Creamy Chipotle Chicken Thighs with Sauteed Squash image

These chipotle chicken thighs are a favorite in our house. Slightly spicy but extremely tasty!

1 medium white onion, quartered, divided
2 tablespoons tomato-flavored bouillon, divided
4 skinless chicken thighs
1 (8 ounce) container Mexican crema, crema fresca
1 (7 ounce) can chipotle peppers in adobo sauce
3 tomatoes, divided
2 garlic cloves, divided
2 tablespoons butter, divided
1 red bell pepper, quartered
3 Mexican white squash, chopped
salt and ground black pepper to taste

Steps:

  • Bring a pot of water to a boil with 1 quarter piece onion and 1 tablespoon bouillon. Add chicken and boil until chicken is no longer pink in the center and juices run clear, 30 to 40 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Remove chicken and set aside on a plate. Reserve 1 cup cooking water.
  • Combine Mexican crema, chipotle peppers, reserved 1 cup cooking water, 2 tomatoes, 1 quarter onion, 1 garlic clove, and remaining 1 tablespoon bouillon in a food processor. Blend sauce well until smooth.
  • Transfer sauce to a frying pan and add chicken thighs. Bring to a simmer and let cook for 20 minutes.
  • Meanwhile, heat 1 tablespoon butter over medium heat in a skillet. Add 1 quarter onion and remaining garlic clove. Cook and stir until softened, 3 to 4 minutes. Add bell pepper and cook and stir until softened, about 3 minutes. Stir in squash. Season with salt and pepper and saute until squash is cooked through and tender, about 5 minutes.
  • Slice remaining tomato. Heat remaining tablespoon butter in a skillet over medium heat. Add tomato and remaining 1 quarter onion. Cook and stir until softened, 3 to 4 minutes. Place on top of chicken mixture and serve with squash.

2 chicken breasts (bone in, cut into two peices)
1/2 white onion, sliced
1 tablespoon oil
3 garlic cloves, minced
4 chipotle chiles, with juice (blended in the blender with 1/4 cup coca cola)
2 cups Coca-Cola
2 teaspoons salt

Steps:

  • Saute the chicken breasts, onion, and garlic in the oil on medium high heat.
  • Once the chicken is no longer pink, add the coca cola, chipotle chiles and salt.
  • Mix thoroughly and cover.
  • Cook on medium for 20 minutes stirring often.
  • I serve this with beans, rice, and sourcream. Enjoy!

1/4 cup water
3 tablespoons brown sugar
3 tablespoons white vinegar
3 tablespoons canola oil
1 tablespoon chopped chipotle pepper in adobo sauce
5 garlic cloves, halved
1 tablespoon ground chipotle pepper or ground ancho chile pepper
2-1/2 teaspoons ground cumin
2-1/2 teaspoons dried oregano
1-1/2 teaspoons kosher salt
1 teaspoon smoked paprika
1/2 teaspoon pepper
3 pounds boneless skinless chicken thighs

Steps:

  • Place the first 12 ingredients in a blender; cover and process until pureed. Transfer marinade to a large bowl or shallow dish. Add chicken; turn to coat. Refrigerate 8 hours or overnight., Drain chicken, discarding marinade. Grill chicken, covered, over medium-high heat or broil 4 in. from heat until a thermometer reads 170°, 6-8 minutes on each side. Let rest 10 minutes before slicing.

We eat a lot of chicken and often experiment with ways to prepare it. We found some dried chipotle pepper flakes when we were in Arizona and decided to try using it in our sautéed chicken. It was fantastic! If you manage to find the chipotle flakes at your local whole foods or grocery, I recommend you buy them. They add a unique kick to any dish - also great on pizza. This recipe is quite versatile: use whatever chicken you happen to have; just make sure it's enough for 4 or you will need to adjust the ingredients.

