Savory Broccoli Spears image

Cooking broccoli in broth and soy sauce gives spark to an otherwise ordinary vegetable. The toasted almonds add a pleasant crunch.

2 tablespoons slivered or sliced almonds
2 tablespoons butter
1 pound fresh broccoli, cut into spears
1/3 cup chicken broth or water
2 teaspoons soy sauce
1/8 teaspoon pepper

Steps:

  • In a skillet, saute almonds in butter until golden brown. Remove; set aside. Add remaining ingredients to skillet. Cover; cook over medium heat for 8-10 minutes or until broccoli is crisp-tender. Sprinkle with almonds.

1 stalk celery, sliced thin
1 bunch broccoli floret, chopped coarsely
1 medium onion, finely chopped
1 small parsnip, peeled and sliced
1 large russet potato, peeled and sliced
4 cups fat-free vegetable broth or 4 cups chicken broth
salt and pepper

Steps:

  • Bring all ingredients to a boil in a large saucepan.
  • Reduce heat and simmer 15- 20 minutes, until veggies are tender.
  • Let cool for 10 minutes.
  • Puree in blender until very smooth.

  • Melt the butter in a large Dutch oven or stockpot over medium-high heat. Add the onion and carrots, and cook until the onions are translucent (approximately 5 minutes). Add the garlic and cook for an additional 30-60 seconds. Add the flour and stir to coat. Continue cooking for approximately 3 minutes, stirring periodically, to cook out the flour taste.
  • Stir in 1 teaspoon of salt, the stock and half-and-half. Bring to a simmer and cook until the soup has thickened, about 10 minutes. Add the broccoli and simmer until crisp-tender, about 5 minutes. Remove from the heat.
  • Add 1 teaspoon of pepper and sprinkle in cheese by the handful, stirring. Allow the cheese to melt before adding more.
