Yield Makes about 36 hors d’oeuvres

Number Of Ingredients 8

1 cup Sauternes or other white dessert wine
1/2 cup sugar
1 1/2 teaspoons unflavored gelatin (from a 1/4-ounce envelope)
2 tablespoons water
1 (1-inch-thick) slice of foie gras terrine (6 ounces; not páté or mousse) or a 6 1/2-ounces block
6 (1/2-inch-thick) slices firm white bread (pullman loaf or firm sandwich bread)
1 1/2 tablespoons unsalted butter, melted
Equipment: a small offset spatula

Steps:

  • Lightly oil a shallow 8-inch square baking dish or pan and line bottom and sides with a sheet of plastic wrap.
  • Bring Sauternes and sugar to a boil in a small heavy saucepan, stirring until sugar has dissolved.
  • Meanwhile, sprinkle gelatin over water in a small bowl and let soften 1 minute. Pour hot wine over gelatin mixture, then stir until gelatin has dissolved. Cool to room temperature.
  • Pour wine-gelatin mixture into lined dish and chill, covered, until set, at least 4 hours.
  • Lift gelée out of dish using plastic wrap and transfer to a cutting board. Cut gelée into 3/4-inch squares (without cutting through plastic).
  • Cut foie gras into 1-inch squares (about 1/4 inch thick). Transfer squares with offset spatula to a tray lined with plastic wrap, then top each with a square of gelée (you will have extra gelée). Chill, covered with plastic wrap, until ready to serve.
  • Preheat oven to 450°F with rack in upper third.
  • Trim crusts from bread, then brush with butter and cut 6 (1 1/4-inch) squares from each slice. Arrange in a 4-sided sheet pan and bake until golden, about 6 minutes.
  • Top toasts with foie-gras-and-gelée stacks.

SAUTERNES AND SAGE JELLY

Sauternes and Sage Jelly image

We ran many jelly recipes in the 1940s, but this one impressed us the most. Sophisticated and subtle, it makes a light, delicious alternative not only to the shocking-green mint jelly that often accompanies lamb but even to gravy: Try it with any roasted or grilled meat. It's also an indispensable condiment for blue cheese.

Time P1D

Yield Makes about 2 cups

Number Of Ingredients 9

1/2 cup boiling-hot water
2 tablespoons chopped fresh sage
Pinch of turmeric (for yellow color; optional)
1 1/2 cups Sauternes (from a 375-ml bottle)
3 1/2 cups sugar
1/8 teaspoon salt
1 Turkish or 1/2 California bay leaf
1/2 cup liquid fruit pectin
4 (1/2-pint) canning jars with lids and screw bands; an instant-read thermometer

Steps:

  • Wash jars, lids, and screw bands in hot soapy water, then rinse well. Dry screw bands. Put empty jars on a rack in a boiling-water canner or an 8- to 10-quart deep pot and add enough water to cover by 2 inches. Bring to a boil, covered, then boil 10 minutes. Remove canner from heat, leaving jars in water. Heat lids in water to cover by 2 inches in a small saucepan until thermometer registers 180°F (do not let boil). Remove from heat. Keep jars and lids submerged in hot water, covered, until ready to use.
  • Pour 1/2 cup boiling-hot water over sage and turmeric in a cup and let steep, covered, 15 minutes. Pour sage water through a fine-mesh sieve into a bowl, pressing on solids, then add enough extra water to bring total to 1/2 cup.
  • Carefully remove jars with tongs, then drain jars upside down on a clean kitchen towel.
  • Bring sage water, Sauternes, sugar, salt, and bay leaf to a boil in a 2- to 2 1/2-quart heavy saucepan. Whisk in pectin until dissolved and bring to a boil. Boil 1 minute, then remove from heat. Invert jars. Immediately divide jelly among jars, leaving 1/4 inch of space at top. Wipe off rims of filled jars with a clean damp kitchen towel, then top with lids and firmly screw on screw bands.
  • Put sealed jars on rack in canner or deep pot and add enough water to cover by 2 inches. Bring to a boil, covered, then boil 10 minutes. Transfer jars with tongs to a towel-lined surface to cool. Jars will seal; if you hear a ping, that means that the vacuum formed above the cooling jelly has made the lid concave. Remember that you may or may not be around to hear the ping. The important thing is for the jars to eventually have concave lids. Jelly will thicken as it cools.
  • After jars have cooled 12 to 24 hours, press center of each lid to check that it's concave, then remove screw band and try to lift off lid with your fingertips. If you can't, the lid has a good seal. Replace screw band. Put any jars that haven't sealed properly in the refrigerator and use them first.

APPLE CIDER & SAGE JELLY

Apple Cider & Sage Jelly image

Here's a good way to use up your garden sage at summer's end. If you prefer a sweeter jelly, switch out the apple cider vinegar with apple cider. I think this will make a fantastic turkey or ham glaze! One of the recipes I adapted my recipe from said you could use 4 tbs dried sage in place of the fresh sage, but I have not...

Categories     Jams & Jellies

Time 40m

Number Of Ingredients 10

1 c fresh sage leaves, loosely packed
8 well-formed sage leaves, medium size
1 c boiling water
1 c apple cider
1/2 c apple cider vinegar
1/4 c lemon juice
4 1/2 c sugar
2 packages liquid pectin
2 drops food coloring, green
4 drops food coloring, yellow

Steps:

  • 1. Prepare jars and rings. Keep jars hot.
  • 2. Set aside well-formed sage leaves. Place packed leaves in a large, nonreactive saucepan. Pour boiling water over the top. Simmer for approximately 10 minutes. You should have 1/2 cup liquid remaining.
  • 3. Pour water through a sieve and discard sage leaves. If any sediment remains, restrain through cheesecloth. Return to saucepan. Add cider, vinegar, lemon juice and food coloring. Stir to combine. Bring to a hard boil.
  • 4. Add sugar all at once. Stir to dissolve. Continue to stir until mixture reaches a hard boil that cannot be stirred down.
  • 5. Quickly add pectin all at once. Continue to stir until mixture reaches a hard boil that cannot be stirred down. Boil for one minute. Remove from heat. Skip foam if necessary.
  • 6. Add one or two fresh sage leaves to the bottom of each jar. Fill, wipe rims with a damp paper towel, add lids and seal to finger-tip tightness.
  • 7. Process for 15 minutes in water bath. (I'm using my vintage Conservo, made in 1928!). Remove to a clean, cloth towel away from direct sun. Let rest for 12 hours. Test seal. Refrigerate or reprocess any jars that did not seal. Store in a dark cupboard. Will keep for 1 year.