4 boneless skinless chicken breasts
3 tablespoons olive oil
6 garlic cloves, crushed
1/2-2 teaspoon finely chopped dried chipotle pepper (depending on how spicy you like your grub)
1 teaspoon ground black pepper
1/2 teaspoon garlic salt (you can substitute 1/4 teaspoon salt and use more crushed garlic)
1/4 teaspoon ground cayenne pepper
3 cups chicken broth (from bullion or canned, doesn't matter) or 3 cups chicken stock (from bullion or canned, doesn't matter)

Steps:

  • Place everything but chicken broth into a bowl and coat chicken to season.
  • Sauté the seasoned chicken breasts in a large pan for 5 minutes each side (no need to add oil to pan).
  • Add chicken broth/stock.
  • Cover and simmer for 15-20 minutes.
  • Serve.
  • You can use the leftover broth in the pan as gravy, just cook it uncovered on high for 5 minutes and drizzle over the chicken and rice (or whatever carb you have).

I love to play 'Iron Chef' sometimes with what I have in my fridge and pantry. I came up with this chicken recipe using yummy melty fontina cheese and my favorite ingredient, chipotle peppers in adobo sauce!! I hope you enjoy!

Number Of Ingredients 10

1 lb boneless skinless chicken thighs
2 tablespoons light olive oil
1 cup chopped white onion
2 garlic cloves, crushed and chopped
1 (7 1/2 ounce) can chipotle chiles in adobo (use 2 peppers out of the can-chop using food-prep gloves)
1/2 cup honey barbecue sauce
1 cup Fontina cheese, shredded (or cubed)
1/4 cup heavy cream
1 teaspoon fresh lime juice
1/4 cup fresh cilantro, chopped

Steps:

  • Preheat oven to 375 degrees F.
  • Rinse and dry your thighs and place them in a glass baking dish.
  • Heat the oil in a medium skillet on medium heat and saute the onions and garlic until soft (about 3 minutes).
  • Stir in the adobo peppers and saute for 2 more minutes turning the heat down to medium-low.
  • Stir in the BBQ sauce and fontina. Stir and melt the cheese with the sauce (about 4 minutes).
  • Stir in the cream until blended then stir in the lime juice and blend well.
  • Remove skillet from heat and pour sauce over the chicken thighs.
  • Bake for 45 minutes or until chicken is no longer pink and juices run clear.
  • Remove chicken from the oven to a serving platter and top with the fresh cilantro then serve!

CREAMY CHICKEN CHIPOTLE STROGANOFF

A TexMex style stroganoff that will tickle your tongue! I love that even the noodles cook up right in the chicken breast and sauce making this a true one-dish meal. Hurray for fewer dishes to wash! I almost always have these ingredients on hand in my kitchen which makes this a gret go to meal when I am short on time and / or energy. If you like you can serve this with a simple green salad to increase your family's veggie intake. Serving this dish also gives me a great excuse to enjoy some great Mexican beer like Dos Equis (XX) or Modelo. :)

1 medium onion, chopped
1 1/2 cups chicken broth (1 can)

8 ounces medium egg noodles, uncooked (4 cups)
1 chipotle chile in adobo, finely chopped and a little of the adobo if you like

  • Stir in peppers and cook for 2 minutes, stirring a few times to keep from sticking.

8 large garlic cloves, thinly sliced (about 1/2 cup)
2 medium onions, chopped (about 2 cups)
1 cup ketchup
2 tablespoons Dijon mustard
2 tablespoons packed dark brown sugar
1/4 cup chopped canned chipotle chile in adobo (from a 7-ounce can)
1 tablespoon Worcestershire sauce
2 tablespoons cider vinegar
1/2 teaspoon cinnamon
2 whole chickens, each cut into 8 pieces (about 3 1/2 pounds each)

Steps:

  • Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers. Cook garlic, stirring constantly, until golden, then transfer with a slotted spoon to a plate. Reduce heat to medium and cook onions, stirring occasionally, until golden-brown, about 15 minutes.
  • Add garlic and remaining ingredients, except chicken, to skillet with 1 teaspoon salt and 1/2 teaspoon pepper and simmer, stirring occasionally, until sauce is slightly thickened, about 25 minutes.
