Pantry items combined with leftover chicken create a filling pot pie - the hardest part of the recipe is waiting for it to bake!

1 (10.75-oz) can condensed cream of chicken soup
1 cup chicken broth
1 3/4 cups chicken (leftover, roasted)
1 1/4 cups frozen mixed vegetables
1 1/2 cups instant biscuit mix
1 cup whole milk
1/2 stick butter, melted
kosher salt, to taste
black pepper, to taste

Steps:

  • Preheat oven to 350 °F. Spray a 2-quart baking pan with non stick spray.
  • Add the soup, chicken broth and a pinch of salt and pepper to the bottom of the casserole dish and whisk together until smooth. Add the chicken and vegetables.
  • In a separate bowl, whisk together the biscuit mix and whole milk.
  • Pour biscuit mix over top of casserole. Drizzle melted butter over the top.
  • Bake for 35 minutes, until golden brown on top.

LOL I know there are quite a few good chicken pot pie recipes out there, but when I have the time, I love to roast this chicken and make this home-made pie crust. Otherwise, using a store-bought chicken and pie crust works just fine. From Food Network. Hope you enjoy! UPDATE: I meant to correct the measurements of the crust, I have done so now. 3 whole carrots, peeled and chopped
2 vidalia onions, quartered
1 (3 lb) whole chickens
1/8 cup kosher salt, can use more if needed
fresh ground black pepper
1/2 cup butter, softened
2 sprigs fresh rosemary
2 sprigs fresh sage
1 cup sliced carrot
4 red potatoes, sliced thin
3/4 cup corn
1/2 cup peas
2 1/2 cups heavy cream
1/2 cup all-purpose flour
3 cups all-purpose flour, plus more for work surface
1/2 tablespoon salt
1 tablespoon sugar
1 1/2 cups vegetable shortening
1/2 cup ice cold water
1/2 cup butter, melted

Steps:

  • For the chicken:.
  • Preheat oven to 350 degrees F.
  • Stuff onions and carrots into the cavity of the chicken. Rub salt, black pepper and butter into skin of chicken. Place rosemary sprigs under the skin and place into a roasting pan. Place sage on top of chicken and roast for 1 1/2 hours.
  • Remove the chicken from the oven. Transfer to a cutting board and allow to cool.
  • For the filling:.
  • Place carrots and potatoes on sheet pan and season with salt and pepper. Place into the preheated oven and roast until caramelized.
  • When chicken has cooled, discard the onions, carrots, sage and rosemary.
  • Pull the chicken meat off the bones and cut into 1/2-inch pieces.
  • Place into a large bowl with chicken juice from roasting pan along with potatoes, carrots, peas, corn, heavy cream and flour.
  • Mix together well. *Cook's Note: Filling will be thick.
  • For the crust:.
  • Knead all ingredients together in a large bowl, slowly adding the water.
  • Divide into 2 pieces and roll out on a lightly floured work surface. One will be the bottom crust, the other the top.
  • Place 1 piece of dough into the bottom of a 9-inch pie dish. Add filling and top with the other piece of dough.
  • Crimp the edges together with a spoon or a fork.
  • Brush the top crust with melted butter and bake in the preheated oven for 50 minutes.

1 cup finely chopped onions
1 cup finely chopped carrots
1 1/2 tablespoons all-purpose flour

1 1/2 cups cooked and coarsely chopped boneless
1 1/2 cups frozen peas
1/2 teaspoon celery salt
Pastry
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/4 cup canola oil
3 to 5 tablespoons ice-cold water

Steps:

  • 1. Preheat the oven to 375°. Lightly spray a 9-inch pie plate with cooking spray.
  • 2. To make the filling: In a large skillet, heat the oil over medium heat. Add the onions and carrots and cook until softened, about 5 minutes. Add the flour and cook, stirring, for 30 seconds. Slowly whisk in the chicken broth and milk. Simmer until slightly thickened, about 5 minutes. Whisk in the Cheddar until melted, then stir in the chicken, peas and celery salt. Scrape the filling into the prepared pie plate.
  • 3. To make the pastry: In a small bowl, whisk together the flour and salt. Mix in the oil with a fork. Knead in enough water until the crust just holds together. On a lightly floured surface, roll out the dough to a 10-inch circle. Drape the crust over the filling in the pie plate and tuck in the sides. Cut two vents in the top of the crust and bake for about 30 minutes, or until the crust is golden and the filling is bubbling.
  • Easy Does It: The secret to a flaky, tender crust is not overworking the dough. Be sure you knead the dough only until the crust just holds together. If you're gonna go to the trouble of making it from scratch, you want to make sure it delivers the goods!

