Steps:
- Cut up the beef liver into small bite size pieces and then pat dry with paper towels.
- In a bowl add the soy sauce, sake, grated ginger and then add the beef livers (mix with the liquids) and let marinate for about 15 or more minutes, set aside.
- Add to a wok 2 tablespoons peanut oil until hot.
- Then remove the livers from the bowl (retaining the marinade), dredge in the tapioca starch and place into the heated wok. Cook and turn the pieces until almost fully cooked and then remove to a plate.
- Add 1 tablespoon peanut oil to the wok and add the Chinese chives, sauté for about 1 minute.
- Then add back into the wok the livers, the retained marinade and stir-fry briefly... add salt and pepper to taste.
- Enjoy.
- NOTE.:.
- If you use a micro wave to re-heat some leftovers the next day (dish covered in plastic wrap), it will dry out the chives to much and they become to hard for an otherwise nice meal.

SILKEN TOFU WITH CHIVES JAPANESE STYLE
This is a Japanese style recipe which includes Silken Tofu, a good quality soy sauce, Chinese Garlic Chives (Nira) and Seaweed (Nori)... for a nice light and healthy lunch.

- Drain the Silken Tofu and cut up into bite size pieces (try not to break them up) and place into 2 individual bowls. Aside- Silken or soft tofu is preferred, but not firm/hard tofu.
- Wash the Chinese chives, remove the buds and cut up the green part into 1 inch pieces to make up ¾ cup. Then sprinkle into each bowl. Aside- some people prefer to use the buds as well, also the chives are a little hard to the bite, so you might want to par-boil them or sauté them in a little oil briefly to make them a little softer.
- Add soy sauce to each bowl, sesame oil, a touch of chili oil (optional) and pieces of seaweed as well.
- Enjoy.

- Heat the oven to 375°F Lightly grease a 1/2- to 1-quart gratin dish or baking pan.
- Mix the ricotta, lemon juice and zest, garlic, chives, and salt, and a generous quantity of fresh black pepper. Spread in the baking dish and drizzle with olive oil. (At this point you can cover and refrigerate the ricotta overnight, if desired.)
- Bake for 15 to 20 minutes or until hot. Drizzle again with olive oil. Serve immediately with crackers for dipping.

SAUTEED BEEF LIVER WITH ONIONS & PEPPERS
The secret to tender liver is to remove as much membrane as possible and to not overcook it (it should still be pink inside).

- Remove all visible membranes from liver.
- Slice liver into thin strips.
- Set aside.
- In a heavy frying pan, heat one tbsp of the oil on medium, saute onions and red pepper for about 5 minutes.
- Remove from pan and keep warm.
- Combine flour and herbs.
- Dredge liver in flour mixture.
- Heat remaining oil in same frying pan on medium-high.
- Saute liver slices quickly for about 3 minutes or until brown on the outside but still pink inside.
- DO NOT OVERCOOK.
- Add cooked vegetables to pan.
- Stir to combine.
- Serve immediately.
SAUTEED CALF'S LIVER

- Place liver in a nonreactive (ceramic or glass) bowl and pour milk over. Refrigerate, covered, 5 to 6 hours.
- In a large skillet, heat 2 tablespoons butter over medium-high heat. When butter is shimmering, add onions. Cook, stirring occasionally, until softened and translucent, 5 to 10 minutes. Reduce heat to medium-low and continue to cook, stirring more frequently until onions are very soft and brown, 30 to 40 minutes more.
- Drain liver and discard milk. Pat liver dry with paper towels.
- Spread flour on a plate and season with salt and pepper. Thoroughly coat liver with the flour mixture, shaking off excess.
- Heat a large (13-inch) saute pan over medium heat and add remaining 2 tablespoons butter and the oil and heat until shimmering. Cook (in batches, if necessary, to avoid crowding pan) until liver is firm (but not hard) and browned on the outside but still slightly pink in the center, 1 to 2 minutes per side. Repeat with remaining liver, adding more oil to the pan as necessary. Add sage and cook for 1 minute more.
- Divide liver among plates and top with onions.

Steps:
- Combine soy, honey, sugar, vinegar, ginger, garlic and peppercorns.
- Pour over liver and let sit and for at least 2 hours (but preferably overnight), stirring occasionally.
- Remove liver from marinade, shaking off the peppercorns.
- Strain marinade and dispose of solids.
- Combine strained marinade with cornstarch and stock and then set aside.
- Heat oil and saute onions and mushrooms until limp.
- Add onions and mushrooms to marinade.
- Saute liver until lightly coloured.
- Pour marinade-onion mixture into pan and cook until thickened, stirring constantly.
- Serve.
