Balsamic-Parmesan Sautéed Spinach image

Tender spinach with a hint of garlic, Parmesan cheese and sweet balsamic vinegar makes a quick and flavorful side dish. The sturdy leaves of mature spinach hold up best during cooking.

2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
1 pound fresh spinach
¼ teaspoon salt
¼ teaspoon ground pepper
2 tablespoons grated Parmesan cheese
4 teaspoons good-quality balsamic vinegar or balsamic glaze

Steps:

  • Heat oil in a large pot over medium heat. Add garlic and cook, stirring, until fragrant, 30 seconds to 1 minute. Add spinach, salt and pepper; toss to coat. Cook, stirring, until just wilted, 3 to 5 minutes. Remove from heat and stir in Parmesan. Drizzle with vinegar (or glaze) and serve immediately.

2 tablespoons extra-virgin olive oil
1 clove garlic, peeled and minced
2 bunches fresh spinach, stems removed
Coarse salt
2 teaspoons balsamic vinegar

Steps:

  • In a large skillet, heat olive oil over medium-high heat. Add garlic; saute until it just begins to take on color, about 30 seconds. Add spinach, and toss well, coating with oil.
  • Cook the spinach, tossing frequently, until the leaves turn bright green and have slightly wilted, about 2 minutes. Season spinach with salt, and drizzle the balsamic vinegar over the spinach; serve immediately.

2 cloves garlic, cut into slivers
1 1/2 tablespoons olive oil

  • Add spinach and coat with oil and to heat through.
  • Put spinach in serving bowl and drizzle with balsamic vinegar.

3 slices bacon, roughly chopped
3 garlic cloves, sliced
2 bunches spinach, well washed and tough stems discarded
2 tablespoons balsamic vinegar
Salt and freshly ground black pepper

Steps:

  • Heat a medium skillet over medium high heat. Add the chopped bacon and render until almost crisp. Add garlic and cook until fragrant. Add the spinach a little at a time. Toss with tongs until wilted. Add balsamic vinegar. Season with salt and pepper.

2 lbs fresh spinach, washed
1/2 tablespoon butter or 1/2 tablespoon margarine, melted
2 teaspoons balsamic vinegar (dark or white)
salt and pepper

Steps:

  • Cook spinach with water that clings to it 3-5 minutes or until leaves begin to wilt.
  • Remove from heat and drain thoroughly.
  • Season with salt and pepper to taste.
  • Combine melted butter (margarine) and vinegar.
  • Mix in butter and vinegar just before serving.
