SAUSAGE AND SAUERKRAUT

Sausage and Sauerkraut image

This is a recipe from a sweet old German lady I used to attend church with. Allow for plenty of time to prepare and cook this dish. It is definitely worth the time and effort! Serve with hot German potato salad and red cabbage.

Categories     World Cuisine Recipes     European     German

Time 3h35m

Yield 5

Number Of Ingredients 7

2 pounds sauerkraut, rinsed and drained
1 tablespoon caraway seeds
¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces
1 large onion, chopped
1 ½ pounds kielbasa sausage, cut into 1-inch thick slices

Steps:

  • Place the sauerkraut, caraway seeds, brown sugar, and apple into a large saucepan over medium-low heat, and bring the mixture to a simmer. Reduce heat to low, and cook for 2 hours, stirring occasionally.
  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the bacon and onion into a skillet over medium heat, and cook until the bacon is almost crisp and the onion is beginning to brown, about 10 minutes. Stir the bacon mixture into the sauerkraut. In the same skillet, brown the kielbasa sausage in the remaining bacon grease until the sausage begins to brown, 10 to 15 minutes; stir into the sauerkraut mixture. Spoon the sauerkraut and sausage mixture into the prepared baking dish.
  • Bake in the preheated oven until bubbling, about 1 hour.

Time 3h30m

Yield 4 servings

Number Of Ingredients 20

1 onion, thinly sliced
6 tablespoons goose fat
2 1/5 pounds Sauerkraut, recipe follows
1 apple, diced
5 juniper berries
7 ounces smoked bacon
3 ounces white wine plus 2 ounces
2 tablespoons water
11 pounds white cabbage, shredded
5 tablespoons salt
1 pound plus 5 ounces pork neck
14 ounces pork belly
Pinch ground mace
Pinch ground cardamom
Pinch dried marjoram
1 tablespoon salt
Pinch freshly ground pepper
2 eggs
1/2 cup milk
Sausage casings

Steps:

  • In a large skillet over medium-high heat, fry the onion in the goose fat until it starts to brown. Add the sauerkraut, and heat it through for 5 minutes. Then add 1 cup of water, cover with a lid, and cook for 20 minutes. Then add the apple, juniper berries, and the bacon. Stir well, add 3 fluid ounces white wine, and 2 tablespoons water. Cook for 35 minutes. After 30 minutes of cooking, add the remaining 2 fluid ounces of white wine.
  • Put the cabbage and salt alternately in a terra cotta pot, and press down with a weight or heavy pan until juice covers the shredded cabbage. Cover the pot with a cloth, and weight it down with planks and stones. Place in the refrigerator for 4 to 6 weeks before cooking it.
  • All ingredients and equipment need to be very cold when making sausage.
  • Cut the neck and belly of pork, and grind it into a large bowl. Add the mace, cardamom, marjoram, salt, and pepper, and mix it all together with your hands. Add the eggs, and mix again. Then add the milk, and mix again.
  • Place the casing over a funnel. Stuff the casing with the meat mixture, and then tie the casing to make your desired size of sausage links.
  • Once you have made all of the sausages, heat a large skillet over medium-high heat. Add enough oil to lightly film the pan, and let oil heat. In batches, add the sausages to the hot oil, and fry until browned and fully cooked through. Serve with the steaming sauerkraut, and mustard, if desired.

HARD CIDER-BRAISED SAUSAGES WITH SAUERKRAUT

Hard Cider-Braised Sausages with Sauerkraut image

Provided by Trisha Yearwood

Categories     main-dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 18

2 tablespoons extra-virgin olive oil
2 pounds bratwurst or other fresh German sausage of your choice (about 8 sausages)
2 large onions, sliced
6 cups drained and well-rinsed sauerkraut, store-bought or homemade, recipe follows
2 teaspoons fresh thyme leaves
1 teaspoon ground coriander
1/2 teaspoon ground allspice
Kosher salt and freshly ground black pepper
One 12-ounce bottle hard cider
2 cups low-sodium chicken broth
2 tablespoons light brown sugar
2 tablespoons unsalted butter
2 tablespoons chopped fresh Italian parsley
1 head red cabbage (about 3 pounds)
3 tablespoons pickling salt, plus more as needed
2 Granny Smith apples
One 2-inch piece fresh ginger, peeled
1 teaspoon allspice berries

