JEFF'S SLOPPY JOES
This is a spicier version of sloppy Joes. Try adding some hot pepper sauce for even more 'kick'! Serve on your favorite style bun.

Steps:
- Heat the oil in a large skillet over medium heat. Add the onion, garlic, green bell pepper, celery and oregano. Saute for 5 minutes, or until onion is tender. Transfer this mixture to a plate and reserve for later.
- In the same skillet over medium high heat, combine the ground beef and sausage and saute for 10 minutes, or until well browned. Add reserved onion mixture, chili sauce, vinegar, Worcestershire sauce and brown sugar and mix well. Season with salt and pepper to taste.

Steps:
- In a large skillet, cook and crumble sausage with red pepper and onion over medium-high heat until no longer pink, 5-7 minutes. Transfer to a 3- or 4-qt. slow cooker., In same pan, cook and crumble beef over medium-high heat until no longer pink, 5-7 minutes. Using a slotted spoon, add beef to slow cooker. Stir in tomato sauce, tomato paste, garlic powder and, if desired, liquid smoke. Cook, covered, on low until flavors are blended, 4-5 hours., To serve, place cheese on bun bottoms; top with meat mixture and, if desired, peppers. Close sandwiches. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

BBQ SAUSAGE SLOPPY JOES
Steps:
- Cut the sausage casing with a knife and empty the meat into a large skillet that's been preheated on a medium-high flame.
- Break apart the sausage into pea sized crumbles.
- Cook for 5-7 minutes or until fully cooked.
- Remove the sausage and drain all but 2 tablespoons of the remaining oil.
- Add the bell peppers and onions and cook, stirring, for 5-7 minutes.
- Add the barbecue sauce, tomato sauce and beef broth.
- Simmer until reduced by half, about 6-8 minutes.
- Add the sausage back in, dot with the cheddar cheese and mix slightly just to start melting the cheese.
- Serve on toasted brioche buns.