1 (5 lb) whole chicken
1/4 cup plus 2 tablespoons salt

1 stick softened, plus 1/2 cup melted unsalted butter
2 sprigs fresh rosemary
2 sprigs fresh sage
4 sliced thin red potatoes
3/4 cup corn
1/2 cup peas
2 1/2 cups heavy cream
3 1/2 cups divided, plus more for work surface all purpose flour
1 tablespoon sugar
1 1/2 cups vegetable shortening
2 cups cold water

Steps:

  • For the chicken:
  • Preheat oven to 350 °F.

3 tablespoons olive oil, divided

1 pound potatoes (about 2 medium), peeled and cut into 1-inch cubes
3 medium carrots, cut into 1-inch pieces
8 fresh mushrooms, quartered
2 celery ribs, cut into 1-inch pieces
1 leek, cut into 1/2-inch slices
24 frozen pearl onions
2 garlic cloves, minced
2 tablespoons minced fresh parsley
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon dried sage
1 cup frozen peas
1 jar (2 ounces) diced pimientos, drained
1/4 cup butter, cubed
6 tablespoons all-purpose flour
4 cups chicken broth
1 package (17.3 ounces) frozen puff pastry, thawed
1 egg yolk
1/2 cup heavy whipping cream

Steps:

  • Preheat oven to 375°. Rub chicken with 1 tablespoon olive oil and season with salt and pepper to taste; transfer to a shallow roasting pan. In a large bowl, toss potatoes, carrots, mushrooms, celery, leek, onions and garlic with herbs and remaining oil; place around chicken., Bake, uncovered, 1 hour or until chicken juices run clear and vegetables are tender. Remove chicken from pan to cool. Remove vegetables with a slotted spoon to a large bowl; add peas and pimientos. Pour drippings and loosened browned bits from roasting pan into a measuring cup. Skim fat, reserving 2 tablespoons fat., Increase oven setting to 400°. In a large saucepan, melt butter with reserved fat over medium heat. Stir in flour until blended. Gradually whisk in broth and cooking juices. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir into vegetables., Remove chicken from bones; discard skin and bones. Cut chicken into 3/4-in. pieces; stir into gravy mixture. Divide among four 12-oz. ovenproof bowls or place in a 2-qt. baking dish., Unfold puff pastry. Roll to 1/8-in. thickness; cut out four circles to fit ramekins. Place dough over chicken mixture, pressing to seal edges. In a small bowl, whisk egg yolk with cream; brush over pastry. Place potpies on a baking sheet. Bake 20-25 minutes or until lightly browned.

7 tablespoons unsalted butter, divided
5 medium leeks (white and pale green parts only), chopped
1 medium onion, chopped
3 stalks celery, chopped, divided
2 cloves garlic, minced
8 cups low-sodium chicken broth
8 small Yukon Gold potatoes, chopped
2 large bay leaves
¼ teaspoon ground white pepper
1 pinch salt, or to taste
1 pinch dried thyme, or to taste
1 pinch dried sage, or to taste
1 pinch dried rosemary, or to taste
¾ cup heavy cream
4 medium carrots, sliced
½ cup frozen peas
4 cups diced cooked chicken breast
1 large egg, beaten
1 tablespoon water
1 (17.5 ounce) package frozen puff pastry, thawed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with foil. Lightly grease six 12-ounce oven-safe ramekins and place on the baking sheet for easy cleanup.
  • Melt 4 tablespoons butter in a pot over medium-low heat. Add leeks, onion, 1/3 of the chopped celery, and garlic; saute until tender, about 5 minutes. Add broth, potatoes, and bay leaves. Season with pepper, salt, thyme, sage, and rosemary; bring to a boil. Reduce heat, cover, and simmer for at least 25 minutes.
  • Remove bay leaves. Use an immersion blender to emulsify the liquid.
  • Slowly stir in heavy cream. Add remaining 3 tablespoons butter with carrots, peas, and remaining celery. Stir in chicken. Cover and simmer for about 15 minutes.
  • Mix egg and water together and set aside for egg wash.
  • Roll puff pastry out slightly. Flip one of the prepared ramekins upside-down on the pastry; cut out circles 1/2 inch larger than the ramekin.
  • Fill each ramekin 3/4 full with the chicken mixture; do not fill to the top or it will make a mess in your oven. Place cut rounds of puff pastry over the tops and press around the edges to seal. Brush egg wash over each. Be sure to put a few knife slits on top of each pie to allow to vent.
  • Bake in the preheated oven until the pastry is a golden brown, about 30 minutes. Let cool at room temperature for 10 to 12 minutes before serving.

