PORK CHOPS IN GARLIC MUSHROOM SAUCE

This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.

2 pounds boneless pork chops
½ teaspoon paprika
1 pinch kosher salt and ground black pepper to taste
¼ cup butter, divided
1 (8 ounce) package sliced fresh mushrooms
4 cloves garlic, minced
1 teaspoon Dijon mustard
2 tablespoons all-purpose flour
2 cups beef broth

Steps:

  • Season both sides of pork chops with paprika, salt, and pepper.
  • Heat a large skillet over medium-high heat; add 2 tablespoons butter. Sear pork chops until golden brown and no longer pink in the center, 2 to 4 minutes per side. Remove pork chops from the skillet and set aside.
  • Melt remaining butter in the same skillet over medium-high heat. Add mushrooms and cook until golden and excess moisture evaporates, about 5 minutes. Add garlic and mustard; cook until garlic is fragrant, about 1 minute.
  • Add flour to the skillet, stirring to remove any lumps. Slowly add beef broth, whisking until incorporated. Season with salt and pepper. Reduce heat to medium and simmer, stirring often, until sauce thickens, about 5 minutes. Check for seasoning again.
  • Return pork chops to the skillet and cook until heated through, about 1 minute. Serve hot.

1 large egg, lightly beaten
1 cup seasoned bread crumbs
8 thin boneless pork loin chops (2 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil
1 tablespoon butter
1/2 pound sliced fresh mushrooms
2 garlic cloves, minced
2 teaspoons grated lemon zest
1 tablespoon lemon juice
Lemon wedges, optional

Steps:

  • Place egg and bread crumbs in separate shallow bowls. Sprinkle pork chops with salt and pepper; dip in egg, then coat with crumbs, pressing to adhere., In a large skillet, heat oil over medium heat. In batches, cook pork until golden brown, 2-3 minutes per side. Remove from pan; keep warm., Wipe pan clean. In skillet, heat butter over medium heat; saute mushrooms until tender, 2-3 minutes. Stir in garlic, lemon zest and lemon juice; cook and stir 1 minute. Serve over pork. If desired, serve with lemon wedges.

2 teaspoons olive oil
1 tablespoon butter
4 boneless pork chops, 1/4 - 1/2 inch thick
salt and pepper
1/4 cup all-purpose flour
1 lemon
4 ounces sliced mushrooms
3 garlic cloves
1/2 low sodium chicken broth

Steps:

  • In a large skillet, heat the olive oil and butter over medium-high heat.
  • Season the pork chops with salt and pepper. On a plate, place the flour and then zest the lemon over the flour and place the lemon aside. Coat each pork chop with the flour-zest mixture on both sides and place into the hot skillet and cover with a splatter screen. Cook for about 2-3 minutes depending on thickness. Repeat on the other side and then place the chops on a plate.
  • Reduce heat to medium-low. Add the mushrooms to the pan and allow to saute for 2 minutes. Add the garlic, saute for 30 seconds.
  • Increase the heat to medium and add the chicken broth and scrap the bottom of the pan. When the liquid is reduced by about half, add the pork back into the pan. Cut the lemon in half, juice half of the lemon and gently add the juice to the pan. Cut the remaining half of the lemon into slices, toss them into the pan and cook for another minute or so. Serve hot.

Comfort food anyone? Try this one! It is a real great way to serve a pork chop and we like it with mashed potatoes as the gravy is so good! I garnish with 1/2 tomato with a sprinkle of olive oil and 1/2 tsp. of fresh shredded Basil, it is optional.

4 pork chops, 1/2 to 3/4 inch thick
1 cup flour
2 eggs, beaten
1 cup breadcrumbs
2 tablespoons corn oil
1 tomatoes, cut into wedges
2 tablespoons butter
1/2 lb mushroom, sliced and washed
2 tablespoons flour
2 tablespoons horseradish
1 cup chicken stock
salt & pepper

Steps:

  • Preheat oven to 375°F.
  • Remove some of the fat from the pork chops, season them with salt and pepper and dip them one at a time in the flour.
  • Then dip the floured pork chops first in the beaten eggs, then in the bread crumbs.
  • Place the oil in an ovenproof frying pan over medium heat.
  • When the oil is hot, add the pork chops.
  • Cook them on both sides for 2 minutes.
  • Then place the frying pan in the oven for approximately 10 minutes.
  • Do not cover.
  • Remove the pork chops from the pan and put them on a service platter.
  • Add the butter to your pan and place it over medium heat on top of the stove.
  • When the butter is melted, add the mushrooms.
  • Saute the mushrooms for 2-3 minutes, seasoning to taste.
  • Add the flour and the horseradish, mix well together, then add the chicken stock.
  • Continue to taste and serve the pork chops with the sauce.
  • Garnish with tomato slices.

1 tablespoon olive oil
4 bone-in pork loin chops (8 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium lemon
GARLIC SPINACH:
1 tablespoon olive oil
3 garlic cloves, thinly sliced
2 packages (5 ounces each) fresh spinach, stems removed
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 teaspoon lemon juice

Steps:

  • In a large skillet, heat oil over medium-high heat. Sprinkle pork chops with salt and pepper; add to skillet. Saute until a thermometer reads 145°, about 5 minutes per side. Remove to a serving platter; squeeze juice from lemon over chops. Tent with foil; let stand at least 5 minutes before serving., For garlic spinach, heat oil over medium-high heat in same skillet. Add garlic; cook until it just begins to brown, about 45 seconds. Add spinach; cook and stir just until wilted, 2-3 minutes. Sprinkle with salt and pepper. Remove from heat; add lemon juice. Transfer to serving platter. Remove foil from pork; serve spinach with chops.