Steps:

  • Heat the olive oil in a large Dutch oven over medium heat. Brown the sausages all over, in batches if necessary, about 5 minutes per batch. Remove to a plate as they brown. Add the onions and cook until softened, about 4 minutes.
  • Add the sauerkraut and toss to combine with the onions. Add the thyme, coriander and allspice and stir to combine. Season with pepper. Pour in the cider and reduce by half. Add the stock and brown sugar and return to a simmer. Tuck the sausages back into the pot and simmer, uncovered, until the kraut is very tender and the sauce is flavorful and slightly reduced, 25 to 30 minutes. Season with salt, if needed.
  • Bring the sauce to a boil, add the butter and swirl to melt and combine. Serve topped with the parsley.
  • Remove any loose leaves from the cabbage head and reserve. Quarter the cabbage and thinly slice, on a mandoline if you have one. (The shreds should be about the thickness of a quarter.) Toss the cabbage in a large bowl with the pickling salt. Work the cabbage through your hands and massage for a minute or two, until the cabbage begins to "sweat" and release some water.
  • Thinly slice, then julienne the green apple, leaving the peel on. (Again, use a mandoline if you have one.) Slice the ginger into coins and press with the side of your knife to bruise them slightly and release their oils. Add the apples, ginger and allspice berries to the cabbage and toss well. Let sit for an hour or two, until the cabbage has released quite a bit of water.
  • Pack the cabbage mixture into a large, wide-mouthed crock and press down very firmly until the liquid the cabbage has released covers it. (Depending on the age of your cabbage, it may release less water; a fresher cabbage will release a lot of water, while a cabbage that has been stored all winter will release less.) If the cabbage is not covered, mix together 1 quart cold water and 4 1/2 teaspoons pickling salt until dissolved and pour over enough to cover the cabbage.
  • Use a couple of the reserved whole cabbage leaves to cover the surface of the cabbage. Cover with a plate (or the weight provided, if you have a fermenting crock) and set something heavy on top to weight it. (You can use cans. Many people like to use a resealable plastic bag filled with the same salted water solution used above because it weights evenly and if it leaks, it doesn't ruin the fermentation process.) Store the crock in a cool, dry place.
  • Check the kraut after 2 days. There should be a few bubbles around the sides. Skim any scum that has risen to the surface. Check the kraut every few days and repeat skimming, if needed. Depending on the temperature of your room, the kraut should be ready after about a week. (Some people ferment for a couple of weeks or more, depending on how funky they want their kraut to be.)
  • Divide the kraut and pack into jars. Store in the refrigerator. Drain and rinse the kraut well (discarding any ginger pieces) before using.

Yield Serves 4

Number Of Ingredients 12

1 teaspoon caraway seeds
2 tablespoons plus 3 teaspoons vegetable oil, such as grapeseed, divided
1 pound baby bok choy, heads trimmed and quartered lengthwise
1 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
1 Honeycrisp or Gala apple, sliced into 1/4-inch wedges
8 links fresh sausage (about 2 pounds), such as hot or sweet Italian sausage
2 1/2 cups prepared sauerkraut, drained
1/2 cup low-sodium chicken broth
1 tablespoon cider vinegar
1 tablespoon unsalted butter
Grainy Dijon mustard, for serving

Steps:

  • In a large dry skillet over medium heat, lightly toast the caraway seeds until fragrant, 1 to 2 minutes. Scrape out and reserve seeds.
  • Add 1 tablespoon oil to the skillet and heat over medium-high heat. Working in two to three batches, sear bok choy on all sides until lightly browned, 2 to 3 minutes per cut side. Add 1/4 teaspoon salt, 1/8 teaspoon pepper to each batch, and 1 teaspoon oil to sear each subsequent batch of bok choy.
  • Add 1 teaspoon oil to the skillet and sauté apples with 1/4 teaspoon salt and 1/8 teaspoon pepper until softened but still holding their shape, 5 to 7 minutes. Reserve apples.
  • Add remaining tablespoon oil to skillet and sear sausages on all sides until golden brown, 3 to 5 minutes per side. Add toasted caraway seeds, sauerkraut, and broth. Bring to a simmer, reduce heat to medium, cover the skillet, and simmer until sausages are cooked through (150°F for pork sausages, 160°F for poultry sausages), about 10 minutes. Remove cover and fold in reserved bok choy, apples, vinegar, and butter. Cook, tossing, until some of the liquid has evaporated and the bok choy and apples are warm, 3 to 5 minutes. Taste and adjust seasoning. Serve with mustard for dipping.