1 chicken whole (i used 3 large breasts bone on , skin on)
1/2 sweet onion sliced thin
3 clove garlic, sliced
10 sage leaves, fresh
3 or 4 rosemary sprigs, fresh
salt and pepper
1/2 sweet onion cut into wedges
3 whole carrots peeled & chopped
6 small (or 3 large) potatoes peeled & diced
olive oil
1 can(s) corn
1 can(s) peas
2 1/2 c heavy cream
1/2 c flour
2 9" pie crusts uncooked
2 Tbsp butter, melted

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Chicken: Place rosemary sprigs, onion slices, garlic slices, and sage under the skin and place into a roasting pan. Salt and pepper the skin. Bake 45 minutes (or longer if using a whole chicken) or until the chicken is done. Remove the chicken from the oven and cool.
  • 3. Roast carrots, onion wedges & potatoes drizzled with olive oil. (I put them on a sheet pan and put an oven rack above my chicken and cooked them both at the same time.) Roast until tender- 30 minutes or so.
  • 4. When chicken has cooled, pour the 'juices ' from the pan into your bowl. Pull the meat from the bones and chop into bite sized pieces. Discard the herbs. Add potatoes, carrots, peas, corn, heavy cream and flour. *** OR you can make a white cream gravy instead of the heavy cream and flour mixture.*** Mix together well. Salt and pepper to taste.
  • 5. Pour into the pie crust and top with the other piece of dough. Crimp the edges together with a fork. Brush the top crust with melted butter. Cut a small vent in the top. Bake in the preheated oven (350)for 50 minutes.
  • 6. NOTE*** You could easily do this with left over chicken, rotisserie chicken or left over turkey meat from the holidays.

2 -4 sheets frozen puff pastry (her original recipe called for 4, I felt 2 was plenty)
1 egg, beaten
4 chicken breast halves (or 2 cups leftover cooked chicken)
2 tablespoons cooking oil
1/3 cup butter
2/3 cup all-purpose flour (or less ( see chef's note in directions)
1 quart milk (Paula's recipe called for cream)
1/4 cup chicken base (or less ( see chef's note in directions)
1 tablespoon minced garlic
1/2 small yellow onion, minced
1 cup frozen green pea, cooked
1 cup chopped cooked carrot
1 pinch fresh grated nutmeg (optional)

Steps:

  • For Crust: Preheat oven to 350°F Cover large cookie sheet with parchment paper. Cut each sheet of frozen puff pastry into 1-inch strips long enough to cover each pie. On cookie sheet, weave strips into squares. (I made one large square to cover 8x8 casserole with pieces close together. As a result, it didn't cook all the way through in the center.) Brush beaten egg onto each lattice square.
  • Bake for 15-18 minutes, or until pastry has risen and is a nice golden brown. (It should be cooked through at this stage). Set aside until ready to assemble pies.
  • For Filling: Heat oil in a large skillet over medium-high heat. Add chicken and sauté until cooked through. Remove from heat and cut into chunks.
  • In a large saucepan melt butter and then slowly add flour, stirring until consistency of peanut butter, but do not brown like a roux. NOTE: You may not need all of the flour--stop with it is the right consistency--it may only take 1/4 cup. Slowly add cream and keep stirring.
  • Add chicken base (NOTE: here again you may not want to use all 1/4 cup--it may be too salty so use caution), garlic, and onion and stir until thickened.
  • Add cooked peas and carrots, nutmeg, if using, and cut up chicken. Remove from heat.
  • To serve fill 4 individual oven-proof bowls with chicken mixture and then top each with a pre-cooked lattice square.
