the internet--from someone who got it from Southern Living. I made it for Thanksgiving and my family just about licked the bowl clean! Really delicious!

3 1/2 lbs baking potatoes, peeled and cut into 1 inch pieces
1 tablespoon salt, divided
1 (16 ounce) can sweet potatoes in syrup, drained & mashed
1 (8 ounce) package cream cheese, softened
6 slices bacon, cooked and crumbled
3/4 cup sour cream
2/3 cup chicken broth
1/2 teaspoon pepper
crumbled bacon, to garnish

Steps:

  • Bring potatoes, 1 teaspoon salt, and water to cover to a boil. Cook 30 minutes, or until tender. Drain.
  • Return potatoes to pan. Add sweet potatoes and cream cheese. Mush until smooth with potato masher. Stir in bacon, next 3 ingredients, remaining 2 teaspoons of salt.
  • Spoon mixture into lightly greased 11x7-inch baking dish. Bake uncovered at 350°F for 20 minutes.
  • Garnish with the rest of the bacon.

  • Cook the potatoes: Add potatoes to a large pot and cover with cold water. Bring to a boil and salt generously. Reduce heat to a simmer and cook until potatoes are fork-tender, about 10 minutes. Drain very well.
  • Release all steam: Place potatoes back in the pot and set over lowest heat for 30-60 seconds, shaking the pot every 5-10 seconds. Allow them to get really dry, but don't burn them! Alternatively, just let them sit in the colander for 2 minutes. Do not cool them any longer than this.
  • Mash: Add milk, butter, salt, pepper and nutmeg to potatoes in pot. Mash using a potato masher. Add a splash more milk if potatoes seem dry, but be careful: Adding too much milk will turn your creamy mashed potatoes into a gloopy, runny mess!
  • Serve: Dot with a little additional butter and sprinkle with fresh parsley or chives, if you like. Serve immediately.