HOMEMADE SMOKED PORK SAUSAGES WITH VINEGAR.

Homemade Smoked Pork Sausages With Vinegar. image

This is an interesting recipe from a small village in Crete called Agios Thomas. For those who don't know, Cretan cooking is considered one of the best regional cuisines in Greece. In this recipe, pork mince is marinated for a week in vinegar, flavoured and stuffed into sausage casings and finally smoked over hot coals. Now I haven't tried this but I have to say it sounds good, really good!

Provided by joanna_giselle

Categories     Pork

Time P7DT1h

Yield 12 sausages

Number Of Ingredients 6

4 kg pork mince, with a slightly higher amount of fat than usual (coarsely ground)
2 kg vinegar (red-wine)
salt (to taste)
pepper (to taste)
cumin (to taste)
pork sausage casing (or pig intestines)

Steps:

  • Get your butcher to grind the pork coarsely (the typical finely-ground mince won't do for this recipe) or grind it yourself using the appropriate attachment on your food processor.
  • Put pork mince into a large non-reactive tub and add vinegar and salt. Leave it to marinade for a week mixing it at regular intervals.
  • Note: If using pig intestines as sausage casings rinse well, turn inside out and scrub with salt to clean. Repeat daily for a week.
  • Add pepper and cumin to the sausage mixture and fry a small ball in order to check the seasonings.
  • Tie the intestines or sausage casings at one end with butcher's twine.
  • Fill sausages carefully making sure not to tear the casings and gently pressing the mixture down the casing to the end of the sausage.
  • Make long thin sausages about 2cm or 1 inch in diameter tying at the other end with twine.
  • Pierce the sausages at several points with a pin or needle and then string them up over a fireplace with hot coals.
  • Smoke over low heat making sure to add twigs from a sage bush or cypress tree. The sausages should be a rich brown colour and quite dry when cooked. Alternatively use a smoker and follow the instructions.
  • Serve fried, cooked over hot coals or baked with a glass or Cretan raki or ouzo.

Provided by Pierre Franey

Categories     dinner, weekday, main course

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 14

1 porkette (cooked smoked shoulder butt), 1 1/2 pounds
2 green apples, about 3/4 pound
3 Idaho potatoes, about 1 1/4 pounds
1/4 cup lard or solid white shortening
1 1/2 cups coarsely chopped onions
1 teaspoon finely minced garlic
1 teaspoon caraway seeds
2 pounds sauerkraut
6 juniper berries
1 bay leaf
3/4 cup apple cider
3/4 cup chicken broth
6 to 8 boulettes de porc (see recipe)
1 link kielbasa or Polish sausage, about 1 1/4 pounds

Steps:

  • Cut and pull away the cloth covering of the pork butt.
  • Remove the stems from the apples. Peel and core the apples, and cut them into quarters. Cut the quarters crosswise into thin pieces. There should be about 2 1/2 cups.
  • Peel the potatoes, and cut each in half crosswise. Let the potatoes stand in water to cover until ready to be used.
  • Heat the lard in a large, heavy casserole, and add the onions and garlic. Cook, stirring, until the onions are wilted.
  • Add the caraway seeds and cook briefly. Add the apples, stirring.
  • Rinse and drain the sauerkraut. Squeeze it to extract excess liquid. Add the sauerkraut and juniper berries to the casserole.
  • Place the pork butt in the center of the sauerkraut. Add the bay leaf, cider and broth. Cover closely. Bring to a boil, and cook 15 minutes.
  • Arrange the boulettes of pork and kielbasa over the sauerkraut. Drain the potatoes and add them. Cover closely and continue cooking 20 minutes. Remove the bay leaf.
  • Slice the meats, and serve with the pork balls, potatoes and sauerkraut.
