1 cup sliced zucchini
1 cup sliced yellow summer squash
2 tablespoons finely chopped onion
1/2 teaspoon olive oil
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/8 teaspoon salt
Dash garlic powder
Dash pepper

Steps:

  • In a large skillet, saute the zucchini, squash and onion in oil for 4-6 minutes or until crisp-tender. Add the remaining ingredients; cook 1 minute longer.

A combination Crookneck Squash, Sweet Onions, Serrano Peppers, Garlic and Fresh Baby Spinach served over Egg noodles.

3 tablespoons extra virgin olive oil
1 cup maui onion (Sliced Thin)
2 serrano peppers (Small Diced)
1 lb crookneck yellow squash (Sliced-Half Moon)
1/4 cup Chardonnay wine (Barefoot Celllars)
2 tablespoons minced garlic cloves (Split)
16 ounces Baby Spinach
1 lemon (4-Wedges)
1/2 teaspoon fine sea salt
1/2 teaspoon black pepper (Fine)
16 ounces egg noodles (Blanched)
1/2 cup Italian parsley (Chopped)
1/2 cup small caper (Drained)

Steps:

  • Place 1-tablespoon olive oil in a hot saute pan. Add 1-tablespoon garlic and saute for a minute. Add baby spinach, sea salt, black pepper, 3-lemon wedges juiced and saute until spinach wilts.
  • Heat a large saute pan with olive oil. Add onions, serrano pepper, crookneck squash and garlic. Season with salt and pepper. Saute for 2-3 minutes. Add Chardonnay wine and reduce by half.
  • Place egg noodles is salted water and finish cooking.
  • Drain noodles and place in a large bowl. Add spinach, parsley and capers. lemon juice and toss. Season with salt and pepper to taste. Place in warm bowls and serve.
  • Garnish with fresh Italian Parsley.

Halfway through preparing this recipe I discovered I didn't have enough chevre, and substituted with some locally made cream cheese. Best if the cream cheese is at room temperature or it can be whipped.

2 lbs summer squash, unpeeled (zucchini, yellow or crookneck squash, pattypan, etc.)
1 tablespoon kosher salt, plus more for sprinkling (I used French grey salt instead)
2 tablespoons olive oil, divided
2 teaspoons olive oil, divided
2 shallots, sliced
2 garlic cloves, minced
1/4 teaspoon smoked paprika, plus more for sprinkling
1/2 lb tomatoes, chopped (I used a variety of heirloom tomatoes from the farmer's market-the very small ones I left whole)
4 ounces soft fresh goat cheese (chevre, for example)
1/4 cup loosely packed chiffonade basil, plus more for garnish
4 eggs
fresh cracked black pepper

Steps:

  • VERSION #1: Trim the ends off the squash and grate using a box grater or a food processor with the grating attachment. Combine with 1 tablespoon salt in a colander and let drain in the sink for 30 minutes. Squeeze as much liquid as possible from the grated squash. Add the squash to the skillet along with the tomatoes. Cook, stirring occasionally, until the mixture is tender and no longer releasing liquid, about 10 minutes. Proceed with recipe in Step #3.
  • VERSION #2 (my change): Trim the ends off the squash. Dice the [unpeeled] summer squash into 1/2" cubes. Cut the zucchini and crookneck into 1" slices. In a skillet, heat 2 tablespoons olive oil over medium heat. Add the diced summer squash to the pan and saute until lightly browned, about 5 minutes. Next add the shallots, garlic, and paprika and cook, stirring, until just tender and fragrant. Reduce heat to medium-low then stir in the tomatoes. Cook, stirring occasionally, until the mixture is tender and no longer releasing liquid, about 8-10 minutes. If mixture starts to dry out too much, reduce heat. Proceed with recipe in Step #3.
  • Remove skillet from heat and stir in 1/4 cup of the basil.
  • Smooth the mixture evenly in the skillet and make four wells using the back of a spoon. Pour 1/2 teaspoon olive oil in each well. One at a time, crack an egg into a small bowl and pour into one of the wells. Sprinkle salt, pepper, and paprika over each egg. Arrange small bits of the chevre around and in between the eggs.
  • Cover and cook over low-medium heat until egg whites are set and yolks are still soft, about 10 minutes. I checked the eggs after 5 minutes, then cooked them another 2 minutes for our preference.
  • Garnish eggs with basil and serve with crusty bread. A simple green salad and lightly seasoned black beans made the meal complete. I threw together a quick arugula salad. You could also serve the squash and eggs over raw greens as a suggestion.

STUFFED CROOKNECK SQUASH

4 small crookneck yellow squash (3 to 4 ounces each)
1 small onion
1/2 cup cashews
2 tablespoons butter
1/2 cup dry seasoned bread crumbs

Steps:

  • Cut the crookneck squash in half lengthwise. Place them in a shallow ceramic or tempered glass baking dish, cover tightly with microwave-safe plastic wrap and cook on High for 3 to 4 minutes, until fork tender.
  • While the squash is cooking, coarsely chop the onion and the cashews. Melt the butter in a medium frying pan. Add the onion and cook over medium heat, stirring occasionally, until the onion is translucent, 2 to 3 minutes. Preheat the broiler.
  • Remove the squash from the microwave. With a spoon, scoop out some of the centers, being careful to leave a 1/8-inch thick shell. Chop the removed squash and stir into the onion along with the cashews and 1/4 cup of the bread crumbs.
  • Fill the squash shells with the stuffing mixture. Sprinkle the remaining bread crumbs on top. Place the stuffed squash on a broiler pan and broil about 4 inches from the heat, until golden brown on top, 2 to 3 minutes.

1/2 cup American cheese, grated

Steps:

  • Cook squash with onion until tender in a very little salted, boiling water.
  • Mix the American cheese and eggs into a white sauce.
  • Drain squash and combine with white sauce.
