SAVORY MARINATED FLANK STEAK

- In a shallow dish, combine the first 7 ingredients; add the steak and turn to coat. Cover; refrigerate for 6 hours or overnight., Drain and discard marinade. lightly oil the grill rack. Grill steak, covered, over medium heat or broil 4 in. from heat for 6-8 minutes on each side or until steak reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., To serve, thinly slice across the grain.

GRILLED FLANK STEAK WITH SAVORY SECRET SAUCE
Steps:
- Place a medium saute pan over medium-low heat. Add the butter and olive oil. Once the butter has melted, add the anchovies and saute until they start to break down, about 1 minute. Add the oregano, crushed red pepper and garlic and saute for 2 to 3 minutes to allow the anchovies to completely break down and the garlic to cook. Take the pan off the heat and allow to cool for 2 to 3 minutes. Stir in the lemon juice and parsley. Taste and season with salt and pepper if desired.
- Heat a grill or grill pan to medium-high heat. Season both sides of the flank steak with a generous amount of salt and pepper. Brush the grill grates or grill pan with the canola oil. Grill the steak for 3 to 4 minutes per side for medium rare. Let rest for 5 minutes before slicing. Slice and top with the sauce.

Steps:
- Trim fat from steak and ccut into serving size pieces.
- Sprinkle with pepper, and place in a 5-6 quart slow cooker sprayed with vegetable cooking spray.
- Place onion slices over steaks.
- Combine mushroom soup, and salsa and mix well. Spoon over steak and onions.
- Cover and cook on low for 7-8 hours.
SAVORY FLANK STEAK
This is another recipe from my old church cookbook. I like this because of the flavors of ginger, garlic and soy sauce and because (to me) it's good hot or even room temperature.

Steps:
- Slice flank steak diagonally across the grain 1/4 inch thick; every other slice should not be cut quite through.
- Open up each double piece and lay flat, butterfly fashion.
- Combine soy sauce, egg, sugar, garlic and ginger in bowl.
- Marinate meat 10 minutes.
- Combine panko, flour and sesame seeds in a separate bowl.
- Coat meat with dry mixture.
- Drop into hot oil and fry until lightly browned.
- NOTE: Partially freeze the flank steak for easier slicing.

- Score flank steak with a knife diagonally on both sides. This just means to run a sharp knife through it in the pattern below. You don’t want to actually cut through the steak, just about 1/8″ deep. This will help tenderize the meat.
- Place steak in large ziploc bag and pour marinade (excluding the 1/4 cup you set aside) over it. Refrigerate 8 hours or overnight. Take out of fridge 30 minutes before grilling.
- Preheat grill to medium heat. When hot, place steak on grill and cook for 5-10 minutes per side, depending on the size. Use the 1/4 cup marinade you set aside to brush over steak in the last few minutes of grilling. Flank steak should still be pink in the middle when done.
