SAUTEED APPLES W/RAISINS & COGNAC (#8)
Still sharing my treasure trove of old recipes recently found again. As w/most of the others, the original source has been lost w/the passage of time. This sounds so good to me, is an amazing quick-fix & can be served hot or cold in several ways to create a lovely dessert. Enjoy!

Steps:
- Melt butter in a non-stick skillet. Add apples & sprinkle w/sugar.
- Saute (stirring constantly w/a wooden spoon) till apples begin to get tender (about 2-3 min).
- Add raisins & saute for a couple of min to heat them through & continue to cook the apples.
- Remove the skillet from the heat, stir in the cognac & swirl the apples around til it is well-mixed into the sauce.
- Serving Suggestions: If you want to serve hot (or warm), use apple mixture to top pound cake slices or vanilla ice cream & sprinkle w/the chopped pecans. -- If you want to serve cold, refrigerate mixture till ready for use & then assemble the desserts as already stated.

- In a large cast-iron or other heavy skillet, heat butter over medium-high heat; saute apples 1 minute. Add water; bring to a boil. Stir in sugar and cinnamon. Reduce heat; simmer, covered, until apples are tender, 10-12 minutes, stirring occasionally.

- In a large skillet, melt butter; add apples. Cook and stir over medium heat for 6-7 minutes or until almost tender. Dissolve cornstarch in water; add to skillet. Add brown sugar and raisins; bring to a boil.
- Boil for 2 minutes, stirring constantly. Remove from the heat; stir in lemon juice. Serve warm.

SPICED APPLES AND RAISINS
Steps:
- Melt the butter in a clean skillet over medium-low heat. Add the apples and thyme and coat in the butter; cook and stir for 8 minutes to give them some color. Toss in the raisins and add the apple juice, stirring to scrape up the brown bits. Stir in the brown sugar, cinnamon, cloves, cardamom, and dry mustard; season with salt and pepper. Squeeze in the lemon juice to wake up the flavor and simmer for 10 minutes or until the apples break down and soften. Serve spiced apples and raisins with holiday pork, turkey or ham.

BOURBON FRIED APPLES
This is a slightly healthier spin on traditional fried apples. The skin is left on, and the reduced butter and sugar are offset with flavor-boosting bourbon, raisins, cinnamon, and lemon juice. I use Cameos for this recipe, as they are naturally sweet and hold their shape well, but if you're using a tarter variety, you may wish to increase the brown sugar and omit the lemon juice. Golden rum can substitute for the bourbon.

BUTTER-SAUTEED APPLES WITH ALMONDS, RAISINS, AND MAPLE SYRUP
Steps:
- 1. Heat wok over medium heat. Add almonds, and cook 2 to 3 minutes, or until toasted and golden brown, stirring constantly. Transfer almonds to plate. 2. Melt butter in wok over medium heat, then add cinnamon and vanilla. Reduce heat to medium-low, and add apples. Cook apples 10 minutes, or until softened, stirring frequently. Add raisins and maple syrup, increase heat to medium, and cook 3 to 5 minutes more, or until syrup thickens. 3. Divide apples among 4 bowls, and garnish with toasted almonds.
SAUTEED APPLES
In my growing up years, serving this dish meant that autumn had certainly arrived! Mom served these "fried apples", with their delicious cinnamon flavor, alongside hot buttered biscuits, and freshly ground homemade sausage. Yumm!! It also is a delicious accompaniment with meats at other meals, particularly ham or pork.

Steps:
- In a large skillet on medium-high heat, melt butter (If your butter browns a bit, don't get excited! This gives an even better flavor.
- Add sliced, unpeeled apples, cover, and saute, stirring frequently.
- In a bowl, mix brown sugar and cinnamon. (Sometimes, for a taste difference, I also throw in 1/2 cup chopped pecans, at this point).
- When apples are just barely starting to get tender, stir in sugar-cinnamon mixture.
